ZUCCHINI CAKE WITH CREAM CHEESE FROSTING
Quick and easy to whip up. Great taste with the cream cheese frosting. Good way to use up all those zucchini from the garden.

- Cake:.
- Combine dry ingredients (flour, sugar, cinnamon, baking powder, and baking soda) in a mixing bowl.
- Add oil, eggs and mix well.
- Add zucchini and walnuts; stir well.
- Pour into a greased 9 x 13 inch baking pan.
- Bake at 350 degrees for 35-40 minutes.
- Cool.
- Frosting:.
- Beat cream cheese, butter, milk, and vanilla until smooth.
- Add sugar and mix well.
- Frost cake.
- Sprinkle with additional walnuts.

ZUCCHINI BARS WITH CREAM CHEESE FROSTING
Yummy way to use up that over-abundance of zucchini from your garden. This makes about 2 dozen bars.

- Bars:.
- Combine oil, sugar, and eggs in a large mixing bowl; beat at medium speed until well blended.
- In another bowl, combine the flour and next 5 ingredients; stir well. Add the flour mixture to the creamed mixture, beating until well blended. Stir in zucchini.
- Pour the batter into an ungreased 15 x 10 x 1 inch jellyroll pan. Bake at 350 degrees for 25 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan on a wire rack. Once cool, spread cream cheese frosting evenly over the top; cut into bars.

- Combine the cream cheese, butter, and vanilla in a small mixing bowl; beat at medium speed until light and fluffy. Add the powdered sugar, beating until the frosting is smooth. Spread on the cooled zucchini bars.

- Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups, or line with paper muffin liners.
- Sift all-purpose flour, whole-wheat flour, baking powder, and cinnamon together in a bowl.
- Beat sugar, coconut oil, eggs, and vanilla extract together in a large bowl with an electric mixer on medium speed until smooth, about 4 minutes; fold in zucchini and walnuts. Stir flour mixture into egg mixture until batter is well mixed. Fill prepared muffin cups with batter about half full.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool in the pans for 15 minutes before removing to cool completely on a wire rack.
- Beat cream cheese and butter together with an electric mixer in a bowl until smooth. Gradually beat confectioners' sugar into cheese mixture until frosting is light and fluffy. Spread frosting over completely cooled cupcakes.

CREAM CHEESE FROSTING (LIGHTENED UP VERSION)
Got this recipe from Cooks Country, its a lightened up version of cream cheese frosting, but what it lacks in fat content it makes up for in taste. It is light and delicious! Try it on carrot cake. NOTE: Someone asked about fat free cream cheese, this recipe is from Cooks Country and they do a good job of explaining how recipes are developed, they note that they did try fat free cream cheese but taste testers found it to be un-natural tasting and gummy, and the "light" cream cheese was runny. With the neufchatel cream cheese they cut the fat to 1/3 but still got a creamy good tasting frosting.
