8 large potatoes
1/3 cup margarine or 1/3 cup butter
1/2 cup milk
1/2 cup sour cream
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons melted butter
1/3 cup chives, diced
cheddar cheese, for topping

Steps:

  • Preheat oven to 400 degrees F.
  • Scrub potatoes.
  • rub with a little vegetable oil to make skins softer.
  • Pierce skin with fork to allow steam to escape.
  • Bake at 400 degrees until tender for about 50 to 60 minutes.
  • Cool potatoes for 10 minutes.
  • Cut potato in half and carefully scoop out pulp, leaving shells intact.
  • In a large bowl, mash potatoes using a potato masher to remove lumps.
  • Heat margarine and milk until margarine melts and beat into potatoes.
  • Beat in sour cream, salt and pepper.
  • Spoon into potato shells and brush with melted butter.
  • Top each potato with cheddar cheese and chives.
  • Place in oven until cheese melts on top.

Getting kids to eat healthy is easy when you make it fun. They won't care that it's good for them. How about a Regatta, with Salad Boats. Easy enough to assemble, the kids might want in on the action. Created for the Craze-E Salad Contest.

2 new potatoes
1/2 teaspoon salt
4 French style green beans, fresh
1/4 cup plain yogurt
1 tablespoon chives, finely chopped
salt and pepper (optional)
6 jumbo pasta shells, cooked al-dente
1 hard-boiled egg, sliced
1/8 cup sweet red pepper
1 tablespoon mild cheddar cheese, shredded
1 carrot, cut into long thin sticks
3 leaves lettuce, wavy

Steps:

  • Peel potatoes and cut into 1/2" cubes. Add to boiling salted water and cook for 5 minutes. Potatoes should be cooked but still firm. Drain, rinse in cold water and allow to cool.
  • Steam or boil beans for 3 minutes, or until just cooked but still firm. Rinse in cold water and drain.
  • Mix together yogurt, chives plus the salt and pepper if using. Pour onto the potatoes and toss gently. You can also add the boiled egg scraps if you wish. Chill for 30 minute.
  • Gently fill the pasta shells with the potato mixture, mounding slightly. Tap on the counter to flatten the bottom so that the 'boats' will sit firmly on a plate.
  • Now to decorate:.
  • Cut each egg slice in half to form a half moon. Place one piece at the back of the boat, on top of the potato mixture.
  • Slice beans lengthwise into two or three strips then cut into 1-1/2" pieces. Use the tip of a sharp knife to bore three holes along each side . Insert the bean strip. These will form the oars. (think Viking Ship).
  • Cut the red pepper into small squares and place them on their edges, along both sides of the shell.
  • Sprinkle the shredded cheese on top of the potato mixture.
  • Use a long carrot stick as the mast. Weave it through the edge of the lettuce leaf, which will become the sail. Insert into the bed of potato salad.
  • Chill until ready to serve.

2-1/2 pounds small red potatoes, cut into 1-inch pieces
3 teaspoons salt
1 pound bacon strips, finely chopped
1 large onion, chopped
3 celery ribs, finely chopped
2 cups mayonnaise
2 tablespoons Dijon or yellow mustard
3/4 teaspoon dill weed
1/2 teaspoon celery salt
1/4 teaspoon celery seed

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Add salt; bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 12-15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon and drain on paper towels; reserve 4 tablespoons bacon drippings. Cook and stir onion in reserved drippings until browned, 6-8 minutes., Reserve 1/4 cup cooked bacon for topping. Add onion, drippings, celery and remaining bacon to potatoes., In a small bowl, mix mayonnaise, mustard and seasonings. Pour over potato mixture; toss to coat. Refrigerate, covered, until chilled, about 1 hour. Just before serving, sprinkle with reserved bacon.

Perfect for a buffet party because it turns salad into a finger food! If the onions aren't mild enough, saute them in olive oil first.

1/4 cup olive oil
1 1/2 teaspoons lemon juice
1 teaspoon italian seasoning
1 pinch kosher salt
2 pinches fresh ground pepper
1/2 teaspoon minced garlic
2 1/2 tablespoons parmesan cheese
1/4 mild red onion, sliced thinly
1 large head green leaf lettuce
1 cup chopped tomato
1/4 lb thinly sliced pepperoni
2 (4 ounce) cans sliced olives
1/2 lb queso ranchero or 1/2 lb feta
garlic salt
1 (12 ounce) package jumbo pasta shells
1 tablespoon kosher salt
4 quarts water

Steps:

  • Assemble the salad dressing an hour ahead, so the onion and salad dressing have time to blend but the onion is still crunchy.
  • Bring the water to a boil with the salt. Add the pasta and cook for 12 minutes. Drain immediately and cool completely.
  • Chop the romaine, tomatoes and pepperoni. Drain and add the olives. Crumble the cheese over the salad.
  • Toss the salad dressing and salad. The dressing will be clumpy. Add the dressing a little at a time, being careful to not add too much. Add garlic salt to taste.
  • (I usually spoon out the onions with a large non-slotted spoon. I use the dressing that comes along with the onions, leaving any excess dressing for another day.).
  • Fill the pasta shells.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Darlene Strohecker. Cooking time doesn't include time it takes to bake the potato.

1/4 cup butter
4 ounces cream cheese
1/2 teaspoon garlic salt
1/2 teaspoon salt
1 teaspoon parsley flakes
4 slices cheese

Steps:

  • Bake potatoes until done.
  • When cool, cut in half and scoop out middles.
  • Place shells on baking tray.
  • Mix remaining ingredients with the scooped-out potato and mash.
  • Heap the mixture in the shells and put a slice of cheese on top.
  • Bake at 350 degrees for 25 minutes.

2 big potatoes
2 cups minced chicken
1 big lemon
1/4 cup butter
1 big tomatoes
1/4 tablespoon tomato sauce
1 cup parmesan cheese
2 small onions
salt & pepper, flavors

Steps:

  • Peel the potatoes, cut each one into two parts in half, dig the core of the potatoes till you get the boat shape, steam the potatoes till it be semi-cooked. Then leave it to get colder, prepare a pan with melted butter to fry the potatoes with till it be crispy.
  • Cut one onion into rings, fry it with olive oil then add the chicken meat, salt, pepper, flavors, a bit of grated lemon peel.
  • Chop the tomato & one onion & put it in a hot pan, then add olive oil, add the salt, pepper, flavors & the tomato sauce with a bit of water, keep on stirring till it be sauce.
  • Bring the potatoes then stuff it with the chicken meat & the grated Parmesan cheese, place the stuffed potatoes in the sauce, leave it for 10 minutes to be ready, add some lemon rings in the sauce to be more flavored.
