CRANBERRY SAUCE EXTRAORDINAIRE
This has been a 'trade secret' for years, but it's so good I decided to share it! It's everyone's favorite, and can even be poured over a block of cream cheese and served with crackers for a fun holiday appetizer.

Steps:
- In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

WORLD'S BEST CRANBERRY SAUCE
Your Thanksgiving table is not complete without this Cranberry Sauce made from scratch in just 20 minutes. Fresh or frozen cranberries, a hint of nutmeg, lots of orange juice and zest and a bit of vanilla complete this incredible cranberry sauce.

- Assemble the sauce: Add all the ingredients to a smaller pot and stir to combine. Turn the heat to a medium-high and bring to a boil, stirring occasionally.
- Finish the sauce: Reduce the heat to a medium and continue cooking for about 10 minutes, stirring occasionally. You will notice the cranberries will burst as they cook.
- Cool and serve: Let cool completely at room temperature before serving.

CREAMY, RICH, AND DECADENT CRANBERRY SAUCE
This recipe comes from Chef Paul Prudhomme's Louisiana Kitchen cookbook. This is such a wonderful flavor, I had to share it. The sauce is good anytime, not just at Thanksgiving!

Steps:
- In a 4-quart saucepan, combine the cranberries, water and sugar.
- Bring to a boil over high heat, and continue boiling until thickened, about 30-35 minutes, stirring occasionally.
- Toward the end of the cooking time, use a potato masher to mash all of the berries.
- Reduce the heat to low and add the butter and salt; simmer until butter melts, stirring occasionally.
- Remove from heat and stir in the vanilla.
- Cool to room temperature.
- Just before serving, fold in the sour cream and mix well.
HOLIDAY CRANBERRY-ORANGE CRUNCH
Cranberry Crunch is a wonderful bar cookie. I prefer to make mine with homemade cranberry relish, but you can make this with a store-bought version.

- Gather the ingredients.
- Early in the day, cut unpeeled oranges into quarters.
- Remove seeds.
- Put oranges and cranberries into a food processor .
- While processing, add sugar.
- Place in the refrigerator until an hour before you plan to make this bar cookie.
- Gather the ingredients.
- Preheat the oven to 350 F.
- Grease an eight-inch square baking pan.
- In a bowl, mix together the oats, flour and brown sugar. Cut in the butter until nice and crumbly.
- Place half of this mixture in the prepared pan.
- Carefully spread with the bottom crust with 1 cup* of cranberry relish**.
- Top the cranberry layer with the remaining crumb mixture.
- Bake this cranberry crunch for 45 minutes.
- Serve this tasty treat warm topped with ice cream.

- Put all but 1 cup cranberries in a saucepan. Remove wide strips of zest from 1 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1/2 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
- Stir in the remaining 1 cup cranberries; cook until softened, 3 to 4 minutes. Remove from the heat and let cool; remove the orange zest. Transfer to a serving dish and refrigerate at least 3 hours.

- Put the cranberries, orange juice, brown sugar, granulated sugar and whiskey in a large saucepan and bring to a gentle boil over medium-high heat. Reduce the heat to low and simmer for 15 minutes.
