This is a delicious native Maine casserole!

3 tablespoons butter
1 pound lobster meat, cut into bite-sized pieces
3 tablespoons all-purpose flour
¾ teaspoon dry mustard
salt and pepper to taste
1 cup heavy cream
½ cup milk
3 slices bread, crust removed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart baking dish.
  • Melt butter in a medium sized pot over low heat. Saute the lobster meat in butter until it starts to change color. Do not cook too long or too fast, or the lobster meat will toughen. With a slotted spoon, remove lobster meat from pan and set aside.
  • To the remaining butter in the pot, stir in the flour, dry mustard, salt and pepper. Gradually whisk in cream and milk. Cook, stirring constantly, until thickened, about 5 minutes. Return lobster meat to the pot. Tear the bread into small pieces and stir into the mixture. Pour into prepared baking dish.
  • Bake in preheated oven for 20 to 25 minutes or until bubbly and delicately browned.

1 small sweet onion, diced
3 stalks celery, diced
½ large green bell pepper, diced
½ large red bell pepper, diced
¼ cup butter
¼ cup all-purpose flour
2 cups 2% milk
2 pounds cooked and coarsely chopped lobster meat
¼ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
¼ cup bread crumbs
2 teaspoons sweet paprika
1 tablespoon butter, cut into small pieces, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1 teaspoon butter in a large frying pan over medium heat. Add onion, celery, green pepper, and red pepper; cook and stir until onion has softened and turned translucent, about 5 minutes.
  • Melt 1/4 cup butter in a large pot over medium-low heat; whisk in flour and cook for 1 minute. Add milk; cook until sauce is thickened, about 5 minutes.
  • Stir vegetables and lobster into sauce; season with salt and pepper. Turn mixture into an 8x8-inch baking dish; sprinkle with bread crumbs, dot with butter pieces, and sprinkle with paprika.
  • Bake in the preheated oven until bubbly, about 30 minutes.

1/2 pound sea scallops
1 small onion, finely chopped
1 celery rib, finely chopped
6 tablespoons butter, cubed
7 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 cup shredded sharp cheddar cheese
6 tablespoons sherry or apple juice
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound cooked medium shrimp, peeled and deveined
1 can (6 ounces) crab
1 can (14 ounces) water-packed artichoke hearts, drained, rinsed, chopped and patted dry
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup sliced almonds
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a Dutch oven, saute scallops, onion and celery in butter until scallops are firm and opaque. Stir in flour until blended. Add cream. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheddar cheese, sherry, salt and cayenne, stirring until cheese is melted. Remove from heat; set aside., In a greased 11x7-in. baking dish, layer the shrimp, crab, artichokes and water chestnuts. Top with sauce. Sprinkle with almonds and Parmesan cheese. , Bake, uncovered, 25-30 minutes or until heated through. Let stand 10 minutes before serving.

500 g lobster meat
2 tablespoons butter
1/4 cup plain flour
3/4 cup skim milk
1 1/4 cups whipping cream
1/2 cup cheddar cheese, grated
1/2 teaspoon salt
3/4 cup green capsicum, diced
1/4 cup cheddar cheese, extra
1 pinch paprika

Steps:

  • Preheat the oven to 180°C.
  • Place the lobster (crayfish) meat in the bottom of a greased 4 cup casserole dish.
  • Over low heat, melt the butter, blend in the flour, and slowly add the milk and cream.
  • Cook, stirring constantly until the mixture is thick and creamy.
  • Add the cheese, salt, and capsicum.
  • Stir until the cheese melts.
  • Pour over the lobster.
  • Sprinkle the extra cheese on top, and sprinkle with a little paprika.

1 lb elbow macaroni, small shell pasta (4 cups dry pasta) or 1 lb farfalle pasta, cooked al-dente 6-8 minutes (4 cups dry pasta)
1 quart milk
8 tablespoons unsalted butter, divided
1/2 cup flour
1 cup gruyere, Fontina or 1 cup monterey jack cheese, grated
1 1/2 ounces extra-sharp cheddar cheese, grated
1/2 cup fresh parmesan cheese, grated (not canned)
1/2 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg or 1/4 teaspoon a pinch cayenne
2 1/2-3 cups cooked maine lobster meat, reserve any juices (can sub cooked and peeled crawfish tail meat)
1 cup panko breadcrumbs or 1 cup crushed Ritz cracker
1 tablespoon fresh parsley or 1 tablespoon cilantro, chopped

Steps:

  • Preheat the oven to 375 degrees F. Grease a large casserole dish.
  • Meanwhile, in large saucepan, to make the roux, melt 6 tablespoons of butter, whisk in the flour. Cook over low heat for 2 minutes, stirring quickly with a whisk.
  • Still whisking, add the milk, lobster juice, and cook for a minute or two more, until thick and smooth. Turn the heat to low, whisk in all of the cheese, salt and pepper to taste and nutmeg or cayenne. Add the cooked/drained pasta and lobster meat and mix well. Place in the casserole dish.
  • Melt the remaining 2 tablespoons of butter, combine with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes or until the sauce is bubbly and brown. Top with fresh parsley or cilantro.

1/2 cup chopped green bell pepper
1/2 cup chopped green onions, green parts only
1 (10-ounce) container sliced white button mushrooms
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon garlic powder
1/2 teaspoon cayenne
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
2 1/2 cups seasoned bread crumbs (see page 196)
1 egg, beaten

Steps:

  • Preheat the oven to 300°F. Lightly coat a 9 x 13-inch casserole dish with cooking spray.
  • Melt the butter in a large sauté pan set over medium heat. Add the onion and cook for about 8 minutes. Add the crawfish, bell pepper, and green onions, and cook for 5 minutes. Add the mushrooms, parsley, garlic powder, cayenne, black pepper, and salt and cook for 5 minutes. Remove the pan from heat, add 2 cups of the bread crumbs and the egg, and stir well.
  • Pour the mixture into the casserole dish and top with the remaining 1/2 cup bread crumbs. Bake for 25 minutes or until the casserole is set and the bread crumbs are golden brown.
