- Preheat the oven to 400 degrees F (200 degrees C).
- Lay puff pastry on a lightly floured surface and roll out with a rolling pin. Brush with egg yolk. Sprinkle with sesame seeds and press in firmly. Cut puff pastry first into squares, then into triangles, and place on a baking sheet.
- Bake in the preheated oven until triangles are puffed up and golden brown, about 15 minutes.
- Meanwhile, melt butter in a pot over medium heat and cook onion until soft and translucent, about 5 minutes. Add salmon and cook for 5 minutes. Stir in tomato paste and cook for 1 minute. Pour in fish stock and white wine. Bring to a boil, reduce heat, and simmer for 15 minutes.
- Stir cornstarch and a little bit of water into a paste. Add to soup and bring to a boil. Cook until soup thickens, about 5 minutes. Puree soup with an immersion blender until smooth. Stir in cream and saffron. Season with salt and pepper.
- Garnish soup with dill and serve with puff pastry triangles.

- Cut out pieces of parchment paper (12x14-inches each - one per salmon fillet) In a small bowl, combine the soup, milk, onion, tarragon, and garlic powder until smooth. Set aside. Pat the salmon dry with a paper towel. In the center of each piece of parchment paper, place 1 cup of the broccoli. Top each with one salmon fillet and drizzle about 1/2 cup of the soup mixture over the top. Fold the parchment up over the ingredients starting with the short sides, folding the edges over several times to seal. Place in the microwave and cook on medium power for 8-10 minutes or until the fish is opaque. To cook in the oven, use aluminum foil or parchment. - Add the bacon to a medium skillet and cook over medium-high heat until crispy, about 10 minutes. Transfer the bacon to a plate with a slotted spoon; reserve.
- Discard all but 1 tablespoon of fat from the skillet and reduce the heat to medium. Add half the shallots and cook, stirring often, until translucent and softened, about 5 minutes. Add the corn and continue to cook, stirring often, until heated through and translucent, about 5 minutes. Remove from the heat and stir in the cream cheese and 1 teaspoon salt until combined. Let cool to room temperature, about 45 minutes.
- Meanwhile, add the herbs, lemon zest and remaining shallots to a food processor and pulse until finely chopped. Add the butter and 2 teaspoons salt and pulse until well combined; set aside.
- Prepare a grill for medium indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Set the salmon on a cutting board. Use a knife to score the salmon down the middle lengthwise, halfway through its thickness. Working from the center line out toward the edges, cut thin flaps from the score to the edge, like a gatefold, then open them up. Spread half the herb butter on the salmon and spoon the corn mixture down the middle. Sprinkle the bacon on top, then fold the sides of the salmon up to cover the filling. Tie the salmon together in 6 places with butcher's twine. Spread the remaining herb butter on top and sprinkle generously with salt.
- Stack 3 sheets of heavy-duty aluminum foil that are 6 inches longer than the salmon and spray the top layer generously with nonstick cooking spray. Transfer the salmon to the middle of the foil and crimp the sides so they form a rim.
- Transfer the salmon on the foil to the indirect-heat side of the grill and cook, covered, until the salmon is cooked through and the stuffing is hot, about 25 minutes (depending on your grill). Move the salmon to the direct-heat side for 5 minutes to crisp the skin. Using heatproof gloves, carefully transfer the foil with the salmon to a platter for serving. Serve with lemon wedges.
SMOKED SALMON AND CREAM CHEESE SOUP
This lightly-creamed soup is truly special. It works as comfort food for a casual soup & salad dinner or a starter course for an elegant dinner party. On our recent trip to the US, my SIL gave me the recipe. She said her mother had copied it from a cookbook & did not recall the source. I wish I knew who to acknowledge & thank for this classy taste sensation. I hope you try this & enjoy it as we did. - Melt butter in med-size stock pot over med heat. Add onion + garlic & saute till onions are soft, 10-15 minutes.
- Stir in dill, Old Bay Seasoning, tomatoes & smoked salmon. Cook 3 minutes. Then add flour & cook 1 min more.
- Gradually stir in water & heat to a soft boil. Reduce heat & simmer uncovered over med-low heat for 20 minutes.
- Stir in spinach & simmer 5 more minutes.
- Stir in cream cheese (1 oz at a time) over low heat, allowing ea bit to melt into the soup.
- When all the cream cheese has been added & the soup is smooth, stir in the vodka & lemon juice. Taste for seasonings & serve immediately.
- NOTES: I entered this recipe as given to me & made a half recipe w/2 chgs in my trial version.
- I left out the vodka (none in the house!), subbed dry white wine & frankly doubt I will ever use the vodka. I pd homage to a DH pers pref & subbed diced broccoli florets for the spinach. I pd homage to 1 of my own by adding 4 oz baby shrimp.
- Pers pref are often at the heart of any success a recipe enjoys. I found this soup in need of salt, but DH did not. He found the lemon juice a bit excessive, but I did not. Bottom line is tasting for your pers pref is advised.

- Heat water, potatoes, onions, salt, pepper and bay leaf to boiling in Dutch oven; reduce heat.
- Cover and simmer until potatoes are almost tender, about 10 minutes

- Remove bay leaf.

- Place a rack in the center of your oven and preheat oven to 425 degrees F. For easy clean up, line a large rimmed baking sheet with parchment paper.
- Heat 2 teaspoons of the oil in a medium non-stick skillet over medium-high heat. Add a big handful of spinach and cook, stirring often, until it begins to wilt. - In a large pot add your salmon scraps (yes heads and spines and stuff), onion, and fill with water. Bring to a boil and then down to a simmer for about 2 hour. As it is boiling, check it ever 20 minutes or so to scrape off the foam that rises to the top.
- After 2 hours the soup should be an orange-brown color. strain the contents of the pot. Save all the liquid in one bowl, and dump the scraps on a large cutting board or plate. Pick at the scraps by hand to remove any last good bits of meat.
- Place the liquid and the salvaged meat into another clean pot (I used my trusty Emile Henry dutch oven) and slowly bring up to heat. While this is going you can fire roast your red peppers for a few minutes to get them a nice char.
- Add the bell pepper to the soup along with the chives, then blend everything together with a stick blender. Don't worry if it doesn't get completely smooth, just blend as best you can. I put the immersion blender directly into the pot and just let it do its thing for a few minutes. Then add the heavy cream and stir it up. Season to taste.
