CREAM CHEESE-STUFFED FRENCH TOAST
Steps:
- Preheat a cast-iron griddle over low heat; preheat the oven to 300 degrees F.
- Combine the cream cheese, jam and slivered almonds in a small bowl and beat with an electric mixer.
- Slice the challah into 2-inch-thick slices. With a pairing knife, make a 1/2-inch horizontal slit in the bottom crust of each slice to form a pocket.
- Using a butter knife, fill each slice with some of the cream cheese mixture. Set aside.
- Whisk together the eggs, almond extract, brown sugar and milk in a large baking dish. Dip the stuffed challah slices into the egg mixture, turning to fully coat each slice.
- Increase the temperature on the preheated griddle to medium heat; add the butter, let it melt, and then place the stuffed and dipped challah onto the griddle. Cook until golden brown, about 4 minutes per side. Transfer to a baking sheet fitted with a baking rack, and hold in the oven to keep warm. Serve with slivered almonds and maple syrup.
TOAST WITH TOMATOES AND CREAM CHEESE
This is an easy sandwich to put together, that we like to have for brunch, but it can be eaten at any time. It is especially good in the summer when the tomatoes have lots of flavor.

- Take one slice of buttered toast and spread with some or all of the cream cheese.

- Eat at once.

- Preheat the oven to 375 degrees F (190 degrees C).
- Spread cream cheese in a thick layer onto the bread slices and cut bread into cubes. Layer in the bottom of a 9-inch square baking dish.
- Whisk eggs, milk, maple syrup, vanilla, cinnamon, and nutmeg in a bowl until well combined. Pour over bread cubes and pat gently until bread is evenly soaked. Let sit for 5 to 10 minutes.
- Bake in the preheated oven until eggs are cooked and fluffy, 35 to 45 minutes.

CREAMY ASPARAGUS ON TOAST
If you have hard-cooked eggs left over from Easter, here's a way to use some of them. It's delicious for a luncheon or light supper.

- In a large skillet, bring 1/2 in of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain. Transfer to a greased 11x7-in. baking dish. Arrange eggs over the top. , In a large saucepan, melt 1/4 cup of butter; gradually stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Pour over eggs. , In a small skillet, melt the remaining butter; toss with bread crumbs. Sprinkle over top of casserole. Bake, uncovered, at 375° for 15 minutes or until lightly browned. Serve with toast.

This is the most delicious French toast, that is made in the oven, serve sprinkled with powdered sugar, and smothered with maple syrup. Plan ahead this needs to be chilled overnight.

- Place the bread cubes in a greased 13 x 9-inch baking dish.
- Beat the cream cheese at medium speed of mixer until smooth.
- Add in the eggs (1 at a time) mixing well after each addition.
- Add in the milk, half and half, 1/2 cup maple syrup and vanilla; mix well until smooth.
- Pour the cream cheese/milk mixture over the top of the bread cubes; cover, and refrigerate overnight.
- The next morning: Set the oven to 375 degrees.
- Remove the bread mixture from the fridge; let stand on the counter for 30 minutes before baking.
- Bake for 40-50 minutes, or until set (should be a nice golden brown colour).
- Remove from the oven, sprinkle with powdered sugar.
- Serve with maple syrup.
- Delicious!

- Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork. Chop the egg whites into small pieces and set aside.
- Melt the butter in a saucepan set over medium heat. Stir in flour until smooth.
