CREAM PEAS
In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

Steps:
- In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.
- In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

CREAMED PEAS
"I can still taste these wonderful peas in Mama's delicious white sauce. Our food was pretty plain during the week, so I thought this white sauce made the peas 'extra fancy' and fitting for a Sunday meal."

- Cook peas according to package directions. Meanwhile, in a small saucepan, melt the butter. Stir in the flour, salt and pepper until blended; gradually add milk and sugar. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain peas; stir into the sauce and heat through.

SICILIAN LASAGNA
Sicilian lasagna has several layers of deliciousness combining meat ragu with peas, creamy bechamel sauce, mozzarella and chopped hard-boiled eggs. All perfectly balanced to create the perfect lasagna!

Steps:
- In a large skillet or sauce pan, sauté a finely diced onion, carrot, celery stalk and a pinch of salt until golden, about 10 minutes.
- Stir in minced garlic cloves and red pepper flakes (optional) and cook for 1 minute. Stir in ground meat trio (beef, veal and pork) and cook, stirring and breaking up the pieces with a wooden spoon, until no longer pink, about 5 minutes.
- Deglaze with red wine and cook until it evaporates. Pour in 1 jar of tomato passata. Pour 2 cups of water or chicken stock in the bottle, swirl it around to gather up all the sauce and pour back into the pan.
- Add bay leaves, salt and pepper, to taste. Bring to a boil, then lower to a simmer and cook partially covered about 1 hour.
- Stir in green peas and cook for an additional 15 minutes. Adjust seasoning if needed.
- While the sauce is simmering prepare the bechamel sauce.
- Melt butter in a small sauce pan on medium heat. Do not allow it to brown.
- Whisk in flour until it forms a thick paste. Slowly whisk in milk and stir.
- Bring to a boil, stirring constantly, until the mixture thickens. Remove from heat and add a pinch of nutmeg and salt, to taste. Set aside
- Hard boil 3 eggs. Let cool, peel and chop coarsely. Set aside in a bowl.
- Cut mozzarella into cubes or grate it if you prefer.
- Grate Parmigiano cheese.
- Preheat oven to 350 degrees F.
- In a rectangular lasagna pan: ladle enough sauce to cover the bottom of the pan. Arrange sheets of lasagna over the sauce, breaking pieces if necessary to cover the entire surface.
- Cover the lasagna sheets with ragu with peas. I add approximately 2 ladlefuls to each layer.
- Drizzle bechamel sauce over the ragu with a spoon. Evenly sprinkle with cubed mozzarella, chopped hard-boiled eggs and a spoonful of grated Parmigiano cheese.
- Repeat with 3 more layers of pasta adding hard-boiled eggs to each layer except the top layer.
- Cover tightly with foil and bake for 45 minutes. Uncover and broil for a minute or two until the mozzarella is golden brown and bubbling. Serve hot.

CREAMED PEAS WITH CRISPY SHALLOTS

- In a large saucepan over medium-high heat, add the butter. Add the red pepper flakes and garlic and cook until garlic begins to brown, about 1 to 2 minutes. Stir in the onions and cook for an additional 1 to 2 minutes to soften. Add the flour and cook for 1 minute while stirring to form a pasty roux. Whisk in the milk and bring to a simmer being sure to remove all of the lumps. Add the peas, Parmesan, chicken bouillon, salt, and pepper. Cook for 2 to 3 minutes. Remove from heat and ladle the mixture into a serving bowl. Serve garnished with crispy shallots.
- Put the flour, salt, pepper and paprika in a medium-sized mixing bowl. Toss shallots into the flour to evenly coat. Put the shallots into a mesh strainer and shake off the excess flour.
- In a medium-sized saute pan over medium-high heat, add the olive oil. Heat the oil until almost smoking and add the shallots. Cook stirring frequently until the shallots begin to brown, about 2 to 3 minutes. Remove the shallots from the pan onto a paper towel lined platter. Season with salt, to taste.
LASAGNA OF SUMMER TRUFFLES WITH GARDEN PEAS
Steps:
- To make the lasagna pasta. In a large bowl, mix the flour with the egg, 3 tablespoons olive oil and 2 pinches of salt. Mix until dough is firm and shiny, then wrap it in plastic wrap. Let rest in the refrigerator for as long as 6 hours.
- Brush and peel the truffle, and cut into 6 very fine slices and put aside for lasagna. Cut what's left in very small cubes. In a small saucepan, heat the butter on low heat, add the cubed truffles and sweat. Add the port and reduce slightly. Then add the cream, season with salt and pepper, and let it reduce to half. Set aside.
- In a medium pot of boiling salted water, cook the peas for 2 to 4 minutes, drain, and blend in food processor. Cook the extra peas and hold aside for garnish. Season with salt and pepper, and drizzle with 5 tablespoons of olive oil. Keep warm and set aside.
- To lasagna noodles. Divide the dough in 3 pieces, work with 1 piece, keep the remaining covered with a dish towel. Using a rolling pin or pasta machine, work 1 part of the dough as thin as possible, then cut a rectangular piece of about 12 by 5-inch. On one long side half of this rectangular piece, lay the 6 slices of truffles evenly then fold the other half over it and roll it again until almost transparent. Then cut in 6 rectangular sheets 2 by 2 1/2-inch, making sure the truffles sit roughly in the middle. Repeat this operation twice with the 2 other pieces of dough, without the truffles.
- Bring a large pot of salted water to a boil and add a little olive oil. Cook 1 piece of noodle to test the time which should be about 3 to 4 minutes. Cook the remaining lasagna. Drain and put aside in a bowl and coat with some olive oil.
- To serve, place 1 sheet of plain lasagna on each plate, then spoon on the warm pea puree. Repeat this with 2 more sheets of lasagna, ending with the truffle sheet on top. Spoon some of the truffle cream on top. Garnish with a few peas and summer truffle shavings. Drizzle any left over cream around the lasagna. Serve immediately.

- Melt the butter in a large saute pan over medium-high heat. Once melted and foamy, add the onion, garlic, and red pepper flakes and saute until tender, about 2 to 3 minutes. Season with salt and pepper. Add the heavy cream and let thicken, stirring for just 1 minute.
- Add the peas and the mint and cook until the peas are bright green and warmed through, another 5 minutes.

- Heat oven to 350°F.
- Brown meat with onions in large skillet; drain. Stir in pasta sauce and water; set aside. Mix cream cheese spread and milk in medium bowl until blended. Add ricotta, 1 cup mozzarella and Italian seasoning; mix well.
- Spread 1/2 cup meat sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 6 noodle pieces, half the cream cheese mixture and 1 cup of the remaining meat sauce. Repeat layers. Top with remaining noodles and meat sauce; cover.
- Bake 45 min. or until heated through. Sprinkle with remaining mozzarella and Parmesan. Bake, uncovered, 5 min. or until mozzarella is melted. Let stand 10 min. before serving.

CREAMY BEEF LASAGNA

- In a skillet, cook beef over medium heat until no longer pink; drain. Stir in tomato sauce, onion, sugar, salt, Worcestershire sauce and garlic salt. In a bowl, beat cream cheese, sour cream and milk until smooth. , In a greased 13x9-in. baking dish, layer a fourth of the meat sauce, six noodles and a third of cream cheese mixture. Repeat layers twice. Top with remaining meat sauce. , Cover and bake at 350° for 40 minutes. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted. Let stand 15 minutes before cutting. Sprinkle with parsley.
