HAM AND CHEESE STUFFED MEATLOAF
This is a quick and easy way to change up your favorite meatloaf recipe by stuffing it with ham and cheese!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ground beef, onion, croutons, eggs, garlic, Italian seasoning, Worcestershire sauce, and hot sauce in a bowl until well blended. Scoop half of the meat mixture into a 9x12-inch baking dish and flatten.
- Cut cheese widthwise into 10 rectangles. Wrap each piece of cheese with ham. Layer the ham and cheese rolls side by side on top of the beef mixture. Place remaining beef mixture on top and press down.
- Bake in the preheated oven until meatloaf is cooked through, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

CREAMED HAM IN TOAST CUPS
My grandmother taught me many of her recipes in show-and-cook sessions. Usually, we had this dish on Mondays, following a Sunday lunch of ham, peas and corn. These buttery cups are one of my favorite ways to use leftover ingredients.

- Remove and discard crusts from bread; using a rolling pin, flatten to 1/8-in. thickness. Butter both sides of each slice, using 1/4 cup of butter., Press into eight greased muffin cups or 6-oz. custard cups. Bake at 350° for 15-18 minutes or until golden brown. , Meanwhile, in a saucepan, melt the remaining butter. Stir in flour and pepper. Gradually stir in milk and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir in the ham, peas and corn. Cook and stir for 5 minutes or until heated through. Pour into warm toast cups; sprinkle with paprika.

HAM IN CREAM SAUCE
Very tasty recipe that can be served over English muffins, toast, noodles or rice. Found in the cookbook The Church Supper Cookbook.

Steps:
- Melt 4 tablespoons butter in saucepan. Add garlic and saute for 1-2 minutes. Add flour, blending well.
- Add milk, stirring well and cooking over medium heat until thickened.
- Add nutmeg, salt and pepper to taste. Remove from heat.
- Cook ham in 2 teaspoons butter for about 10 minutes, stirring and then add chives. Cook gently 3-4 more minutes.
- Add sherry and heat through. Combine ham with cream sauce and serve.
- Serve over English muffins, rice or noodles.

MEATLOAF QUESADILLAS WITH CILANTRO CREAM

- Make the cilantro cream: Puree the sour cream, cilantro, lime juice and hot sauce in a blender until smooth.
- Prepare the quesadillas: Mix the meatloaf, beans, scallion, cumin, cayenne, and salt and black pepper to taste in a bowl.
- Melt 1/2 tablespoon butter in a large nonstick skillet over medium-high heat. Place a tortilla in the pan, sprinkle with 1/4 cup cheese, then top with one-quarter of the meat mixture and another 1/4 cup cheese. Top with another tortilla and cook until golden, about 2 minutes per side. Repeat with the remaining butter, tortillas and filling. Cut the quesadillas into wedges and serve with the cilantro cream.
- Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
- Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
- Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
- Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.
CREAMED HAM (OR TURKEY)
Creamed Ham (or turkey) is the perfect way to use leftover ham or turkey after a big holiday meal! EASY to make, with just 5 ingredients, this delicious meal can be on your table in no time!

- Melt butter in a medium sized pot over medium heat.
- Slowly add flour, whisking constantly to make a smooth mixture. Cook the mixture for about a minute, whisking constantly.
- Gradually add milk, whisking during every addition. Mixture will initially seize up but as you add more milk it will start to loosen.
- Slowly the mixture will become more liquid. Continue to whisk it very well in order to avoid lumps. Add milk a few tablespoons at a time, whisking as you add it, until it's all incorporated.
- Initially the mixture will be thin. Stir with a wooden spoon, scraping the bottom of the pot, until it thickens. Depending on the temperature of the burner this could take 5-15 minutes.
- The sauce will be done not long after it starts to slightly boil and thicken. Stir in chopped ham (or turkey).
- Season with salt, starting with 1/2 teaspoon and adding more to taste, depending on the saltiness of your ham or turkey. I often use about 1 teaspoon in total.
- Serve over mashed potatoes, with vegetables on the side.Enjoy! :)

CREAMED HAM WITH PEAS
Steps:
- Slice the green onions, keeping the white and light green parts separate from the dark green.
- Heat the butter in a saucepan over medium-low heat. Add the green onion (white and light green) and minced parsley and cook for 1 minute. Stir in the flour until smooth and bubbly. Cook, stirring, for 2 minutes.
- Gradually add the milk and heavy cream. Cook, stirring, until thickened.
- Stir in diced ham and cooked peas, along with salt and pepper to taste.
- Garnish with the remaining sliced green onions (dark green) and Parmesan cheese, if desired.
- Serve the creamed ham over rice, grits, toast points , or biscuits .

- Sautee onions in butter over medium heat until onions are transparent.
- Add flour and stir until well combined.
- Remove pan from heat and add milk slowly while stirring.
- Return pan to medium high heat, stirring until sauce thickens, reduce heat to low, stir in cheese until melted.
- Add sherry and ham (add more milk if sauce gets too thick) and simmer until ham is heated through.
- Add garnish, before serving.
