Creamy Pumpkin And Butternut Squash Soup Recipe

  1. onions
  2. butter
  3. olive oil
  4. pumpkin
  5. butternut squash
  6. chicken broth
  7. salt
  8. pepper
  9. half-and-half
  10. crouton


  1. in a large saucepan over medium-low heat , saut onions in butter and oil for 10 minutes
  2. add pumpkin , squash , broth or stock , 2 teaspoons salt and pepper
  3. cover and simmer for 20 minutes until squash is very tender
  4. process mixture until smooth with a hand blender or in a food processor
  5. add half-and-half and reheat slowly over low heat: add remaining salt to taste
  6. top servings with gruyere cheese and croutons , if desired
