Steps:

  • Add all ingredients to your blender. Blend until smooth
  • Pour the orange cream mixture into the popsicle molds. Add your popsicle sticks and freeze.
  • Once frozen run the molds under hot water to loosen the creamsicles and enjoy!!

1/2 cup orange juice
2 mandarin oranges (peeled)
3 tablespoons white sugar
1 cup heavy whipping cream
1 teaspoon vanilla

Steps:

  • Add oranges, orange juice and sugar to a food processor and process for 20 seconds. Add vanilla and whipping cream and process for 60 seconds. If mixture is thick, but not stiff, it's ready. If it's still quite runny, process for another 60 seconds.
  • Spoon into mold and freeze 4-6 hours or overnight. Remove from freezer and let set on the counter for 2-5 minutes and remove from the mold. If necessary, run the mold under hot water for about 30 seconds to loosen the popsicles.

3 tablespoons agave
1/2 teaspoon vanilla extract

Steps:

  • Toss all the ingredients in a blender and blend for a few seconds to combine. Alternatively, you could just whisk the ingredients together in a bowl, but I like the blender because it makes it easy to the pour mixture straight into the popsicle molds.
  • Pour the mixture into the popsicle molds and insert the popsicle sticker. Freeze for about 4 hours or until ready to serve. Run warm water over the mold to help release a popsicle when you are ready to enjoy your frosty treat.

90 (3 sleeves) buttery crackers (I use Ritz Crackers)
1/2 cup powdered sugar
3/4 cup (1 1/2 sticks) butter, melted
1 (12 ounce) can frozen orange juice concentrate, thawed
1 (14 ounce) can sweetened condensed milk
1/2 teaspoon vanilla extract
pinch of salt
1 (8 ounce) container whipped topping, thawed

Steps:

  • Lightly grease bottom of pie dish with cooking spray
  • In a food processor, add crackers and powdered sugar. Pulse until you have fine crumbs.
  • Using a medium bowl, combine melted butter and cracker crumbs. Mix until well combined. Test crust mixture to make sure it will hold together: using your fingers, pinch the mixture together, if it clumps together, it's done, if doesn't hold together, add ½ -1 tablespoon more melted butter at a time until mixture holds together. Set aside about 3/4 - 1 cup of crust for topping.
  • Press remaining crust mixture into the pie dish and set aside.
  • Using a large mixing bowl, combine orange juice concentrate, sweetened condensed milk, vanilla, salt and stir until combined.
  • Add whipped topping and stir until smooth.
  • Pour the mixture over the crust. (depending on the size of your pie dish, you may have extra mixture. Set it aside and use for parfaits or a dip)
  • Top with reserved cracker crust crumbs by sprinkling over top of pie.
  • Place pie in freezer to set for at least 4 hours (overnight is even better), before serving. Store leftover dessert covered in the freezer.

  • In a bowl, combine cracker crumbs and sugar; stir in butter. Set aside 2 cups for topping. Press remaining crumb mixture into two greased 15x10x1-in. pans. Cover and freeze for at least 10 minutes., In a large bowl, combine ice cream and orange juice concentrate until smooth. Spoon over crusts (pans will be full). Freeze for 10 minutes or until partially firm., Sprinkle with reserved crumb mixture; gently press down. Cover and freeze for up to 2 months. Remove from the freezer 15 minutes before serving.

I also included variations including different fruit, like PEACHES & CREAM, STRAWBERRIES & CREAM, etc. I tried for years to figure out this recipe, beginning at around age 12! I finally got it one day at age 25 and now my 11 year old daughter whips them up for herself and friends after school or for breakfast.

1 cup water
2 tablespoons powdered coffee creamer
1/2 cup sugar
14 -16 full sized ice cubes
1 teaspoon vanilla extract
1 peeled orange, for extra flavor (optional)

Steps:

  • Add all ingredients into blender and blend on high until no ice chunks are left.
  • (My blender makes a god-awful racket, then sound changes once no ice chunks are left) Makes about (2) tall glasses.
  • *I don't recommend replacing the powdered creamer with milk, as the acid in the orange juice will curdle the milk!
  • Powdered milk may be used in emergency!
  • **STRAWBERRIES& CREAM VERSION: Replace orange juice with strawberries (or even any kind of berry).
