CRANBERRY-PEAR CRISP

- Preheat the oven to 375 degrees F. Combine the fresh and dried cranberries in a large bowl. Add 1 cup sugar, 3 tablespoons water and the vanilla and toss to coat. Lightly smash with a potato masher or fork to burst some of the cranberries. Add the pears, cinnamon, allspice and 2 tablespoons flour and toss to coat. Transfer to a 3-quart baking dish.
- Make the topping: Mix the remaining 1 cup flour, the pecans, oats, the remaining 1/2 cup sugar and the salt in a medium bowl, then stir in the melted butter. Use your fingers to pinch the topping into small clumps and sprinkle it over the fruit.
- Bake until the fruit is bubbling and the topping is golden brown, about 40 minutes. Serve warm or at room temperature.

- Preheat oven to 400 degrees F (200 degrees C). Spread pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until lightly browned and fragrant.
- In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.

CRANBERRY-PECAN RUGELACH
Steps:
- With electric mixer (beater), cream together butter and cream cheese. With mixer on low, gradually add in flour. Form into 3 squat disks. Wrap and refrigerate for 2 hours or overnight.
- Preheat oven to 350 degrees. In a small saucepan, cover the cranberries with water and bring to a boil. Remove from heat and let cool. Drain. In a small bowl, combine pecans, brown sugar and cinnamon. Roll dough into a 10-inch circles. Paint with the melted butter. Sprinkle with the sugar/nut mixture and cranberries. With a pizza wheel, cut into 12 wedges. Roll up the wedges and line them up on a parchment lined or nonstick cookie sheet. Paint the rugelach with the egg wash. Bake for 15 minutes or set and light golden.
CLASSIC CRANBERRY SALAD
My husband's family has been using this traditional and delicious salad for holiday dinners for five generations. The women used to grind the cranberries and the orange in a food grinder, which was a messy job! Thank goodness for food processors! It can be made up to three days before serving, which is always a help when we are cooking for those holiday meals. Keep covered in refrigerator. Cook time is for chilling.

- Dissolve gelatin in boiling water; set aside.
- In food processor, chop the cranberries while still frozen.
- Add to the gelatin with 1 1/2 cup of sugar, stir to combine.
- In food processor, chop orange chunks until finely chopped; add to cranberry mixture.
- Stir in grape halves and pecans.
- Pour into decorative bowl or mold and chill overnight.
- Adjust sugar, if necessary.

- Place the cranberries into a saucepan and fill with just enough water so that they are floating slightly. Bring to a boil and cook until the cranberries pop. Remove from the heat and pour off any excess water. Run through a food mill, or strain back into the saucepan. Stir in the sugar and cook over low heat just long enough to dissolve the sugar. Transfer to a bowl and refrigerate until cold.
- When the cranberry mixture is cold, stir in the milk and heavy cream. Pour into an ice cream maker and freeze according to the manufacturer's instructions.

CRANBERRY-PECAN SHRIMP SALAD
I had this recipe in my "to make file" since 2005. I finally made it today. I'm still trying to figure out why I waited so long to make this. Simply delicious. - Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
- Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
- Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
- Bring juice to a boil then remove from heat immediately.
- Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
- Add cranberry sauce and stir. {Gelatin mixture should be thick}.
- Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
- Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
- Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
- Top with reserved crushed pineapple just before serving.
- Store leftover gelatin in refrigerator.
