Creamy Spinach Mushroom Risotto Recipe

Ingredients:

  1. butter
  2. sliced mushrooms
  3. onion
  4. water', "zatarain's yellow rice", 'heavy cream
  5. monterey jack cheese
  6. baby spinach leaves

Steps:

  1. melt butter in medium saucepan on medium-high heat
  2. add mushrooms and onion
  3. cook and stir 2 minutes or until onion begins to soften
  4. stir in water and rice mix
  5. bring to boil , stirring occasionally
  6. reduce heat to low
  7. cover and simmer 20 minutes
  8. stir in cream and cheese
  9. cover and cook 5 minutes longer or until rice is tender
  10. stir in spinach
  11. remove from heat
  12. let stand 5 minutes
  13. fluff with fork before serving
