CRANBERRY-ORANGE RELISH
This tasty cranberries and orange relish is a natural accompaniment for pork, ham and poultry.

Steps:
- Place sugar and ginger in medium bowl.
- Wash and dry cranberries; remove any stems or blemished berries.
- Wash and dry orange; cut into 1-inch pieces (with peel) and remove seeds.
- In food processor, place half of the cranberries and orange pieces. Cover and process, using short on-and-off motions, about 15 seconds or until evenly chopped. Stir cranberry mixture into sugar mixture. Repeat with remaining cranberries and orange pieces.
- Cover and refrigerate at least 24 hours to blend flavors but no longer than 1 week.

- Combine sugar and orange in a food processor; pulse until coarsely chopped. Add cranberries, gelatin mix, celery, and pecan pieces; pulse briefly until coarsely chopped. Pour into a serving bowl.

- Take the yellow peel from oranges; trim off and discard white part. Put orange pulp and yellow peel, cranberries, and apples through food chopper. Add sugar and mix well.
- Cover and refrigerate. Or pour into glass jars, leaving 1/2 inch head space. Seal and freeze.

I inherited this recipe from my Mom. It is assigned to me every year along with the relish tray. I am no great cook, so you can be sure it's very easy. It's so great, it's the only cranberry dish we serve!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place cranberries in a small, shallow baking dish. Sprinkle with sugar.
- Cover cranberries with aluminum foil. Bake in the preheated oven approximately 35 minutes. Remove from heat, sprinkle with walnuts and recover. Continue baking 10 minutes. Remove from heat.
- Stir marmalade and lemon juice into cranberry mixture. Cool to room temperature. Transfer to sterile containers, cover and chill in the refrigerator at least 3 hours before serving.

CRANBERRY RELISH
This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

- Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
- You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
- Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
- Add diced celery, nuts and crushed pineapple with juice.
- Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
- Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
- Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
- Refrigerate for several hours till set(overnight is good).

- Using a food processor, pulse the cranberries and oranges. Transfer the chopped fruit to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary. Add the chopped pecans and serve.

- Into a food processor, add cranberries, orange pieces, the chopped orange zest, chopped apple, pecans, and crystallized ginger. Pulse the food processor a few times. It usually takes me about 10 pulses. Check the consistency of the ingredients. They should be chopped and fairly even.
