1/2 cup butter, softened
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground allspice
2 medium ripe bananas, mashed (about 3/4 cup)
1 cup whole-berry cranberry sauce
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the dry ingredients; add to the creamed mixture alternately with bananas, beating well after each addition. Spread into a greased 13x9-in. baking pan. Top with cranberry sauce., In a small bowl, combine the brown sugar, pecans and flour; stir in butter. Sprinkle over cranberries. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack.

1 can (20 ounces) pineapple tidbits
5 medium firm bananas, halved lengthwise and sliced
1 can (14 ounces) whole-berry cranberry sauce
1/2 cup sugar
1 carton (12 ounces) frozen whipped topping, thawed
1/2 cup chopped walnuts

Steps:

  • Drain pineapple juice into a medium bowl; set pineapple aside. Add bananas to the juice. In a large bowl, combine cranberry sauce and sugar. Remove bananas, discarding juice, and add to cranberry mixture. Stir in pineapple, whipped topping and nuts. , Pour into a 13-in. x 9-in. dish. Freeze until solid. Remove from the freezer 15 minutes before cutting.

1/3 cup shortening
2/3 cup sugar
2 large eggs, room temperature
1 cup mashed ripe banana
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour

1 cup whole-berry cranberry sauce
3/4 cup chopped pecans, divided
1/2 cup dried cranberries

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and crumbly. Beat in eggs, banana and vanilla. In another bowl, whisk flour, baking powder, salt and baking soda; gradually beat into creamed mixture. Stir in cranberry sauce, 1/2 cup pecans and dried cranberries., Transfer to a greased 8x4-in. loaf pan. Sprinkle with remaining pecans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. 2 cups fresh or frozen cranberries
1-2/3 cups sugar, divided
1 cup water
1/3 cup shortening
2 eggs
1-3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup mashed ripe banana (2 to 3 medium)
1/2 cup chopped walnuts

Steps:

  • In a small saucepan, bring cranberries, 1 cup sugar and water to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until berries begin to pop. Drain and set aside., In a large bowl, cream shortening and remaining sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, salt and baking soda; add to creamed mixture alternately with bananas. Fold in cranberry mixture and walnuts., Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. 1 cup sugar
1/4-1/2 cup butter or 1/4-1/2 cup margarine, softened
1 cup mashed banana
1/4 cup milk
2 eggs
2 cups flour
2 teaspoons baking powder
1/2 cup chopped walnuts
1 1/2 cups coarsely chopped fresh cranberries or 1 1/2 cups coarsely chopped frozen cranberries

Steps:

  • Preheat the oven to 350F degrees.
  • Grease an 8 1/2 by 4 1/2 inch loaf pan.
  • Mix sugar and butter in a medium mixing bowl until completely blended.
  • Add banana, milk and eggs, mixing well.
  • Add dry ingredients, mixing just until moist.
  • Stir in nuts and cranberries.
  • Spread batter evenly in the loaf pan.
  • Bake for 1 hour and 10 minutes, or until a toothpick inserted in the centre of the bread comes out clean.
  • Remove from pan, cool on rack.

1 cup fresh cranberries, quartered (I use dried when no fresh are available)
8 tablespoons sugar, divided
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1 teaspoon lemon peel, grated (optional)
cinnamon-sugar mixture

Steps:

  • Sprinkle cranberries with 2 tbsp sugar and set aside (skip this step for dried berries).
  • In large bowl sift flour, baking powder and salt together; add remaining sugar. Stir in cranberries.
  • Beat egg, milk, oil and lemon peel. Stir into dry ingredients, just until moistened.
  • Fill greased muffin cups two-thirds full. Sprinkle with cinnamon-sugar. Bake at 400 F for 18-22 minutes.
  • Cool 10 minutes; remove to wire rack.

1 cup shortening
3 eggs
3 mashed bananas
1 cup cranberry sauce
½ cup milk
1 teaspoon vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
  • Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.

1 cup banana (about 3 small, mashed ripe)
1 teaspoon lemon juice
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk
1 1/2 cups cranberries (fresh or frozen, coarsely chopped)
1/2 cup nuts (pecans are good)

Steps:

  • Line a 9 x 5-inch loaf pan with parchment paper or grease; set aside.
  • In a large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, heating well after each. Beat in bananas, vanilla and lemon juice.
  • In a separate bowl, whisk together flour, baking powder, baking soda and salt. Sitr into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Fold in cranberries and nuts. Scrape into prepared pan, smoothing top.
  • Bake in centre of 350°F oven until cake tester inserted in centre comes out clean, about 1 ¼ hours. Let cool in pan on rack for 5 minutes, Remove from pan and peel off paper; let cool completely. Wrap in plastic wrap; store at room temperature for 24 hours before slicing. (It will be crumbly if you try to cut it before this.).
