CREAM CHEESE BROWNIES

Cream Cheese Brownies image

These brownies offer a small taste of heaven. You have to follow the directions, otherwise they won't be so heavenly.

Provided by Mirj2338

Categories     Bar Cookie

Time 45m

Yield 16 slices of heaven

Number Of Ingredients 15

4 ounces cream cheese, at room temperature
1 egg yolk, at room temperature
1 teaspoon vanilla
2 tablespoons sugar
1 tablespoon flour
5 tablespoons sweet butter
5 ounces semisweet chocolate or 5 ounces bittersweet chocolate
2 eggs, at room temperature
3/4 cup sugar
1/2 cup flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2-1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped nuts

Steps:

  • Preheat the oven to 325°F.
  • Lightly grease a square 8X8-inch pan.
  • To make the cream cheese layer, put the cream cheese in a mixer bowl and mix with the paddle attachment until it's smooth.
  • Add the rest of the cream cheese layer ingredients, beating well and scraping down and of the batter that dares try to escape up the sides of the bowl.
  • To make the brownie layer, melt the butter and the chocolate together until smoothly melted.
  • Put aside and let come to room temperature.
  • Be patient, it's worth it.
  • In a separate bowl from the cream cheese mixture, mix the eggs and the sugar until it's thick and a gorgeous lemon color.
  • Add the chocolate mixture and mix well until combined.
  • Again, scrape down the sides of the bowl.
  • Add the flour, vanilla, baking powder, salt and the chocolate chips, mix well until combined.
  • Pour half the chocolate mixture into the prepared pan.
  • Dollop the cream cheese mixture over that.
  • Don't worry if it doesn't cover the chocolate. It won't.
  • Add the remaining chocolate mixture.
  • Take a knife and gently draw it through the batters, from left to right and from top to bottom, making a checkerboard pattern.
  • Don't allow the mixtures to combine, be careful.
  • Sprinkle with the nuts.
  • Bake in the oven until the sides, but not the tops, begin to brown, about 25 to 30 minutes.
  • Don't wait until a tester comes out clean, if you do then you have overbaked and basically murdered the brownies.
  • Set aside to cool for about 10 minutes, cut into 12 or 16 brownies, cover and refrigerate.

Categories     Food & Cooking     Dessert & Treats Recipes     Brownie Recipes

Yield Makes 16 squares

Number Of Ingredients 9

10 tablespoons unsalted butter, cut into pieces, plus more for pan
1 cup plus 2 tablespoons all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
8 ounces semisweet or bittersweet chocolate, chopped
4 ounces cream cheese, room-temperature
1 1/2 cups sugar
4 large eggs

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
  • Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
  • Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.

MOCHA CHEESECAKE BROWNIES

Mocha Cheesecake Brownies image

Indulgently rich and fudgy homemade mocha brownies are layered with white chocolate chip-studded cheesecake. They're moist, rich, and fudgy with coffee flavor and lots of chocolate!

Provided by Sally

Categories     Brownies

Time 4h

Number Of Ingredients 15

1/2 cup (115g) unsalted butter
8 ounces (228g) coarsely chopped quality semi-sweet chocolate
3/4 cup (150g) granulated sugar
3 large eggs, at room temperature
1 teaspoon pure vanilla extract
1/2 cup + 2 Tablespoons (78g) all-purpose flour (spoon & leveled)
2 Tablespoons (10g) natural unsweetened or dutch-process cocoa powder
2 teaspoons espresso powder*
1/4 teaspoon salt
optional: 1/2 cup (90g) mini or regular size semi-sweet chocolate chips (for topping)
8 ounces (224g) full-fat brick style cream cheese, softened to room temperature
1/4 cup (50g) granulated sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (180g) white chocolate chips

Steps:

  • Melt the butter and chopped chocolate in a medium saucepan over medium heat, stirring constantly, about 5 minutes. Or melt in a medium microwave safe bowl in 20 second increments, stirring after each, in the microwave. Remove from the heat, pour into a large mixing bowl, and allow to slightly cool for 10 minutes.
  • Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9-inch square baking pan with aluminum foil or parchment, leaving an overhang on all sides to easily lift the brownies out of the pan when cool. Set aside.
  • Whisk the granulated sugar into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour, cocoa powder, espresso powder, and salt. Set aside.
  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese for 1 minute on high speed until completely smooth and creamy. Reduce to medium-high speed and beat in the sugar until combined. Beat in the egg and vanilla extract until combined. Finally, fold in the white chocolate chips with a rubber spatula or wooden spoon. Set aside.
  • Spread about half of the brownie batter into the prepared baking pan. The batter is thick, so do your best to spread it to every corner making 1 even layer. Top with all of the cheesecake batter. Spread this in a thick, even layer. Layer on the rest of the thick brownie batter, spreading as best you can. If some cheesecake swirls out on top or if you can't quite cover the corners with brownie batter, that's OK! Sprinkle the optional chocolate chips on top.
  • Bake for 35-38 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the center should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 30 minutes and use the toothpick test to see when yours are finished.
  • Allow the brownies to cool in the pan set on a wire rack for 45 minutes. Then cover and refrigerate for at least 2 hours and up to 1 day. The cheesecake layer must be cold before cutting into squares.
  • Once chilled, lift the foil out of the pan using the overhang on the sides and cut into squares. For neat squares, I use a very sharp knife and wipe it clean with a paper towel after each cut.

CREAM CHEESE BROWNIES

Cream Cheese Brownies image

Part moist and delicious brownies, part cheesecake. An easy chocolate dessert recipe I think you will love.

Provided by Karen Ciancio

Categories     Dessert

Number Of Ingredients 12

4 ounces unsweetened baking chocolate
1 cup butter (or margarine)
2 cups sugar
2 teaspoons vanilla
4 eggs (large)
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup nuts (coarsely chopped)
16 ounces cream cheese (softened (2 - 8 ounce packages))
1/2 cup sugar
2 teaspoons vanilla
1 egg

Steps:

  • Heat the oven to 350°F. Grease the bottom and sides of a rectangular pan, 13x9x2 inches, with shortening or non-stick spray.
  • Melt the chocolate and butter in a 1-quart saucepan over low heat, stirring frequently. Let it cool.
  • Beat the cream cheese filling ingredients together until smooth and set aside.
  • Beat together the cooled chocolate mixture, sugar, vanilla and eggs in a large bowl with an electric mixer on medium speed for 1 minute, scraping the bowl occasionally.
  • Beat in the flour and salt on low speed for 30 seconds, scraping the bowl occasionally. Beat on medium speed for 1 minute. Stir in the nuts. Spread half of the batter (2 1/2 cups) in the pan. Spread the cheesecake filling over the batter. Carefully spread the remaining brownie batter over the cream cheese filling.
  • You can bake it as is or create the pretty design you see in the picture. To do that, take a butter knife and insert it into the layers of batter. Swirl the knife a bit so that the batters mix just a bit into a swirl pattern as in the image.
  • Bake in an oven preheated to 350°F for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool the cheesecake brownies in the pan on a wire rack.

CREAM CHEESE BROWNIES

Cream Cheese Brownies image

These are my mom's creation--kind of. The brownies are Marcia Adams's "Very Best Brownies" from her Heartland cookbook. The cream cheese filling is my mom's concoction. I like that the cream cheese layer doesn't overwhelm the brownies.

Provided by anonymous23

Categories     Bar Cookie

Time 45m

Yield 24-32 serving(s)

Number Of Ingredients 12

1 cup butter, melted
2 cups sugar
7 tablespoons cocoa (not quite 1/2 c)
4 eggs
1 cup flour
1 teaspoon baking powder
2 teaspoons vanilla
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)
1 egg
4 ounces cream cheese, softened
2 tablespoons sugar
2 tablespoons flour

Steps:

  • Preheat oven to 350.
  • Combine butter, sugar, and cocoa in large mixing bowl.
  • Add eggs, one at a time. Blend after each addition.
  • Add remaining ingredients and mix until just combined.
  • In another bowl, combine ingredients for cream cheese layer. Mix until smooth.
  • In 9 x 13 greased baking dish, pour half of brownie batter. Smooth to even.
  • Spoon the cream cheese layer into the baking dish. This shouldn't be an easily spreadable layer--we just dollop and try to smooth it out for a more even distribution.
  • Use butter knife to slightly marble into bottom layer.
  • Top with remaining brownie mixture. Spread as evenly as you can, then tap pan lightly on counter to level batter.
  • Bake 20-25 minutes (some ovens require a full 30 to completely bake), until the top is firm to the touch. Baking too long will result in dry brownies.
  • Allow to stand 15 minutes before cutting.
