2 lbs medium to large shrimp
1 lemon, thinly sliced
1 medium red onion, thinly sliced
2 tablespoons chopped pimiento
1/4 cup olive oil
2 garlic cloves, minced
1 tablespoon dry mustard
1 tablespoon salt
1/2 cup lemon juice
1 tablespoon red wine vinegar
1 bay leaf, crumbled
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley

Steps:

  • Shell and devein the shrimp.
  • Bring 1 quart salted water to the boil,, add the shrimp, and cook for 3 minutes ONLY.
  • Drain at once and rinse in cold water to stop the cooking process.
  • In a bowl combine the lemon slices, onion slices and pimiento; toss well.
  • In a separate bowl, combine the oil, garlic, dry mustard, salt, lemon juice, wine vinegar, bay leaf, cayenne, and parsley.
  • Whisk together and add to the bowl with the lemon slice mixture.
  • Arrange the shrimp on a serving dish and pour the marinade over the top.
  • Cover and chill for 3 hours ( no longer ) before serving.
  • Serve with toothpicks .

These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

2 cups raw cranberries, left whole

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9" x 13" Pan.
  • Mix the butter with the sugar, and add the eggs and flour.
  • Stir in the cranberries and pecans.
  • Pour batter into greased pan, spreading out evenly.
  • Bake at 325 degrees for 45 - 50 minutes.
  • Cool. Cut into squares. At Christmas-time, you can add chopped green candied cherries. These also freeze well.

2 teaspoons baking powder
½ teaspoon salt
¾ cup butter or margarine
1 egg, beaten
2 cups cranberry sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the sugar, flour, baking powder and salt. Cut in the butter or margarine until the lumps are no larger than peas. Stir in the egg just a little bit, but allow the mixture to stay somewhat crumbly.

  • Chop the cranberries in a manual food chopper- NOT a food processor. Chop the apples and the oranges into small cubes with their skins. Add the remaining ingredients and stir well. Steps:

  • For the cranberry-orange sauce: Combine the cranberries, orange juice, granulated sugar and orange zest in a medium saucepan. Cook over medium heat until the sugar dissolves and the cranberries begin to burst, 5 to 10 minutes. Remove from the heat and let cool slightly.
  • Using a hand-held mixer, blend the cranberry sauce until smooth. Stir in the liqueur. Transfer the sauce to a clean container and refrigerate until completely cool. (The sauce will thicken as it cools.)
  • For the whipped cream: In a medium bowl, beat the heavy cream, confectioners' sugar and liqueur until medium peaks form.
  • For the shooters: Put 1/2 teaspoon graham crackers in the bottom of each shot glass. Top with 1/2-inch cranberry-orange sauce and 1 tablespoon whipped cream. Top with more graham crackers and enough cranberry-orange sauce to come to within 1/4-inch of the top of the shot glass. Add a dollop of whipped cream and garnish with orange zest. Serve chilled.

One 17.25-ounce package frozen puff pastry (2 sheets), thawed

1/4 cup walnuts, finely chopped
1 tablespoon fresh thyme leaves

Steps:

  • Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
  • Whisk together the egg with 1 tablespoon of water in a small bowl for an egg wash. Cut the side rind off the Brie, then cut the Brie into 32 even pieces. Set aside.
  • Unfold a puff pastry sheet on a lightly floured surface. Roll out into a 13-inch square. Cut into 16 squares. Repeat with the second sheet so you have 32 squares total.
  • Top a pastry square with about 1/2 teaspoon cranberry sauce, 1/4 teaspoon walnuts, a piece of Brie and a pinch of thyme.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Chop 1 cup raw cranberries in a food processor and add to cranberry sauce. Stir in 1 thinly sliced jalapeno, 1 tablespoon lime juice and 1 teaspoon each honey and salt. Let cool to room temperature. Steps:
