TRIPLE-CHEESE SPIRALS



Triple-Cheese Spirals image

Kosher salt
12 ounces gemelli, cavatappi or other spiral-shaped pasta
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 teaspoon dry mustard
Pinch of cayenne pepper
1 (12-ounce) can evaporated milk
1/2 cup whole milk
3/4 cup shredded yellow sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup panko (Japanese breadcrumbs)
2 tablespoons chopped fresh parsley, chives and/or scallions

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

Steps:

1 container flavoured cream cheese

Steps:

  • Take off crusts from white bread.
  • Take 2 slices, and lay one above (not on top) the other overlapping the edge by about half an inch.
  • Roll out well with a rolling pin to seal and flatten.
  • You should have a long piece now.
  • Spread with flavoured cream cheese right to the edges, and lay on a spinach/shard leaf Roll up tightly and leave in the fridge overnight.

3 tablespoons olive oil
1 tablespoon crushed garlic
2 teaspoons Italian seasoning
Flour, for work surface
1 pound refrigerated pizza dough, at room temperature
1 1/2 cups shredded Cheddar
1/2 pound deli sliced ham
1 large egg
2 tablespoons water

Steps:

  • In a small bowl, whisk together the olive oil, garlic, and Italian seasoning.
  • On a lightly floured surface, roll out the pizza dough into a 12-inch square. Brush the entire surface with the seasoned olive oil. Top with 1 cup of shredded cheese and an even layer of ham. (Reserve the extra cheese and ham for Round 2 Ham and Cheese Croquettes.)
  • Starting from the bottom edge, tightly roll up the dough to form a log. Using a sharp serrated knife, slice the roll on the bias into 1-inch thick pieces. Arrange the rolls on their side on a nonstick or lightly oiled baking sheet. Cover loosely with plastic wrap and allow to sit at room temperature for 30 minutes to proof.
  • Preheat the oven to 375 degrees F.
  • In a small bowl, whisk together the egg with 2 tablespoons of water. Brush the tops and sides of the rolls with the egg wash. Bake until golden brown, about 30 to 35 minutes.
  • Remove from the oven, transfer to a serving platter and serve.

5 eggs, separated
3/4 cup sugar
1 teaspoon vanilla extract
3/4 cup flour
1/2 cup cocoa powder
1 teaspoon baking powder
2 tablespoons powdered sugar
Vanilla cream filling, recipe follows
14 ounces bittersweet chocolate
2 ounces cocoa butter or vegetable oil
4 ounces or 1 stick butter
1/2 cup vegetable shortening
3/4 cup confectioners' sugar
1/2 teaspoon vanilla
4 tablespoons light corn syrup

Steps:

  • Preheat oven to 375 degrees F. Spray one 9 by 17-inch sheet tray with vegetable spray, line with parchment paper and spray again. In a mixer, using the whip attachment, whip the egg yolks and the sugar until doubled in volume and pale yellow; add vanilla extract. Sift together the flour, cocoa powder, and baking powder and powdered sugar twice. Slowly add the dry ingredients to the mixing bowl, running at slow speed, until fully incorporated.
  • In a clean and greaseless bowl, whip the egg whites until firm but not dry. Incorporate a fifth of the whipped egg whites into the cocoa mixture and mix until well incorporated. Fold the remaining egg whites into the cocoa mixture in 3 batches and immediately spread onto a large baking sheet using an offset spatula, being careful not to overwork the dough. Bake for 6 to 8 minutes.
  • Immediately run the tip of a knife around the edge of the cake to loosen it from the sides of the sheet tray then slide it (with the parchment paper) onto a cool surface. Trim dry edges of the cake.
  • Vanilla Cream Filling: With an electric mixer, beat together the butter and the vegetable shortening until blended. Turn the mixer down to its lowest setting and gradually add the confectioners' sugar. Turn the mixer back up and beat at high speed until light and fluffy, about 5 minutes. Gradually beat in the vanilla and corn syrup until the filling is the consistency of sour cream, about 2 minutes more.
  • Using a sharp knife, cut the cake in half lengthwise. Using an offset spatula, spread a 1/8-inch thick layer of vanilla cream filling over half of the cake and cut into 5 equal sections per half. Roll up each section tightly (peeling off parchment paper as you roll) and place in the freezer for 30 minutes.
  • Melt the bittersweet chocolate in the top of a double boiler and add cocoa butter or vegetable oil. Place the rolls 1 at a time directly in the double boiler of melted chocolate. Coat each roll completely in the chocolate. Using two forks, carefully transfer the rolls to a parchment-lined tray, allowing any excess chocolate to drip back into the double boiler. Continue with the remaining rolls, pouring more of the chocolate onto the plate as needed.

6 hard-boiled eggs, peeled, cooled and sliced in half

Steps:

  • Set a large skillet over medium-high heat with the oil. Once hot, add the shallot and garlic and cook, stirring often, until softened and just beginning to brown, about 3 minutes. Add the chopped spinach, a handful at a time, stirring until wilted through. Continue adding and stirring until all the spinach has been used. Cook until wilted and bright green, about 2 minutes longer.

¼ cup butter
3 tablespoons all-purpose flour
1 ¾ cups milk

1 tablespoon spicy brown mustard
3 pinches ground nutmeg
½ teaspoon salt
2 cups chopped cooked chicken
10 buttery round crackers, crushed
2 tablespoons grated Parmesan cheese
2 teaspoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch pan with cooking spray and set aside. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a saucepan over medium heat. Add flour a tablespoon at a time and stir until smooth. Gradually stir in milk. Bring to a low boil, and cook for one minute, stirring constantly. Remove from heat and stir in cheddar cheese until melted. Stir in cream cheese and until melted. Add wine, and season with mustard, nutmeg and salt.

  • Bake in preheated oven for 30 minutes, or until edges of casserole are bubbling. Remove from oven, and stir to thoroughly coat pasta and chicken and to keep top of casserole from hardening. Allow to cool for 10 minutes before serving.

2 teaspoons ground cumin
3 (10 inch) flour tortillas
vegetable oil
salsa

Steps:

For the perfect appetizer, top Keebler® Toasteds® with fresh basil or parsley and a slice of ham or turkey rolled with cream cheese!

½ cup soft cream cheese
2 thin slices lean turkey or ham (about 1 ounce each)
1 sprig Small leaves fresh basil or parsley
24 each Keebler® Toasteds® Wheat, Buttercrisp, Sesame, Onion or Reduced-Fat Wheat Crackers

Steps:

  • If cheese is stiff, set aside at room temperature to soften. Spread 2 to 4 tablespoons cheese in thin layer on each turkey or ham slice. (The amount of cheese needed depends on the size of the slices.)
  • Roll up tightly from short end and wrap each roll, separately, in plastic wrap. Refrigerate for 2 hours or until ready to serve.
  • With sharp knife, trim ends of each roll, then cut into 1/2-inch slices. To serve, place basil or parsley leaves on crackers. Top each with one spiral.
