3 cups chicken broth
2 pounds yams, diced
1 medium onion, chopped
1 tablespoon curry powder
¼ teaspoon black pepper
½ teaspoon salt
½ cup uncooked wild rice
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Pour chicken broth into a saucepan, with curry powder, salt, pepper, onion powder and garlic powder. Bring to a boil over medium heat. Add yam and onion, and simmer for about 20 minutes. Add rice, and cook for another 20 minutes, or until rice is tender.

"My garden produced a bumper crop of sweet potatoes and I created this soup to help use them up," says Kathy Rairigh from Milford, Indiana. You'll love the creamy texture and flavors of garlic and thyme.

1 whole garlic bulb
3 teaspoons olive oil, divided
2-1/2 pounds sweet potatoes (about 4 large), peeled and cut into 1/2-inch slices
2 large onions, cut into wedges
6 cups reduced-sodium chicken broth, divided
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove papery outer skin from garlic bulb (do not peel or separate cloves). Cut top off bulb; brush with 1/2 teaspoon oil. Wrap in heavy-duty foil., Place sweet potatoes and onions in a 15x10x1-in. baking pan coated with cooking spray. Drizzle with remaining oil; toss to coat. , Bake garlic and vegetables at 425° for 30-35 minutes or until tender. Cool for 10-15 minutes., Place 1-1/2 cups broth, parsley, thyme, salt and pepper in a blender. Squeeze softened garlic into mixture; cover and process until smooth. Transfer to a large saucepan. , In batches, process the sweet potatoes, onions and remaining broth until smooth; add to garlic mixture. Cook, stirring occasionally, until heated through.

1 large yam, peeled and cut into 1/4 inch thick slices
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet or shallow baking dish with aluminum foil.
  • Arrange slices of potato in the prepared pan so they are overlapping slightly. Season with salt and pepper and then drizzle olive oil over them as evenly as possible.
  • Bake in the preheated oven until potatoes are tender and have begun to wrinkle around the edges, about 30 minutes.

3 lbs yams, peeled and cut into 1 inch cubes (sweet potatoes)
1 tablespoon olive oil, plus another
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/4 teaspoon cayenne pepper
1 cup onion, chopped
2 garlic cloves, minced
6 cups chicken broth
1 cup whipping cream

Steps:

  • grease a baking sheet. Preheat oven to 375°F.
  • combine yam, 1 tbsp oil, cumin, salt, pepper and cayenne pepper on prepared baking sheet.
  • (I mixed everything together in a ziploc bag then put on baking sheet).
  • Roast in Pre-heated oven, stirring occasionally, for about 50 minute or until softened and lightly browned.
  • Heat extra oil in a large pot or dutch oven over med-high heat.
  • Add onion and cook, stirring occasionally, for about 10 minute or until onion is softened and browned.
  • (browning the onion helps to give the soup its flavour).
  • Add garlic and cook for about 2 minutes until fragrant.
  • Add roasted yams and broth and stir. Process in a blender in 3 to 4 batches until smooth.
  • (I used a hand held blender and pureed directly in the pot).
  • Return mixture to same pot and bring to a boil, then reduce to med-low.
  • Add cream and stir until well combined and hot. season with extra salt and pepper if desired.
  • TIP: Soup can be made 1-3 days ahead and stored in a sealed container in the refrigerator.
  • To reheat, place in a large pot or dutch oven and stir over med. heat until hot.

2 heads garlic
1 teaspoon extra virgin olive oil
1/4 cup vegan margarine
2 cups diced onions
3/4 cup diced carrot
1/2 cup diced celery
4 lbs butternut squash, seeded, peeled, and roughly chopped
6 cups vegetable broth
2 tablespoons freshly chopped sage
1/2 cup plain soymilk
sea salt
white pepper, to taste

Steps:

  • Preheat the oven to 350°F.
  • Cut the garlic heads in half crosswise. Rub the cut surfaces with the olive oil and put back together. Wrap in foil and bake for 30 to 40 minutes, or until tender. Remove from the oven and let cool.
  • Meanwhile, melt the margarine in a large pot over medium heat.
  • Sauté the onions, carrots, and celery until the onions are translucent. Add the squash, broth, and sage. Bring to a boil and reduce the heat to medium-low. Simmer for 25 minutes, or until the squash is tender.
  • Once the garlic has cooled, remove and mash the cloves. Stir into the soup.
  • Purée the soup in a blender or food processor in batches until smooth.
  • Return to the pot and stir in the soy milk.
  • Season with the salt and pepper.
