Raspberry-Orange Chicken image

A delightful take on chicken with fresh raspberries and oranges, this recipe is special enough for company or casual dinners with the family. My husband and daughter are raspberry fanatics and say my take on this recipe is fantastic. A frequent request for anyone coming to my home for dinner.

4 skinless, boneless chicken breast halves
Salt and pepper to taste
2 tablespoons butter, divided
1 small onion, chopped
3 tablespoons red wine vinegar
¼ cup orange juice
½ cup chicken broth
2 tablespoons cornstarch dissolved in
2 tablespoons water
1 cup fresh raspberries, rinsed and drained
1 orange, peeled and sectioned

Steps:

  • Season the chicken breasts to taste with salt and pepper. Melt 1 tablespoon of butter in a large skillet over medium heat. Sear, and cook until browned on both sides and the juices run clear, about 10 minutes. Remove chicken and keep warm.
  • Melt remaining 1 tablespoon of butter in skillet; stir in onion and cook until translucent, 3 to 4 minutes. Pour in red wine vinegar, orange juice, and chicken broth; increase heat to medium-high, and bring to a boil. Stir in the cornstarch and water mixture, and cook until the sauce thickens and turns clear, 1 to 2 minutes. Reduce heat to medium, and stir in the raspberries and orange segments; cook for 2 minutes until softened. Add the chicken breasts to the sauce, and cook to reheat. Serve chicken with sauce spooned over it.

I found this on another website and had to try it. I just made this up and put it in my freezer and here's my suggestion: Double the sauce/marinade. The recipe the way it is there is not enough sauce for 1lb. of chicken. If you double it, it is just right. The marinade as I made it smells wonderful. I used 1-14.5oz. can of whole berry cranberry sauce, that was enough to double the sauce and still have a little leftover. Go ahead give it a try, let me know what you think.

  • Freeze.
  • To thaw & cook:.
  • Take bag out of freezer the night before, thaw in refrigerator.
  • Preheat oven to 350 degrees.
  • Empty chicken & marinade into a baking dish that has been sprayed with cooking spray.
  • Bake 20-30 minutes or until juices run clear.

1/2 teaspoon rubbed sage
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
1/4 cup seedless raspberry jam
2 tablespoons orange juice
2 tablespoons red wine vinegar

Steps:

  • Combine thyme, sage and pepper; rub over chicken. Lightly brown chicken in a skillet coated with cooking spray. , Transfer to a 9-in. square baking dish coated with cooking spray. Cover and bake at 375° for 15 minutes or until juices run clear. , In a saucepan, combine jam, orange juice and vinegar. Bring to a boil; boil for 2 minutes. Serve with the chicken.

  • In a tall glass add 8 ounces of crushed ice.
  • Pour cranberry and raspberry juice over ice and mix well with sugar substitute.
  • Then add orange juice. (If you want you can mix everything together but I like the color combo of them unmixed).

1/4 teaspoon salt
Dash pepper
2 boneless skinless chicken breast halves
2 teaspoons olive oil
CRANBERRY ORANGE SAUCE:
1 cup fresh or frozen cranberries
1/2 cup orange juice
2 tablespoons brown sugar
1 teaspoon grated orange zest
2 tablespoons chopped pecans
1 garlic clove, minced
1 tablespoon butter
2 cups fresh spinach

Steps:

  • In a resealable plastic bag, combine the flour, salt and pepper. Flatten chicken to 3/8-in. thickness; place in the bag and shake to coat. In a large skillet, cook chicken in oil for 3 minutes on each side or until chicken juices run clear. Remove and keep warm., Add cranberries and orange juice to the skillet. Cover and cook over medium heat for 5 minutes or until the berries begin to pop. Add brown sugar and orange zest; cook 1 minute longer. Stir in pecans; remove from the heat., In another skillet, saute garlic in butter until tender. Add the spinach; saute for 1 minute or until spinach begins to wilt. Place spinach on serving plates; top with the chicken and cranberry sauce.

Steps:

  • For immediate cooking: Preheat oven to 350º Place all ingredients into a prepared baking dish, turn chicken to coat. Bake until chicken juices run clear - about 45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts.
  • For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
