4 large organic egg whites, at room temperature
115g caster sugar
115g icing sugar

Steps:

  • Heat the oven to 110C/ 100C fan/gas ¼.
  • Line 2 baking sheets with non-stick liner or parchment paper (meringue can stick on greaseproof paper and foil).
  • Tip 4 large egg whites into a large clean mixing bowl (not plastic). Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
  • Now turn the speed up and start to add 115g caster sugar, a dessertspoonful at a time. Continue beating for 3-4 seconds between each addition. It's important to add the sugar slowly at this stage as it helps prevent the meringue from weeping later. However, don't over-beat. When ready, the mixture should be thick and glossy.
  • Sift one third of the 115g icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula. Continue to sift and fold in the remaining icing sugar a third at a time. Again, don't over-mix. The mixture should now look smooth and billowy.
  • Scoop up a heaped dessertspoonful of the mixture. Using another dessertspoon, ease it on to the baking sheet to make an oval shape. Or just drop them in rough rounds, if you prefer.
  • Bake for 1 ½-1 ¾ hours in a fan oven, 1 ¼ hours in a conventional or gas oven, until the meringues sound crisp when tapped underneath and are a pale coffee colour.
  • Leave to cool on the trays or a cooling rack. (The meringues will now keep in an airtight tin for up to 2 weeks, or frozen for a month.) Serve two meringues sandwiched together with a generous dollop of softly whipped double cream.

1 1/2 cups granulated sugar
5 large egg whites (see Cook's Note)
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 cup crushed chocolate sandwich cookies, such as Oreos (about 10 cookies)

Steps:

  • Preheat the oven to 400 degrees F.
  • Distribute the sugar in an even layer on a baking sheet and bake for 8 minutes. While the sugar is baking, add the egg whites to a stand mixer with the salt.
  • Once the sugar has been in the oven for 7 minutes, begin beating the whites on high. After a minute they should be foamy. With the mixer still running, gradually sprinkle in the warm sugar, cinnamon and vanilla. Once all of it has been added, beat on high until the meringue is cold, about 10 minutes.
  • Reduce the oven temperature to 200 degrees F.
  • Line a baking sheet with parchment. Place the crushed cookies on a plate. Using a large ice cream scoop or 2 large spoons, scoop up a big dollop of meringue and place it on the plate of cookies so that they stick to the bottom. Use a spatula to carefully transfer it to the baking sheet.
  • Bake until the outsides are crunchy and the insides are still slightly soft, about 2 hours. Allow them to cool completely on the baking sheet until hard, about 30 minutes.

4 egg whites (absolutly NO egg yolk)
1 teaspoon vanilla extract
1/8 teaspoon cream of tartar
1 cup sugar

Steps:

  • Preheat oven to 225f.
  • Beat egg whites in a metal bowl with a hand-held beater or a mixmaster untill foamy. Add vanilla and cream of tartar.
  • Continue to beat, and add sugar one tsp at a time.
  • Beat untill it forms stiff peaks.
  • Put meringue into a thin square bag, and cut a SMALL hole in a bottom corner of the bag, so the meringue will come out in a string about the size of a thick pencil.
  • On a cookie sheet lined with pachment paper squeeze from outside in, making a spiral, then make a peak in the middle. The meringue should be about 1 inch in diameter. You will probably need a second cookie sheet.
  • bake for one hour, or untill tops are golden brown.

4 large egg whites, (at room temperature (see notes))
1/2 tsp cream of tartar
3/4 tsp vanilla extract
3/4 cup (150g) granulated sugar
1/8 tsp salt

Steps:

  • Set oven racks in upper and lower third of oven*. Preheat oven to 225 degrees. Line two rimmed 18 by 13-inch baking sheets with parchment paper.
  • Add egg whites to metal or glass mixing bowl of electric stand mixer** if you haven't already. Add cream of tartar and vanilla extract.
  • Set mixer with a whisk attachment and whip mixture on medium speed to soft foamy peaks, about 1 minute. Then while mixing on medium speed over the course of about 1 minute, slowly dust in granulated sugar and add salt.
  • Increase mixer speed to high and whip until very thick glossy peaks form, this will take several minutes.
  • Transfer half of the mixture to a piping bag fitter with a large star tip*** (I like to use Ateco 826 - 829 tips depending on desired shape).
  • Pipe meringue into rounds or tear drop shapes about 1 1/4-inches wide, and spacing each about 1-inch apart. Repeat with remaining mixture.
  • Transfer baking sheets to racks in preheated oven. Bake 30 minutes then switch and rotate baking sheets and continue to bake 30 minutes. Turn oven off and leave meringues in warm oven to rest 1 hour (or 2 hours on humid day).
  • Remove from oven and let cool at least 10 minutes before serving. Store in an airtight container at room temperature, free from moisture.

1/4 teaspoon coconut extract
1/4 teaspoon almond extract

Steps:

  • Beat together egg whites, cream of tartar, coconut, almond, and vanilla extracts, and salt.
  • Gradually beat in sugar 2 tablespoons at a time.
  • Beat until stiff peaks form.
  • Sift 1/4 cup of cocoa over mixture and fold together.
  • Place in a heavy duty resealable bag and cut a small hole in the corner.

6 egg whites (room temperature)
1 tsp corn starch
1/2 tsp cream of tartar
1 1/3 cup granulated sugar
1 tsp vanilla extract
1 cup semisweet chocolate chips
1 1/2 cups heavy whipping cream (36 % fat or higher)
2 tbsp granulated sugar

Steps:

  • Preheat your oven to 240 degrees Fahrenheit. Line 2 baking sheets with parchment paper.
  • Place 6 egg whites, 1 tsp corn starch, and 1/2 tsp cream of tartar into the bowl of a stand mixer. Using the whisk attachment, beat the egg whites on high speed.
  • Once the egg whites begin to form soft peaks, gradually add the sugar, then vanilla extract. Continue beating on high speed until stiff peaks form (about 10 minutes). At this point the egg whites should have a smooth and glossy look.
  • Pipe the meringues onto the parchment paper using a Wilton 366 tip. Pipe in and back a forth motion to create a ruffled looked. I piped each meringue into about 4 inches.
  • Bake the meringues in your preheated oven for 1 hour and 30 minutes. Once they're baked, transfer the the baking sheet onto the counter to cool to room temperature.
  • Meanwhile, place the chocolate chips into a microwave safe bowl and melt it in the microwave with 30 second intervals. Make sure to mix throughly in between intervals.
  • Place the cold heavy whipping cream and 2 tbsp sugar into a large bowl. Using an electric mixer, beat the cream on high speed until soft peaks form.
  • Quickly add the melted chocolate to the cream and continue beating on high speed until stiff peaks form.
  • Pipe the chocolate cream onto the cooled meringues using the same Wilton 366 tip.
  • Top the meringue bites with chopped hazelnuts and fresh berries. Once the cream is placed on top of the meringues, they taste best up to 4 hours.
