2 cups angel hair pasta
½ cup butter, divided
4 cloves garlic, minced
1 pound uncooked medium shrimp, peeled and deveined
½ cup white cooking wine
1 lemon, juiced
1 teaspoon red pepper flakes
¾ cup seasoned bread crumbs
¾ cup freshly grated Parmesan cheese, divided
2 tablespoons finely chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and set aside.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Heat 1/4 cup butter over medium heat in a large, deep skillet. Add garlic; cook and stir until fragrant. Add shrimp, white wine, and lemon juice; continue to cook and stir until shrimp is bright pink on the outside and the meat is opaque, about 5 minutes. Stir in red pepper flakes until well combined. Remove from heat and set aside.
  • Place remaining 1/4 cup butter, bread crumbs, 1/2 the Parmesan cheese, and parsley in a bowl. Stir until well combined. Set aside.
  • Place cooked pasta into shrimp scampi mixture; toss until fully coated in sauce. Add remaining Parmesan cheese and toss well. Top with bread crumb mixture.
  • Broil in the preheated oven until golden brown, 3 to 4 minutes. Serve immediately.

I've been buying a well known frozen dinner bag that's absolutely fantastic, but rather expensive. So I checked the ingredients, searched scampi recipes online, and decided to create my own by adding, subtracting, and tweaking all of them. This is my first!!

1 (16 ounce) package linguine pasta
2 tablespoons butter
1 ½ tablespoons olive oil
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
6 cloves garlic, sliced
48 large shrimp - peeled, deveined, and tails removed
½ cup dry white wine (such as Chardonnay)
1 teaspoon lemon juice
¼ cup clam juice
2 tablespoons butter
1 ½ tablespoons olive oil
2 tablespoons heavy cream
1 ½ teaspoons crushed red pepper flakes, or to taste
3 tablespoons chopped fresh parsley
1 teaspoon sea salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Reserve 1 cup of the linguine cooking water, and drain pasta well in a colander set in the sink.
  • Melt 2 tablespoons of butter and 1 1/2 tablespoon of olive oil together in a large skillet over medium heat, and cook and stir the red and yellow bell pepper and garlic until the peppers have softened, about 10 minutes. Stir in the shrimp, and cook and stir until the shrimp are opaque and pink, about 5 minutes. Remove the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.
  • Stir the wine, lemon juice, and clam juice into the skillet, and bring to a boil over medium heat. Mix in 2 more tablespoons of butter and 1 1/2 tablespoons of olive oil, and return the shrimp to the skillet. Stir in reserved pasta cooking water, cream, red pepper flakes, parsley, and sea salt. Add the cooked linguine, and toss lightly with the shrimp and sauce in the skillet. Simmer the mixture over medium-low heat for 5 minutes to let the pasta absorb some of the sauce, and serve hot.

1 pound uncooked large shrimp, peeled and deveined
1 (8 ounce) can (8 to 10 count) artichoke hearts in water, drained
½ cup Italian seasoned bread crumbs
1 tablespoon chopped fresh parsley
1 lemon, juiced
½ cup butter
1 ½ tablespoons minced garlic
1 tablespoon finely shredded imported Romano cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Arrange the shrimp in the bottom of the prepared baking dish. Gently squeeze any excess liquid from the artichoke hearts, break the hearts into quarters, and arrange in spaces between the shrimp. Sprinkle the bread crumbs and parsley over the shrimp and artichoke hearts; sprinkle lemon juice over the crumbs.
  • Melt butter with garlic in a small saucepan over medium-low heat; drizzle the butter mixture over the bread crumbs. Sprinkle the top with Romano cheese.
  • Bake in the preheated oven until the crumbs and cheese brown lightly and the shrimp turn opaque and orange-pink in color, 10 to 12 minutes. Serve hot.

1/4 cup extra-virgin olive oil
1 white onion, chopped
1/2 teaspoon Greek Seasoning, recipe follows
1/2 teaspoon dried oregano
5 medium tomatoes, blanched, peeled and chopped
Sea salt
3 tablespoons finely chopped fresh flat-leaf parsley
8 jumbo shrimp, peeled and deveined
5 ounces Greek feta cheese, crumbled
1/4 cup kalamata olives
Thick-crusted bread, for serving
2 teaspoons dried oregano
2 teaspoons dried parsley
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon dried rosemary
1/2 teaspoon freshly ground pepper
1/2 teaspoon sea salt

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saucepan over medium-low heat. Add the onions and cook until nearly translucent, about 5 minutes. Add the Greek Seasoning, oregano and tomatoes, and season with sea salt. Simmer until the sauce thickens slightly, about 15 minutes. Stir in the parsley and shrimp.
  • Transfer the shrimp mixture to a small baking dish. Top with the feta. Bake until the shrimp are cooked through, about 25 minutes. Add more Greek Seasoning and sea salt if desired. Garnish with the olives. Serve hot, with the crusty bread for dipping.
  • Combine the oregano, parsley, garlic powder, onion powder, rosemary, pepper and sea salt.

¼ cup hot pepper sauce
1 (48 ounce) can chicken broth
1 ¼ cups stone-ground corn grits
½ cup half-and-half cream

1 (8 ounce) package sliced fresh mushrooms

Steps:

  • Pour the Worcestershire sauce into a small saucepan over medium heat, and boil to reduce the sauce to 1/4 cup, about 10 minutes. Remove from heat and let cool, then stir in the hot pepper sauce. Set aside.
  • In a large saucepan, bring the chicken stock to a boil, then stir in the grits. Cook the grits until thick and the chicken broth has been absorbed, about 30 minutes, stirring occasionally to break up grits sticking to the bottom of the pan. Pour in the half-and-half and milk, stir to combine, and bring back to a boil. Reduce heat to a simmer, and cook the grits an additional 30 minutes to absorb the cream and milk, stirring occasionally. Remove the grits from the heat, and set aside.
  • Heat the canola oil in a large skillet over medium-high heat, and cook and stir the sliced sausage until the edges brown. Stir in the mushrooms, and cook and stir the mixture until the mushrooms have released their juice and the juice has been almost cooked away, about 10 minutes. Add the tomato, sprinkle with salt to help bring out the juice, and stir in the green onions and shrimp. Cook and stir the mixture until the shrimp have turned opaque and pink, about 4 minutes.
  • Pour the reserved Worcestershire sauce mixture over the shrimp, mix well to thoroughly combine, and cook and stir the shrimp mixture for 3 to 4 minutes, until heated through and blended. Stir in the parsley and serve over hot cooked grits topped with Monterey Jack cheese.
