CRANBERRY MEAT LOAF
Everyone in my family loves this unusual recipe. It's especially fun to serve in the fall and around the holidays.

- In a large bowl, combine the first eight ingredients. Crumble beef and ham over mixture and mix well. Pat into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 1-1/4 hours or until a thermometer reads 160°., During the last 15 minutes of baking, baste meat loaf with barbecue sauce if desired. Garnish with bay leaves and cranberries if desired. Discard bay leaves before slicing.

- Preheat the oven to 400 degrees F.
- Place the cranberries in pot with the sugar, orange peel and juice and 1/2 to 1 cup water. Bring to a boil, then reduce the heat a bit and let it bubble away until the cranberries burst and form a sauce; remove the orange peels. Let cool to room temperature or chill.
- Melt the butter in a small skillet over medium heat and cook the celery, carrot and onion until very tender, 10 minutes. Add the sherry and cook to evaporate, then turn off the heat and let cool.
- Place the turkey in a bowl and season with the cloves, nutmeg and some salt and pepper. Moisten the breadcrumbs with the milk and squeeze off the excess, then add to the meat along with the egg. Add the hazelnuts, pine nuts, parsley, rosemary, thyme, sage and cooled vegetables and mix to combine. Form 4 miniature loaves and place on a parchment-lined baking sheet. Bake until cooked through, 20 to 30 minutes.
- Serve individual meatloaves with the cranberry sauce on the side.
TURKEY MEATLOAF WITH CRANBERRY GLAZE, MIXED BEANS ALMONDINE, AND POTATO GRATIN

- Preheat oven to 350 degrees. For the glaze, spread the brown sugar over the bottom of a greased loaf pan and spread the cranberry sauce over the sugar. In a large bowl mix all the remaining ingredients until well incorporated. Form the meat mixture into the loaf pan, laying out over the cranberry glaze. Bake in 350 degree oven for 1 hour, (be sure to assemble and cook the potato gratin along with the meatloaf, as they have the same cooking times). Turn out the loaf and set aside.
- Blanch beans in boiling, salted water for 1 minute and then shock in an ice water bath. When ready for dinner, toss the beans with walnut oil, salt and pepper and slivered almonds and place on a baking sheet and place in the oven with the meatloaf for the last 10 minutes before the meatloaf comes out.;
- Preheat oven to 400 degrees. Season potatoes with salt and pepper and layer in buttered 2 inch deep baking pan. Bring the rest of the ingredients to a boil and pour over the potatoes while hot, until potatoes are almost covered. Bake at 400 degrees until tender, about one hour.
- To assemble the dish, slice the meatloaf into 1 1/2-inch thick slices, and plate with a nice square of the potato gratin, and the beans along side. Serve everything warm.
GROUND TURKEY MEATLOAF WITH CRANBERRY SAUCE
Printed in our local newspaper. Serve with a tossed salad that includes seasonal ingredients, and baked potato for an easy fall/winter meal. A little bit different route taken from the standard ketchup-covered meatloaf recipe.

- *NOTE: If using canned cranberry sauce, drain first.
- Preheat oven to 350 degrees.
- In large bowl combine all ingredients *except* for the cranberry sauce and sage leaves. Do not overmix.
- Lightly oil or spray a 9"x5" loaf pan. Turn the meat mixture into the prepared pan and gently pat down.
- Bake the mixture until the loaf is firm and top is lightly browned, approximately 1 hour.
- Remove pan from oven and spread the cranberry sauce on top of the meatloaf. Let stand in the pan for 5-10 minutes before serving.
- Remove meatloaf from pan and transfer to serving platter. Garnish with a few sage leaves.
THANKSGIVING TURKEY MEATLOAF

- Preheat your oven to 375 degrees F and line a rimmed baking sheet with foil, parchment paper, or a Silpat liner.
- If you use foil spray the foil lightly with nonstick spray, set aside.
- In a large bowl add ground turkey, dried stuffing mix, eggs, milk, Worcestershire sauce, sage, thyme, and rosemary.
- Using your hands, or a spatula, gently mix together until well combined.
- Add the mixed meat to your prepared baking sheet and shape into a 12x8 inch loaf.
- Add to the preheated oven and bake for 30 minutes.
- Remove from the oven and top the meatloaf with about 1/2 the can of cranberry sauce.
- Place back in the oven and bake for another 15 minutes.
- Remove from the oven, test center to make sure the meatloaf has reached 165 degrees F, and serve sliced with extra cranberry sauce on the side.

CRANBERRY / ORANGE SAUCE
Having tried a number of cranberry sauce recipes over the years, I find this one to be easy and very tasty. As with many such sauces, it goes well with poultry, pork, meatloaf, pound cake, ice cream, cottage cheese & more! Pleast note that I much prefer to use chunky applesauce as the final ingredient.

Steps:
- In a medium sauce pan dissolve sugar in water, then bring to boil.
- Pick over the cranberries, keeping only quality berries & add them to the boiling sugar water. Return to boil & reduce heat & boil berries gently for 10 minutes, then remove from heat.
- Meanwhile, zest the orange. Chop zest into small bits. Then remove the white pith from the orange before coarsly dicing the orange.
- When the cranberries have been removed from heat, add the chopped zest, diced orange, canned cranberry sauce and chunky applesauce & mix thoroughly.
- Cool to room temperature, then cover & refrigerate.
