i love creamed spinach, and this is a way to dress it up a bit. from real simple magazine november 2005.

Number Of Ingredients: 11

Ingredients: unsalted butter,garlic clove,shallots,frozen spinach,cream cheese,heavy cream,whole milk,gruyere,kosher salt,black pepper,ground nutmeg


  1. heat oven to 375 degrees
  2. rub the sides and bottom of a buttered 8-inch baking dish with the garlic
  3. discard garlic
  4. in a skillet , over medium heat , melt the butter
  5. add the shallots and cook until softened , 5 to 7 minutes
  6. squeeze the spinach to remove any excess liquid
  7. in a large bowl , combine spinach , cream cheese , heavy cream , milk , gruyere or swiss cheese , salt , pepper , nutmeg and shallots
  8. transfer to dish
  9. bake , uncovered , until bubbling and lightly golden , about 25 minutes
