1/2 cup oil
1/2 cup margarine
3 tablespoons cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
frosting
1/4 lb margarine
3 tablespoons cocoa
6 tablespoons cream or 6 tablespoons milk
1 teaspoon vanilla
1/2 cup pecans, chopped
1 lb confectioners' sugar

Steps:

  • In a sauce Pan, Bring Coca-Cola, Oil, Margarine, and cocoa to a boil, mix the sugar, flour and salt, Pour in the boiling liquid and beat well.
  • Add the eggs, Buttermilk, soda, and vanilla and beat well.
  • Pour into a greased and floured sheet cake pan, and bake at 350 degrees for 20-25 minutes.
  • For Frosting: In a saucepan, combine the butter cocoa, and milk and heat until the butter melts, Beat in the remaining ingredients, and Spread on the hot cake. Cool and cut.

I've tried many recipes for coco-cola cakes and just couldn't find one like Cracker Barrel's. I finally just adapted a recipe into this cake. My husband requests this for his birthday cake every year. My MIL says it's even better than Cracker Barrel! Imagine that, a compliment from the MIL! This cake is amazing warm served with vanilla ice cream but I'm told it's even better the next day.

2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 cup butter
1 cup cola, beverage
5 tablespoons unsweetened cocoa powder
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla
7 ounces marshmallow cream
1/2 cup butter
3 tablespoons unsweetened cocoa powder
9 tablespoons cola, this should be the remaining cola left in a 12oz can
1 teaspoon vanilla
4 cups confectioners' sugar

Steps:

  • Cake:.
  • Preheat oven to 350°F.
  • Spray a 9x13 glass pan with nonstick spray.
  • Combine flour, granulated sugar and baking soda in mixing bowl.
  • In a small saucepan, heat 1 cup butter, 5 tablespoons cocoa and 1 cup cola beverage to boiling. (whisk together as it melts).
  • Pour over the flour mixture and mix thoroughly. I just use a whisk for this because it comes together so easily.
  • Add buttermilk, eggs and vanilla. Mix well.
  • Pour into prepared 9x13 pan.
  • Bake for 40 minutes.
  • During last 10 minutes of baking prepare frosting.
  • Prepare Second Frosting:.
  • Place 5 cups confectioners' sugar in a mixing bowl.
  • In a small saucepan, combine 1/2 cup butter, 3 tablespoons cocoa powder and 9 tablespoons cola beverage. Whisk together. Heat to boiling.
  • Remove from heat, stir in 1 teaspoon vanilla.
  • Pour over 4 cups confectioners' sugar.
  • Mix well with a whisk.
  • Assembly:.
  • Remove cake from oven.
  • Immediately frost with marshmallow cream. Go slow. This will prevent tearing the cake. As the fluff warms a bit it will spread easily.
  • Slowly pour warm coco-cola frosting over marshmallow fluff.
  • It's best to let this cake cool for about an hour before cutting into it.

Ingredients listed on back of cake mix box (eggs & oil - water not needed)
1 1/3 cups Coca Cola
1 stick butter

4 -6 tablespoons heavy cream or milk
2 cups packed Powdered sugar
1 teaspoon vanilla
1/2 cup chopped pecans (opt)

Steps:

  • Preheat oven to 350 F degrees. Spray 9x13 baking pan with nonstick cooking spray. Prepare cake mix according to package directions but instead of adding water, you will replace that amount with Coca-Cola. Add in dry instant pudding mix to the batter and mix as well. Pour batter into baking dish and bake according to package directions, usually around 35-39 minutes. Just before cake is ready to come out of the oven, start making frosting. In a medium saucepan, over medium heat, start melting one stick of butter. Add in cocoa powder and heavy cream (or milk) and stir. Then stir in confectioners' sugar. Stir briskly with a whisk to get all the lumps out. Take mixture off the heat and add in vanilla extract. Once cake comes out of oven pour frosting over warm cake. Do your best to spread it out evenly. Sprinkle chopped nuts on top, if using. Serve warm with a scoop of vanilla ice cream.

1 stick butter
1 c cola
3/4 c miniature marshmallows
1 square of semi sweet baking chocolate
1/2 c shortening
1/2 c vegetable oil
3/4 c cocoa powder
2 eggs
1/2 tsp salt
2 tsp vanilla extract
3/4 c buttermilk
2 c sugar
2 1/3 c flour
1 tsp baking soda
1 1/2 tsp baking powder
FROSTING
1 stick butter
1/2 c cocoa powder
1/4 c coca cola (plus 2-3tbsp if needed)
3 c powdered sugar
1 tsp vanilla extract
1/4 c hershey syrup

Steps:

  • 1. Place in sauce pan, butter, coke, semi-sweet baking square and bring to a boil. Remove from heat and add marshmallows and stir until all is blended and the marshmallows have disappeared. Set aside and let cool enough to tepid or room temperature.
  • 2. In mixing bowl blend the shortening, oil, vanilla and sugar until fluffy. Add eggs and buttermilk and beat until smooth. Mix flour with baking soda, cocoa, baking powder and salt, add half the flour mixture to shortening, egg mixture, and beat. Scrape bowl time to time to clean off so ingredients are blended in batter. Add cooled coca cola mixture and beat. Add remainder of flour and beat until completely smooth about 3-4 minutes. Batter will be thick. Place batter in a 13x9x2 greased pan.
  • 3. Set pan on top shelf in a preheated 350F degree oven. Bake for 35-40 minutes or until wooden pick comes out clean.
  • 4. FROSTING:Cream butter and cocoa; add vanilla, hershey syrup and coca cola until smooth. Add powdered sugar a little at a time and beat constantly. Scrape the sides of the bowl time to time to get all ingredients into the frosting. If the frosting seams a little dry add a little more coca cola. Frost warm cake and serve with vanilla ice cream.
