3/4 cup confectioners' sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup finely chopped dried cranberries

Steps:

  • In a large bowl, beat butter, confectioners' sugar and salt until blended. Beat in vanilla. Gradually beat in flour. Stir in cranberries., Shape dough into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 325°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a floured 2-in. star-shaped cookie cutter. Place 1 in. apart on greased baking sheets., Bake 12-15 minutes or until edges are golden brown. Remove from pans to wire racks to cool.

I was searching to make the perfect citrus-y cranberry shortbread cookie, but it always felt like something was missing. So on a final attempt, when I didn't have enough dried cranberries to make a full recipe, I threw in some dried apricots and bam! That was it! They add the perfect backdrop flavor to these shortbread cookies!

1 ¾ cups all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla extract
2 large oranges, zested
1 cup finely chopped dried cranberries
½ cup finely chopped dried apricots

Steps:

  • Combine flour, baking powder, salt, and nutmeg in a bowl; mix together.
  • Cream butter in a large bowl using an electric blender until fluffy and lightened in color slightly. Add sugar and cream on medium-high speed until light and fluffy, several more minutes. Mix in vanilla and orange zest. Add flour mixture in 3 batches and mix until just combined, kneading the last addition by hand. Knead in cranberries and apricots.
  • Divide dough in half and roll out into two 1 1/2x7-inch long logs. Wrap each log in parchment paper and refrigerate until dough is chilled, at least 4 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Remove dough from the refrigerator and cut each log into about 16 slices that are 1/3-inch thick. Place slices 1 inch apart on prepared baking sheets.
  • Bake in the preheated oven until cookies just begin to turn slightly golden on bottom, 20 to 25 minutes. Cool on baking sheets for 5 minutes before removing to wire racks to cool completely. Store in an airtight container.

This recipe was given to me by my mother-in-law, one of the best cooks I know...and given that we're from south Louisiana, that's saying something. With the chopped up dried cranberries, these are as pretty as they are tasty.

2 cups all-purpose flour
¼ teaspoon baking powder
⅛ teaspoon salt
1 cup butter, softened
¾ cup confectioners' sugar
2 teaspoons vanilla extract
½ teaspoon almond extract
1 tablespoon grated orange zest, or more to taste
2 cups sweetened dried cranberries, chopped

Steps:

  • Combine flour, baking powder, and salt in a bowl; set aside. Beat the butter and confectioners' sugar with an electric mixer in a large bowl until smooth. Stir in the vanilla and almond extracts and orange zest. Mix in the flour mixture until just incorporated. Fold in the cranberries; mixing just enough to evenly combine.
  • Divide the dough into 2 equal portions, then roll into logs about 7 inches long. Wrap each log in wax paper or plastic wrap, and chill in the refrigerator for at least 4 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Remove wax paper, and cut the cookie dough into 1/2-inch slices. Arrange the slices on a baking sheet about 1 inch apart.

1 1/2 c all purpose flour
2/3 c unsalted butter, at room temperature
1/2 c granulated sugar
1/2 tsp salt
1 tsp vanilla extract
1/3 c dried cranberries. chopped
1/4 c finely ground nuts

Steps:

  • 1. In a large mixer bowl beat the butter and sugar on medium speed, add remaining ingredients,except the cranberries and nuts,until dough is combined. Dough will be crumbly but will hold together when pinched. Try not to handle dough to much. Mix in the cranberries and nuts.
  • 2. Shape dough into a flatten disk and wrap in plastic wrap. Chill for 30 minutes. Preheat oven to 325^. Line cookie sheet with parchment paper.
  • 3. Remove dough from refrigerator and roll to a 10-inch square to 1/4 inch thickness. You can use round cookie cutter to cut out cookies, but I find the less you handle the dough the more tender the cookies are;So use a sharp knife and cut the dough into the size cookies you prefer- 2 inch squares are about right.
  • 4. Place cookies on parchment paper cookie sheets. Bake for 22-25 minutes, or until just lightly browned. Cool on pans for about 5 minutes. Place on paper bags or newspaper to cool completely. Can be frosted with orange glaze, if desired.
  • 5. There are so many ways to add to these cookies: You can pinch off pieces of dough and roll into 1-inch balls and bake then when cook roll in powdered sugar or cinnamon-sugar

1/2 cup granulated sugar
1/4 teaspoon salt
1 cup unsalted butter (no substitute)
1/2 cup dried cranberries, finely chopped

  • Preheat oven to 325 degrees F.
  • Stir together flour, sugar & salt, then cut in butter until mixture resembles fine crumbs.
  • Stir in cranberries, then form into a ball & knead until smooth.
  • Divide dough in half.
  • On a lightly floured surface, pat or roll each dough portion to a 1/2-inch thickness.

1/2 lb unsalted butter, at room temperature
1/2 cup light brown sugar
1 egg yolk
1 teaspoon finely grated lemon zest
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup dried sweetened cranberries, finely chopped
3/4 cup icing sugar
1/4 cup cranberry juice

Steps:

  • With an electric mixer, beat butter and brown sugar until light and fluffy. Beat in egg yolk and lemon zest.
  • Combine flour, salt and cranberries. Gradually stir flour mixture into butter mixture, blending until smooth. Form dough into a ball and wrap with plastic wrap.
  • Refrigerate for 30 minutes (not included in prep time). to make it easier to handle.
