What should I do with one small zucchini and two ripe bananas? Well...I came up with this recipe. It was terrific. Very moist and flavorful. Hope you enjoy.

3 eggs
1 cup vegetable oil
1 1/2 cups sugar
2 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons vanilla extract
1 cup chopped pecans
1 cup raw zucchini, shredded
1 cup mashed ripe banana

Steps:

  • Shred zucchini and set aside.
  • Mash bananas and set aside.
  • In large mixing bowl, beat eggs, sugar and oil together.
  • Add flour, baking powder, baking soda, cinnamon, salt, vanilla and nuts.
  • Mix together.
  • Add zucchini and bananas and continue to mix until blended.
  • Pour into 2 greased and floured loaf pans.
  • Bake in 350 degree oven for 45-55 minutes or till tests done in center with toothpick.
  • Remove to wire rack and cool for 10 minutes before removing to completely cool on wire rack.

¾ cup vegetable oil
⅔ cup packed brown sugar
1 cup white sugar
1 cup grated zucchini
2 bananas, mashed
2 teaspoons vanilla extract
3 ½ cups all-purpose flour
1 tablespoon ground cinnamon
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
½ cup dried cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch bread loaf pans.
  • In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving.

3 cups all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
4 large eggs, room temperature
2 medium ripe bananas, mashed (about 1 cup)
2 cups sugar
1 cup vegetable oil
1-1/2 cups shredded unpeeled zucchini
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, baking powder, baking soda, cinnamon and salt. In another bowl, whisk eggs, bananas, sugar and oil. Add to flour mixture; stir just until moistened. Fold in zucchini and pecans. Pour into 2 greased 9x5-in. loaf pans. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pans for 10 minutes before removing to wire racks to cool completely.

1/4 cup butter
1/2 cup all-purpose flour
1/8 teaspoon salt
4 drops Tabasco sauce
1 banana, mashed
coarse salt

Steps:

  • Preheat oven to 450 and grease a 12x15 inch cookie sheet. In a med. size bowl using a pastry blender, mix butter, flour and 1/8 teaspoons salt together until crumbly.
  • Using a fork, stir in Tabasco and banana.
  • On a floured surface, knead mixture gently adding a small amount of flour if necessary to make the dough firm.
  • Divide dough into half and roll out one half at a time on a floured surface until thin enough to cover prepared cookie sheet. Place dough on cookie sheet and sprinkle lightly with the coarse salt. Using a pastry cutter, cut through dough into 1" squares.
  • Bake 6-8 minutes or until lightly browned.
  • Remove crackers with a spatula and place on a wire rack to cool.
  • Repeat with second half of the dough.

Making cheese crackers at home may sound daunting but actually they are quite easy. They require a little more work, then they're worth it. Crackers don't need to be an afterthought. These particular crackers are definitely worthy of their own place on your menu. No weird ingredients or fancy kitchen gadgets needed. You only need some ingredients that you probably have in your kitchen all the time, a cookie cutter, and an oven. That's all! These are super crispy, buttery, and perfect for a snack but if topped and loaded with cheese and herbs, ideal as a side dish.

2 cups all-purpose flour
1 tablespoon white sugar
2 ½ teaspoons baking powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon dried dill weed
6 tablespoons unsalted butter, melted, divided
2 tablespoons vegetable oil
⅔ cup cold water
coarse sea salt to taste
¼ cup mascarpone cheese
¼ cup grated Cheddar cheese
¼ cup grated Parmesan cheese
1 ¼ teaspoons chopped fresh parsley
1 ¼ teaspoons chopped fresh oregano
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Place flour, sugar, baking powder, garlic powder, salt, and dill in the bowl of a food processor and pulse to combine or you can mix manually as well. Add 4 tablespoons melted butter and vegetable oil and pulse to combine.
  • With food processor on low speed, slowly drizzle in water until the dough begins to form a ball. Remove dough from food processor and cover with a plastic wrap. Let rest for 10 minutes.
  • Roll out dough as thin as possible on a lightly floured surface; thinner than pie crust if possible, thin like crepes works best. Cut the dough into your desired shapes with a cookie cutter, or cut with a knife or pizza cutter and arrange on the prepared baking sheet. Let it rest for another 10 minutes.
  • Using a toothpick, prick several holes in each cracker. Don't skip this step; you will not have nice, flat crackers if you skip.
  • Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven, brush the tops with remaining melted butter, and immediately sprinkle with coarse sea salt. Remove from baking sheets and allow to cool completely on a wire rack.
  • While crackers cool, prepare cheese topping: Mix mascarpone, Cheddar, and Parmesan cheeses with parsley, oregano, thyme, rosemary, and pepper. Sprinkle over crackers and serve.

1 ½ cups all-purpose flour
⅓ cup wheat germ
¼ cup ground flax seed
2 tablespoons poppy seeds
2 tablespoons dried onion flakes
1 tablespoon parsley flakes
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic salt
1 teaspoon baking powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 ¼ cups water
½ cup extra-virgin olive oil
3 tablespoons sesame oil
kosher salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix whole wheat and all-purpose flours, wheat germ, flax seed, poppy seeds, onion flakes, parsley flakes, basil, oregano, garlic salt, baking powder, paprika, and cayenne together in a large bowl.
  • Combine water, olive oil, and sesame oil in another bowl; add to the dry ingredients and stir until dough is just moistened and easy to handle. Gather into a ball and divide into 4 equal sections.
  • Roll 2 sections into thin sheets and place on ungreased cookie sheets. Prick with a fork or dough docker and cut into squares of desired size with a pizza cutter or pastry edger. Sprinkle with kosher salt.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes; watch carefully so crackers do not burn. Remove from the oven and transfer to wire racks to cool.
  • Repeat steps 4 and 5 with remaining dough.
