THE SOLUTION TO CANNED SPINACH
My family loves this. It started out in Peg Bracken's "I Hate To Cook Book", but I didn't have any fresh onions one day, and I had everything else. It's easy and fast. Double or treble to serve however many you need to feed. It's always a success at holiday dinners. Leftovers reheat nicely if there's any left.

Steps:
- Wash the spinach in several changes of water to get rid of any grit. Drain the spinach but keep some of the water clinging to the leaves. Heat the butter and oil in a large skillet over medium-high heat and add the spinach and garlic. Cook, turning frequently, until the spinach has wilted down evenly. Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
- Heat the skillet again over medium-high heat and add the cream and nutmeg; cook until it reduces a bit, about 5 minutes. Add the spinach and parmesan and season with salt and pepper. Cook until the spinach is hot, about 5 more minutes. Serve immediately.
EASY CHEESY SPINACH
Steps:
- Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
- BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

- Keep it simple. Warmed-up canned spinach has a wonderfully simple, refreshing taste that is complemented well with one to two tablespoons of lemon juice or red wine vinegar per can and a sprinkling of bacon (or bacon bits, for the less culinarily-inclined).
- Add seasoning. Canned spinach on its own is quite yummy, but can easily be enhanced using basic spices and toppings. Popular toppings include garlic powder, dry mustard, chopped tomatoes, olives, feta cheese, crushed red pepper, and bacon bits.
- Mix it into pasta sauce. Canned spinach can very easily be blended into tomato sauce, or spread across lasagna sheets as a filling. Well complemented with tomatoes, basil, and ricotta, canned spinach can pretty much be incorporated into any tomato-and-pasta recipe.
- Cook it in butter with onions. Although it is little more decadent than your standard heart-healthy dish, it is still highly nutritious. Sauté a chopped onion with two tablespoons of butter until browned, then add spinach and cook through.
- Add it to meatballs and meatloaf. Add ½-1 can of canned spinach per pound of meat and mix with bread crumbs, veggies, and whatever other ingredients you usually add.
- Mix it into scrambled eggs or omelettes. Use one can to every four to five eggs and add some garlic or parmesan cheese if preferred. Season simply with salt and pepper and your eggs are now much more vitamin-rich!
- Make some spinach pies. Mix a can of spinach with three beaten eggs, some chopped onion, a cup of milk, some chopped bacon, and a few slices of provolone cheese and pour into pie shell and bake at 400 °F (204 °C) for 30-40 minutes.

- Add spinach. Saute for 2 to 4 minutes, until wilted. If the pan is too full to stir at first, cover it for a minute or two, which will let the spinach at the bottom wilt. Then you can start to stir in a folding motion.
- Add heavy cream, cream cheese, sea salt, black pepper, and Italian seasoning. Stir constantly until the cream cheese melts, then cook a few minutes until thickened.
