CREAMED CHIPPED BEEF RECIPE
Creamed Chipped Beef is also sometimes known as SOS by our military folks. It's a quick and easy addition to breakfast or any time of the day.

Steps:
- Cut the dried beef into thin strips.
- Place strips in a small bowl and cover with warm water.
- Soak the strips for 30 minutes, drain, discard the water.
- Place a skillet over Medium heat on your stove top.
- Add butter, let melt.
- Add the flour, stirring it in quickly until combined with butter.
- Add the milk, stirring quickly until fully combined and it starts to thicken.
- Add the Worcestershire sauce if desired.
- Add the black pepper.
- Add the strips of dried beef, stir until fully coated.
- Let simmer for about 2 minutes.
- Spoon over toast or biscuits.
- Enjoy!

- Melt the butter over medium high heat in a medium skillet with 2-3" high sides.
- Sprinkle the flour, black pepper and cayenne pepper over the flour and whisk until the flour is completely mixed with the butter and no dry bits remain.
- Cook, whisking constantly for one minute.
- Whisk in the milk and half and half and stir constantly until the mixture comes to a boil. Cook for one minute, again, stirring constantly so it doesn't burn or stick to the bottom of the skillet.
- Remove from heat and stir in the beef to mix well.
- Place a piece of toast on each plate and divide the creamed chipped beef over the toast. Sprinkle with parsley and serve.

This was always a favorite of my Dad's, as well as my brother. My Dad & my Father-in-Law were both in the Navy and this is how they ate it. Mmm... and it's so easy to make! Of course, when they were in the Navy it was made with just the dried salted beef & powdered milk! LOL

Steps:
- 1. In a large fry pan, saute the onions (if using) in butter until translucent. Add in the chipped beef and fry until edges just start to crisp slightly.
- 2. Sprinkle in the flour. Mix well. Add in the milk. Stir until it starts to thicken. If it's a bit too thick, you can thin it with a little more milk.
- 3. Meanwhile, get the toast ready on plates.
- 4. Season with salt & pepper in the pan, and you can put the pepper on the table and let everyone season a little more to their taste.
- 5. Ladle the SOS across two slices of toast on each plate. Enjoy!
CREAMED CHIPPED BEEF - S. O. S. (FOR BISCUITS OR TOAST)
This was a staple for my family when we had young kids because it was cheap, delicious and easy. These days the kids are all adults and not only do they love it, but all 4 generations in our house love it! We do tend to like things a bit saltier than a lot of folks, so because the beef is already a bit salty, you can leave out the bouillon and just add salt to your taste. Our favorite way to have this is over biscuits.

- Melt butter in medium size saucepan. Add beef and saute 1 to 2 minutes or until tender.
- Stir in flour until smooth and continue to cook for about 1 or 2 minutes more.
- Slowly stir in milk. Add chicken bouillon and bring to boil over medium heat, stirring occasionally. Boil and stir 1 - 5 minutes or until thickened.
- Add pepper and salt to taste.

- Cut the beef and onions very fine.
- Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
- Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.
- Gradually add the milk, continue stirring until the mixture boils, then turn the fire down and cook slowly.
- It should thicken enough to be a good gravy consistency.

- Chop the beef in to small bite-sized pieces, set aside. Heat butter in large pan over medium heat. Add the flour to the melted butter & whisk until well combined and cooked through, (about 45 seconds). Slowly add the milk while continually whisking. - Heat large skillet over Medium heat.
- Add butter and melt till foamy.
- Remove pan from heat and whisk in flour and continue stirring until no lumps are left.
- Return to heat and continue stirring about 5 minutes to remove raw flour taste.
- Slowly pour milk in while whisking.
- About a quart will do depending on how thick you like it.
- Continue stirring over heat until desired thickness.
- Add dried beef and heat through, Add pepper and serve HOT over Toast.
