Making your own tasty tomato soup is so easy! This one's a simple classic.

Number Of Ingredients 9

2 carrots
2 sticks of celery
2 medium onions
2 cloves of garlic
olive oil
2 organic reduced-salt chicken or vegetable stock cubes
2 x 400 g tins of quality plum tomatoes
6 large ripe tomatoes
½ a bunch of fresh basil (15g)

Steps:

  • Peel and roughly slice the carrots, slice the celery, and peel and roughly chop the onions. Peel and slice the garlic.
  • Heat 2 tablespoons of oil in a large pan over a medium heat, add all the prepped ingredients, then cook with lid ajar for 10 to 15 minutes, or until softened.
  • Crumble the stock cubes into a jug, cover with1.5 litres of boiling water, and stir until dissolved.
  • Add the stock to the veg pan with tinned and fresh whole tomatoes, including the green stalks that may still be attached to some of them (these give an amazing flavour - trust me!).
  • Give it a good stir and bring to the boil, then reduce to a simmer for 10 minutes with the lid on. Meanwhile, pick your basil leaves.
  • Remove the pan from the heat. Season to taste with sea salt and black pepper, then stir through the basil leaves.
  • Using a stick blender or liquidizer, pulse the soup until smooth. Taste and check the seasoning, then serve.

This Jamie Oliver Vegetable Soup with Beans is the best vegetable soup I've ever made.

7 cups chicken or vegetable broth
1 can (15 ounces) diced tomatoes (optional)
2 teaspoons olive oil
2 carrots, peeled and sliced
2 celery stalks, peeled and sliced
2 medium onions, peeled and roughly chopped
2 garlic cloves, thinly sliced
1 can (14 to 15 ounces) cannellini beans
2 cups small broccoli florets
2 cups small cauliflower florets
7 cups spinach leaves (about 7 ounces)
2 large ripe tomatoes, roughly chopped
sea salt and freshly ground black pepper
extra virgin olive oil and freshly ground Parmesan for serving (optional)

Steps:

  • Put the broth and canned tomatoes, if using, in a saucepan and heat until boiling.
  • Meanwhile, Put a large deep soup pot on medium heat and add 2 teaspoons of olive oil. Add the carrots, celery, onions and garlic and stir them together with a wooden spoon. Place the lid on askew and cook them until the carrots have softened but are still holding their shape and the onion is lightly golden, about 10 minutes. (You'll want to give them a stir every so often so they don't begin to stick or burn.)
  • Add the boiling broth to the vegetables in the soup pot. Add the beans, broccoli, cauliflower and chopped fresh tomatoes. Stir and bring to a boil. Reduce the heat and simmer with the lid on for 10 minutes.
  • Add the spinach and cook for 30 seconds more, then remove pot from the heat.
  • If you like a thicker soup, take out half of it, give it a whirl in a blender and then stir it back into the pot. (Alternatively, give it a blitz with an immerstion/stick blender. Season to taste with salt and pepper.
  • Ladle into serving bowls and top with a drizzle of extra virgin olive oil and a sprinkle of Parmesan cheese, if desired.

1 medium onion, chopped
3/4 cup butter
1/2 cup all-purpose flour
3 cans (10-1/2 ounces each) condensed chicken broth, undiluted, or 4 cups chicken broth
2 cups milk
2 cups half-and-half cream
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
5 cups chopped leftover cooked mixed vegetables (such as broccoli, carrots and cauliflower)

Steps:

  • In a Dutch oven, saute onion in butter until tender. Add flour; stir until blended. Gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened. , Stir in the milk, cream, basil, salt, pepper and garlic powder. Add the vegetables; cook gently until heated through.

I had to post this as it is our favourite tomato soup recipe and it is not on the site. I do not add the cream/egg yolks and vinegar and I also use tinned organic tomatoes.

1 onion, peeled & finely chopped
1 garlic clove, peeled & finely chopped
1 carrot, peeled & coarsely grated
handful fresh basil, leaves picked from stalks olive oil
6 tablespoons double cream
1 teaspoon red wine vinegar
2 egg yolks
1 kg super ripe tomatoes
2 pints chicken stock or 2 pints vegetable stock
sea salt & freshly ground black pepper

Steps:

  • Put your onion, garlic, carrot and basil stalks into a large pot with a couple of lugs of olive oil. Cover the pan and simmer gently without colouring for 20 minutes, stirring every couple of minutes.
  • Whisk together the cream, vinegar and egg yolks in a small bowl and put to one side.
  • While the vegetables are simmering, drop the tomatoes into boiling water for 30 seconds, then remove the skins and roughly chop the flesh. Add these to the veg, then pour in the stock and simmer for a further 20 minutes with the lid on.
  • Leave to cool a little then puree the soup in a liquidiser.
  • Put back into pan, bring back to a simmer and season carefully with salt & pepper.
  • Just before serving whisk in the cream mixture, but do not let it return to the boil. Serve straight away sprinkled with a few torn up basil leaves.
