- Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
- Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.
- Stir brown sugar, honey, vegetable oil, and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.
- Stir brown sugar mixture into oats mixture until evenly mixed and chocolate is melted; pour into the prepared baking dish.
- Bake in the preheated oven until edges are golden brown, about 30 minutes. Lift bars out of pan by pulling by the parchment paper; cool for 5 minutes before cutting into bars.

- Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars.
- Allow the the bars cool for 5 minutes in the pan before using the parchment paper to lift them from the pan. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.

HEALTHY CRANBERRY GRANOLA BARS
Ever look at the ingredients on a granola box and think how this healthy treats seems to have a tad too many chemicals? Making your own granola bars and such is easy as it can get. You can also take away or add more nuts, take away the cranberries or add something else. Nuts can be crushed or chopped. Also, if you want to go vegan you can replace the honey with molasses or maple syrup. I have yet to experiment further with it since what I make already is awesome.

Steps:
- Mix oats, almonds, walnuts, bran, coconut and salt and roast in over at 350 degrees for 15 minutes, stirring occasionally.
- Dissolve honey and vanilla in pot under low heat.
- Remove dry ingredients and pour into a bowl.
- Lower oven to 300 degrees.
- Grease 9 x13 glass dish with cooking spray.
- Mix liquid into bowl with dry ingredients, add cranberries or whatever else you want.
- Pour into dish and spread out evenly.
- Place wax paper on top and smash down. You can use a can or glass to do this as well.
- Bake at 300 for 30-40 minutes, till golden brown.
- Let cool for at least 1-2 hours to harden.
- Cut and enjoy.

- Preheat oven to 300 degrees.
- Combine "Dry Ingredients" in a large bowl.
- Combine oil, cranberry juice, cinnamon, vanilla, salt, and 1/2 cup sorghum in a small saucepan. Heat over medium-low heat, stirring until smooth. Reduce heat to low.
- Add syrup mixture to dry granola, about 1/4 - 1/2 cup at a time, mixing granola to coat evenly.
- Lightly spray two cookie sheets with nonstick cooking spray. Divide granola-syrup mixture in two and spread each half on a separate cookie sheet, in even layers that fully extend to tray edges.
- Bake at 300 degrees, stirring every 10-15 minutes to prevent burning. For clumpy granola, drizzle remaining 1/2 cup sorghum on top after 15-20 minutes in oven.
- Bake 30-45 minutes TOTAL, until golden and halfway dry/crispy. Remove from oven & cool on wire racks. (Granola will continue to dry & crisp after removing from oven.)
- For a small crumble texture, stir granola periodically while cooling; for clusters, allow to cool completely before gently breaking into clumps.
- When completely cool, mix in any desired fruits and store in an airtight container (or wait until serving to add fruits/other toppings). NOTE: remove any cinnamon stick pieces before serving.

These are a great alternative to store bought cereal and granola bars. They pack well and make an easy, quick snack or breakfast on the go. I like to use dried cranberries, but you could substitute any soft dried fruit like cherries or apricots.

Steps:
- Preheat oven to 350°.
- Toast oatmeal on large baking sheet 13 x 9 pan or 15 x 10 jellyroll pan for 10 minutes.
- Add raisins and Rice Krispies and toast another 5 minutes.
- Add peanuts and dried fruit and set aside.
- In a large pan, melt butter, peanut butter and marshmallows over low heat.
- When smooth and combined, add oatmeal mixture.
- Stir to coat.
- Press firmly into 9x13 pan.
- Cool and cut into 20 bars.
- Note: I use a large dutch oven type pot to make mixing easier.
- You can also reduce or eliminate butter if you want to lower the fat.

- Place the oats, almonds and flax seeds on a baking sheet and bake in the oven for 15 minutes.
- In a medium sauce pan combine the honey, brown sugar, butter, vanilla, and salt over medium heat until the brown sugar completely dissolved.
