EASY CREAMY SALAD DRESSING
This is a super-simple salad dressing with cream and white balsamic vinegar. It tastes great with all sorts of leafy greens. I use sunflower oil or any other plain oil. Olive oil has too strong a taste.

CREAMY COLESLAW DRESSING
Coleslaw is one of my all-time favorite foods if it has a nice, creamy dressing. After doing some research, making dozens of different dressings, and trying to find the flavor that I like, I came up with this dressing for coleslaw that became a hit. I'm always asked for this recipe. What surprised me was at a potluck when a culinary chef asked me for my recipe. He told me that it was one of the best he had ever tasted since he had left the southern part of the USA.

- Whisk vinegar, Parmesan, shallot, garlic, oregano and pepper flakes in small bowl. Microwave until cheese is melted (vinegar will look cloudy) and mixture is fragrant, about 30 seconds. Let cool.
- Process mayo, sour cream, basil, and vinegar mixture in food processor until smooth. With motor running, slowly add oil until incorporated, about 1 minute. Season with salt and pepper. Serve. (Dressing can be refrigerated in airtight container for 4 days.).

CLASSIC RANCH DRESSING
The original dressing served in the 1950s at Hidden Valley Ranch, a guest ranch near Santa Barbara, Calif., was made mostly from dry herbs and aromatics. To recreate that taste, this recipe is made with garlic powder instead of garlic, dried parsley instead of fresh, and so on. It makes enough seasoning mix for about 4 cups dressing; you can mix it, store it, then add dairy as needed. If you don't like the zip of mustard, try hot sauce or Worcestershire sauce instead - or simply omit for a milder taste. To make a thick dip instead of a pourable dressing, reduce the amount of buttermilk to 1/4 cup.
