Number Of Ingredients 10

2 sticks unsalted butter, room temperature, plus more for pan
3 1/2 cups all-purpose flour (spooned and leveled), plus more for pan
1 tablespoon baking powder
1 teaspoon fine salt
1 cup whole milk
2 tablespoons grated orange zest plus 10 tablespoons orange juice, divided
2 cups granulated sugar
4 large eggs
1 1/2 cups dried cranberries, chopped
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Butter and flour 12 2 1/2-by-4 1/2-inch loaf pans. Whisk together flour, baking powder, and salt. In another bowl, mix together milk and 1/2 cup juice. In a large bowl, using a mixer, beat butter and granulated sugar on medium-high until light and fluffy, 8 minutes. Add zest, then eggs, one at a time, beating well and scraping down bowl as needed. With mixer on low, add flour mixture in 3 additions, alternating with milk mixture; beat until combined. Fold in cranberries.
  • Transfer batter to prepared pans and bake until a skewer inserted in center comes out with a few moist crumbs, 45 to 50 minutes. Let cool in pans on a wire rack set in a rimmed baking sheet, 30 minutes. Remove loaves from pans and let cool completely on rack.
  • Whisk confectioners' sugar and remaining 2 tablespoons juice to make glaze. Drizzle over loaves and let stand until set. (Store in airtight containers, 3 days, or freeze unglazed, 3 weeks.)

A delicious tea cake where cranberries and chocolate chips come together with a strong citrussy flavour.

2 cups all purpose flour
1.5 tsps baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1 egg
1 cup orange juice (freshly squeezed)
one orange (zest of)
4 - 5 drops orange oil ((optional))
1 tsp vanilla extract
1/2 cup cranberries sugar (fresh or frozen , roughly chopped and tossed in)
1/2 cup chocolate (chips)

Steps:

  • Grease a loaf tin and keep aside.
  • Preheat oven to 175 C.
  • In a large bowl, whisk the dry ingredients until combined.
  • In a medium bowl, beat the egg with the oil. Add the orange juice, zest and orange extract and whisk well together.
  • Make a well in the dry ingredients and pour in the wet ingredients. Stir gently to combine, finally stirring in sugar coated cranberries and chocolate chips.
  • Scrape out the batter into the prepared loaf tin and bake at 175 C (350F) in the middle rack, for 50 minutes to an hour, until a skewer comes out clean.
  • Remove from oven,allow to cool in pan for 5 minutes. Carefully, loosen the sides and turn it out on a cooling rack. Let it cool.
  • Slice and serve with a cup of tea.

1 cup low fat plain yogurt
2 large Land O Lakes® Eggs
2 cups all-purpose flour
1 cup coarsely chopped orange-flavored sweetened dried cranberries *
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Coarse grain or sparkling sugar, if desired
Orange Butter
1/2 cup Land O Lakes® Butter softened
2 tablespoons orange marmalade

Steps:

  • Heat oven to 350°F. Spray bottom only of 3 (5 3/4x3-inch) mini loaf pans; set aside.
  • Combine sugar, 1/3 cup butter, orange juice and orange zest in large bowl; beat at medium speed until creamy. Add yogurt and eggs; continue beating until well mixed. Add all remaining bread ingredients except coarse grain sugar. Continue beating just until well mixed.
  • Spread batter into prepared pans; sprinkle each with coarse sugar, if desired. Bake 30-34 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes; remove to wire cooling rack. Cool completely.
  • Combine all orange butter ingredients in small bowl; beat at low speed until well mixed. Serve with sliced bread.

1-1/2 cups chopped fresh or frozen cranberries, thawed
1 cup miniature semisweet chocolate chips

  • In a bowl, combine the first 5 ingredients. In another bowl, combine eggs, oil and orange zest; mix well. Add to dry ingredients alternately with buttermilk. 2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1/2 cup orange juice
Grated peel of 1 orange
2 tablespoons butter, melted
2 tablespoons hot water
1 cup fresh or frozen cranberries
1 cup chopped walnuts

Steps:

  • Combine flour, sugar, baking powder, baking soda and salt in a large bowl. In a small bowl, beat egg; add orange juice, peel, butter and water. Stir into dry ingredients just until moistened.
