  1. vegetable oil
  2. boneless skinless chicken breast
  3. onion
  4. garlic cloves
  5. fresh mushrooms
  6. low-fat alfredo sauce
  7. roasted red pepper
  8. great northern beans
  9. reduced-sodium chicken broth
  10. pesto sauce


  1. in a nonstick dutch oven , heat oil over medium-high heat
  2. saute chicken 2 minutes , then reduce heat to medium
  3. add onion , garlic and mushrooms and saute 2 minutes
  4. add alfredo sauce , red peppers , beans , and chicken broth
  5. cover and simmer over low heat 10 minutes
  6. to serve , spoon chowder into soup bowls
  7. top each serving with a small dollop of pesto , if desired
