1 tablespoon olive oil
1 onion, chopped
3 cups broccoli, frozen and chopped
2 cups chicken broth
1 1/2 cups mashed potatoes
2 cups milk
1 1/2 cups cheddar cheese, shredded
salt and pepper

Steps:

  • Heat oil in soup pot and add onion. Cook until translucent.
  • Add broccoli and chicken broth and cook until tender.
  • Add mashed potatoes & mix thoroughly. Heat for 5 minute.
  • Add milk and heat some more.
  • Add cheddar cheese.
  • Salt and pepper to taste.
  • Note: I like to add cream cheese, sour cream, and onion salt to my mashed potatoes. This makes them so yummy!

¼ cup chopped onion
1 cup milk
2 tablespoons all-purpose flour
1 cup shredded Cheddar cheese
½ teaspoon dried oregano

Steps:

  • Bring broth to a boil. Add broccoli and onion. Cook for five minutes, or until broccoli is tender.
  • In a separate bowl, slowly add milk to flour, and mix until well blended.
  • Stir flour mixture into broth mixture. Cook, stirring constantly, until soup is thick and bubbly. Add cheese if desired; stir until melted. Add seasonings and serve.

My husband loves Panera® broccoli cheddar soup but it went up in price and therefore we set out on a hunt to create the perfect broccoli cheddar soup. Here is what we came up with. There are tons of variations and options to make this soup your own. You can add extra veggies, different cheeses, garlic to your onions, a little nutmeg to the finished soup, green onions, sour cream, etc. The list goes on and on. Make it your own! Serve topped with cheese!

1 tablespoon butter
½ onion, chopped
¼ cup melted butter
¼ cup flour
2 cups milk
2 cups chicken stock
1 ½ cups coarsely chopped broccoli florets
1 cup matchstick-cut carrots
1 stalk celery, thinly sliced
2 ½ cups shredded sharp Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Melt 1 tablespoon butter in a skillet over medium-high heat. Saute onion in hot butter until translucent, about 5 minutes. Set aside.
  • Whisk 1/4 cup melted butter and flour together in a large saucepan over medium-low heat. Continue to whisk and cook , adding 1 to 2 tablespoons of milk if necessary to keep the flour from burning, 3 to 4 minutes.
  • Gradually pour milk into flour mixture while whisking constantly. Stir chicken stock into milk mixture. Bring to a simmer; cook until mixture is thickened, about 20 minutes. Add broccoli, carrots, sauteed onion, and celery; simmer until vegetables are tender, about 20 minutes.
  • Stir Cheddar cheese into vegetable mixture until cheese melts. Season with salt and pepper to taste.

A steaming hot bowl of this creamy, low carb broccoli cheddar soup is comfort food at it's best!

1 Tablespoon butter
½ cup onion (diced)
1 clove garlic (minced)
4 cups fresh broccoli florets
2 cups chicken broth
¼ teaspoon dried thyme
salt & pepper to taste
2 Tablespoons cream cheese
1 cup heavy cream
1½ cups sharp cheddar cheese shredded

Steps:

  • Cook butter, garlic, and onion until onion is tender (3-4 minutes).
  • Add broccoli, chicken broth, and thyme. Simmer covered until broccoli is softened (6 minutes). Add cream cheese and simmer 2 minutes more.
  • Remove 1 cup of vegetables, coarsely chop and set aside. Blend remaining soup until smooth (a hand blender works well for this)
  • Add cream and bring to a boil. Reduce heat and simmer uncovered until slightly thickened, about 5 minutes.
  • Remove from heat, stir in cheeses & chopped vegetables. Season to taste with salt & pepper.

1 quart half-and-half
1 quart chicken broth

1 1/2 cups fresh corn, roasted
3 cups shredded cheddar cheese

Steps:

  • In a 6 quart stockpot add butter, onion and celery and sauté without brown the mixture. Add in the flour and combine the mixture. Pour in the half and half and when the roux is thickening add in the chicken broth and stirring at all time. Add in the rest of the ingredients and stirring the mixture and broccoli and taste the soup and re-season to taste.
