Cream Of Potato And Vegetable Soup Recipe

  1. butter
  2. onion
  3. reduced-sodium chicken broth
  4. potatoes
  5. salt
  6. pepper
  7. flour
  8. half-and-half
  9. mixed vegetables


  1. melt margarine in large saucepan or dutch oven over medium heat
  2. stir in onion
  3. cook 2 to 3 minutes or until crisp-tender
  4. add broth , potatoes , salt and pepper
  5. cook 10 to 15 minutes or until potatoes are just tender , stirring occasionally
  6. in small bowl , combine flour and half-and-half
  7. mix well
  8. stir into potato mixture
  9. add frozen vegetables
  10. cook uncovered for 8 to 10 minutes or until vegetables are crisp-tender and soup is throughly heated
