Creamy Lentil Bacon Topped Soup Recipe

  1. bacon
  2. leeks
  3. onion
  4. chicken broth
  5. baking potatoes
  6. dried lentils
  7. carrot
  8. salt
  9. half-and-half
  10. dry sherry


  1. cook bacon in a dutch oven over medium heat until crisp
  2. remove bacon from pan , reserving drippings in pan
  3. crumble bacon
  4. set aside
  5. ad leek and onion to pan
  6. saute 4 minutes
  7. add broth , potato , lentils , carrot , and salt
  8. bring to a boil
  9. cover , reduce heat and simmer 1 hour or until vegetables are tender
  10. place vegetable mixture in blender or food processor
  11. process until smooth
  12. return pureed mixture to pan
  13. stir in half and half and sherry
  14. cook until thoroughly heated
  15. sprinkle with bacon
