Crazy Spice Cake


one-dish spice cake ... so easy! for some reason, my mother-in-law showed me how to make it twice... :) make it in the cake pan, serve it straight out of the pan, and eat with some vanilla ice cream. however, if you're unsure about how well it will mix (i've never had any problems with it), feel free to use a bowl or two. ;)

Time: 35 minutes


  • mix all ingredients together in 9"x13" cake pan
  • bake at 350f for 30-35 minutes

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground ginger

  • 1 cup milk

Most Crazy Cakes seem to be the chocolate version. This one is NOT chocolate but still simple and good! Clipped this one from a magazine way back in 1979.

  • Mix well the flours, sugar, soda, salt and spices; set aside.
  • In an 8 x 8 inch square pan, mix well the bran cereal and coffee. Let stand 2 minutes or until cereal is softened. Stir in oil, vinegar and vanilla, then stir in flour mixture until smooth.
  • Bake in 350 F oven for 35 to 40 minutes or until pick inserted in centre comes out clean. Cool completely in the pan on a wire rack. Cut in 9 squares or as desired to serve.

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk, flour, allspice, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with sour cream, beating well after each addition. With clean beaters, beat egg whites on medium speed until stiff. Fold into batter., Pour into two greased and floured 9-in. round baking pans. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., In a small heavy saucepan over low heat, combine brown sugar, egg whites, water and cream of tartar. With a hand mixer, beat on low speed 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 20 minutes., Pour into a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Spread between layers and over top and sides of cake. Refrigerate leftovers.
