UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

BATTER-FRIED FISH

- Rinse fillets in cold water; pat dry. In a large shallow dish toss flour and fish, 1 piece at a time. Combine next 9 ingredients. , In a cast-iron or other heavy skillet, heat 1 in. of oil. Dip floured fillets in cornstarch batter; fry over medium heat until fish just begins to flake easily with a fork, 2-3 minutes on each side. Combine marmalade and horseradish; serve with fish.

CRAPPIE FISH FRY
For those of you living in the Midwest and lucky enough to snag those delicious crappie fish, here's a recipe that will do justice to those wonderful little fellas!

Steps:
- Empty beer into a large bowl.
- Add the corn flour, salt, paprika, and cayenne to the bowl and whisk until you have light and frothy batter.
- Refrigerate for a least an hour but up to five days.
- In a deep fryer or deep skillet, heat at least 2 inches of oil to 375 degrees F.
- Dredge fillets in flour, shaking off any excess; then dip them in the beer batter, coating them well.
- Fry in oil until perfectly golden and drain on paper towels.
- Serve with lemon wedges, tartar sauce and hot sauce. Yum-yum! Prep time does not include refrigeration time.
DAD'S FRIED CRAPPIE
My dad has been frying fish in this batter since at least the 1970's. The breading is somewhat sweet. We think it's important to use 7-up and Aunt Jemima pancake mix. A biscuit mix does not work!

- Cut fish into pieces no larger than 2 inches.
- Season with salt and pepper.
- Flour fish in small batches in a Ziploc bag, then lay on a plate.
- Allow fish to sit for 30 minutes.
- Heat 3-4 inches oil in a medium saucepan on medium heat about 10-15 minutes.
- Mix 7up, egg, pancake mix, and sugar.
- Individually dip fish into batter and then gently place in oil.
- Fry about 5 pieces at a time. Oil should be at a simmer when fish is cooking. Fry on both sides until golden.
- Drain on paper towels.

AIR FRYER FRESH-CAUGHT CRAPPIE
When spring is in the air, fried crappie is what all of the fishermen around here are talking about. This year I left the deep-fryer in the cabinet and used my air fryer for a healthier alternative. Serve with malt vinegar, tartar sauce, cocktail sauce, hot pepper sauce, or the condiments of your choice.

- Place crappie fillets in a bowl. Add salt and water to cover. Cover and let sit to draw out all the blood, about 30 minutes. Rinse fillets thoroughly to remove salt. Pat dry with paper towels.
- Preheat the air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Add cornmeal, flour, seasoned salt, paprika, pepper, and cayenne to a gallon-sized zip-top bag. Seal and shake until evenly combined. Drop 2 fillets into the bag, seal, and shake to coat. Transfer to a plate. Repeat with remaining fillets.
- Spray the tops of the fillets with nonstick cooking spray. Place a layer of fillets in the air fryer basket, sprayed-side down, making sure none are overlapping. Spray the tops with cooking spray. Cook for 4 minutes. Carefully flip and spray any chalky spots. Cook until crispy, about 4 minutes more. Repeat with remaining fillets.
