REALLY GOOD VEGETARIAN MEATLOAF (REALLY!)
High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

Steps:
- Add salt to water and boil in a saucepan.
- Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
- Remove from fire.
- Drain and partially mash lentils.
- Scrape into mixing bowl and allow to cool slightly.
- Stir in onion, oats and cheese until mixed.
- Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
- Mix well.
- Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
- Smooth top with back of spoon.
- Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
- Cool in pan on rack for about 10 minutes.
- Run a sharp knife around edges of pan then turn out loaf onto serving platter.

Steps:
- Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
- Smooth out top.
- Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
- Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.
- ENJOY!
- *The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
- **Recipe should be"plump" from the addition of the milk or Half & Half.
- It should NOT be runny.
- ***A second batch of sauce served hot is good to serve with the meatloaf.
- Nita's Note: I note that some of you are using game meat such as deer -- Deer is a very DRY meat. It is wise to HAVE some fat added to the deer -- especially to ground deer. Maybe 25 % fat, ( I recommend 1 lb of ground venison, and 1/2 lb of deer sausage for fat content), otherwise your results will be poor. I don't know about some of the other game meat some are using. Baked beans with ground beef. This can be served as a main dish or a side dish. It is great with BBQ and slaw. This freezes well.

- In skillet, brown beef, bacon and onion; drain and place in crock pot.
- Cook baby limas for 8 minutes; add alo ng with remaining ingredients to crockpot. stir well.
- Cover and cook on low heat for at least 4 hours.

Steps:
- Saute ground beef, bacon, and onion in a large skillet or saucepan until meat is cooked throughly.
- Drain.
- Add ketchup, brown sugar and vinegar and mix well.
- Then add pork and beans, butter beans and red kidney beans and mix well.
- Heat throughly.
- Transfer to large baking dish.
- Bake uncovered at 350 degrees for 45 minutes to 1 hour.
- Add tender loving care.
