1 head cauliflower, cut into florets
1 (10.75 ounce) can condensed cream of chicken soup
1 cup mayonnaise
1 tablespoon lemon juice

Steps:

  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, recover, and steam until just tender, 2 to 6 minutes depending on thickness.
  • Cook and stir cream of chicken soup, mayonnaise, and lemon juice in a skillet over medium-high heat until heated through, about 10 minutes. Place cauliflower on a large plate and pour sauce over before serving.

¾ cup white sugar
⅓ cup all-purpose flour
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 ¼ teaspoons vanilla extract
1 (9 inch) baked pastry shell, cooled
4 bananas, sliced

Steps:

  • In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
  • Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
  • Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/2 cup light brown sugar
1/4 cup canola oil
2 large egg whites
1 1/2 cups bananas, puree
1/2 cup cauliflower, puree
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350°F Coat a 9X5 inch loaf pan, or 2 mini pans, with cooking spray.
  • In a bowl or a zipper lock bag, mix the flours with the baking soda, baking powder, salt, and cinnamon, if using. Set aside.
  • In a large mixing bowl, mix the sugar and oil with a wooden spoon until well combined. Mix in the egg whites, banana and cauliflower purees, and vanilla. Add the flour mixture and mix just until combined.
  • Pour the batter into the loaf pan. Bake until a toothpick inserted into the center comes out clean, 55 to 60 minutes for the larger loaf, 25 to 30 minutes for the mini loaves. Let cool on a rack for 5 minutes, then turn the bread out of the pan to cool before serving.

This creamed cauliflower is made with a basic seasoned white sauce. Jazz it up with some cheese, fresh herbs, or a buttery breadcrumb topping.

1 medium head cauliflower (or two 10-ounce packages frozen cauliflower florets)
1/4 teaspoon of salt (plus more, to taste)
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
Dash ground black pepper
Optional: dash cayenne pepper
Optional: dash of nutmeg

Steps:

  • Gather the ingredients.
  • Break the cauliflower into bite-sized florets.
  • Add water to a large saucepan to a depth of about 2 inches. Add about 1/4 teaspoon of salt, and bring the water to a boil.
  • Add the cauliflower florets to a steamer basket and place the basket in the pan. Cover and cook for 4 to 5 minutes, or until the cauliflower is just tender.
  • Drain the cauliflower and transfer to a serving bowl.
  • Melt the butter in a small (1-quart) saucepan over medium-low heat.
  • Whisk the flour into the butter until smooth and well blended. Continue cooking for 2 minutes, stirring constantly.
  • Gradually add the milk and continue cooking until smooth and thickened, stirring constantly.
  • Season to taste with salt, pepper, and cayenne or nutmeg (if using), and then pour over hot drained cauliflower. Gently mix to coat the florets.

1 tablespoon unsalted butter
3 bananas, peeled and coarsely chopped
6 tablespoons granulated white sugar
juice of 1/4 lemon
3 tablespoons Spanish Brandy
3 cups heavy cream
1 vanilla bean
8 egg yolks
12 teaspoons light brown sugar

Steps:

  • Preheat the oven to 300 degrees. Over medium heat, melt the butter in a saute pan. Add the bananas, and sprinkle with 1 tablespoon of white sugar. Stir well to blend the sugar and butter. Cook, stirring occasionally, for 5 minutes. The bananas should be lightly caramelized. Mash the bananas with the back of a wooden spoon. Add the lemon juice to the mixture, raise the heat to high, add the brandy, and boil for 1 minute. Remove from heat, divide among 6 wide, shallow creme brulee dishes, and let cool. Place the heavy cream in a saucepan. Split the vanilla bean lengthwise, and scrape the seeds into the cream with the tip of a knife. Add the scraped-out vanilla bean, and bring the cream just to a boil, then remove from heat. Reserve. Place the egg yolks and 5 tablespoons of white sugar in the top of a double boiler. Whisk them together, then stir over simmering water until the mixture becomes fairly thick (about 15 minutes). Strain the reserved cream into eggs, and stir the mixture over simmering water for 10 minutes. Remove from heat, and ladle over the cooled banana puree in the 6 dishes. Place the dishes in a roasting pan, and fill the pan with enough hot water to come halfway up the sides of the dishes. Bake in the oven for 40 minutes. Remove the dishes from the pan, and chill them for at least 3 hours.
  • When you are ready to serve, sprinkle 2 teaspoons of light brown sugar over each dish, distributing evenly. Place the dishes on a bed of cracked ice in a roasting pan, and position the pan under a broiler until the sugar caramelizes. Watch carefully, and move the dishes around so the sugar browns evenly but doesn't char. Remove and serve while the crust is still hot.

2 tsp vegetable or coconut oil
1 onion, finely chopped
2 cloves garlic, crushed
peeled and finely grated to make 1 tsp ginger
1 tsp black mustard seeds
1 tsp ground turmeric
2 tsp ground coriander
1 tsp ground cumin
400g tin light coconut milk
1 ripe banana, mashed
1 large cauliflower, cut into florets, stalk chopped and leaves separated
1 tsp cumin seeds
rice or rotis, to serve

Steps:

  • Heat half the oil in a deep, lidded frying pan and fry the onion with a pinch of salt for 5 minutes until soft. Stir in the garlic, ginger, mustard seeds, turmeric, coriander and ground cumin, and fry for another 2-3 minutes until fragrant. Stir in the coconut milk, half a tin of water and the mashed banana. Bubble for 5 minutes until the sauce starts to thicken slightly.
  • Stir in the cauliflower florets and stalk, then cover and simmer for 15-20 minutes, or until the cauliflower is tender.
  • Meanwhile, heat the grill to high. Toss the cauliflower leaves with the remaining oil, the cumin seeds and some seasoning on a baking tray. Grill for 10-15 minutes, or until the leaves are just charred at the edges and any thicker stems are tender.
  • Uncover the curry, season and bubble for 5 minutes more until thickened. Serve topped with the crispy cauliflower leaves, with rice or rotis on the side.

1 cup whole milk
⅓ cup sugar
1 tablespoon sour cream
¾ cup heavy whipping cream

Steps:

  • Combine bananas, milk, sugar and sour cream in a bowl. Use a hand mixer or immersion blender to fully incorporate all ingredients. Add heavy whipping cream and stir with a spoon until combined. Pour into 2 Ninja Creami pint containers. Freeze for 24 hours.
  • Following manufacturers instructions, insert pint container into outer bowl. Push 'Ice Cream' button. When done spinning, push 'Re-spin' button.
