Green Beans with Mushrooms image

This is a tried-and-true favorite! After I first tried this recipe, my family liked it so much they requested it at least once a week! Luckily, it's easy to prepare.

2 cloves garlic, minced
1/4 pound small, fresh mushrooms, trimmed and sliced
1 tablespoon butter
1 medium red onion, cut in thin strips
1 pound fresh green beans, trimmed
Fresh ground pepper
1 teaspoon dill weed
2 tablespoons toasted almonds or pine nuts

Steps:

  • Saute garlic and mushrooms in butter until tender. Stir in onions; set aside. Steam or cook beans in small amount of water until tender-crisp; drain. Combine beans and mushroom mixture; add pepper and dill weed. Garnish with nuts. Serve immediately.

Creamy String Beans and Mushrooms image

I thoroughly enjoy young, fresh string beans. They are best when used within 3 to 7 days after picking, but best when freshly picked. I also love mushrooms and combined them with the string beans to make a tasty meal combination. Many years ago, we grew different varieties of beans and my mother cooked them in different ways.

36 fresh green string beans
1 teaspoon granulated sugar
3/4 teaspoon salt
4 tablespoons butter
6 medium fresh button mushrooms, sliced
1/2 teaspoon seasoning salt
3/4 teaspoon granulated garlic powder
1/4 teaspoon black pepper
1/2 cup whipping cream

Steps:

  • Rinse the string beans in cold water, then snip off both ends and discard.
  • To a large frying pan, add the prepared beans, cover with hot water and bring to boil.
  • Add sugar and salt, reduce heat to simmer, cover the frying pan and cook the beans for about 10 minutes or until they are just slightly tender.
  • When done, drain well and set aside.
  • In the same frying pan on medium-high heat, melt butter, add the beans, sliced mushrooms, seasoning salt, garlic powder, black pepper and stir well.
  • Cook uncovered for 8 to 10 minutes or until the mushrooms are almost tender; stirring freqently.
  • Stir in the whipping cream and continue to cook on medium-high heat for 3 to 4 minutes or until the cream starts to thicken to form a nice creamy sauce; stir freqently.
  • Serve immediately with your dinner meal.
  • Small nugget potatoes boiled with some mint leaves are an excellent side dish.
  • Use beans that are 4 to 5 inches long.

1 (14.5 ounce) can green beans (such as Del Monte®)
1 (4 ounce) can sliced mushrooms, drained
1 ½ tablespoons butter
1 ½ tablespoons cream cheese, softened
salt and cracked black pepper to taste

Steps:

  • Drain most of the water from the green beans. Place beans in a saucepan over medium heat and bring to a boil. Reduce heat and simmer for 5 minutes. Add mushrooms and simmer an additional 5 minutes.
  • Add butter and cream cheese. Stir until melted and well incorporated, 3 to 5 minutes. Season with salt and pepper.

2 lb fresh green beans, trimmed
2 Tbsp butter
8 oz white mushrooms, quartered
2 shallots, chopped
2/3 cup light cream
5.2 oz (of 8 oz. pkg.) Philadelphia Garlic and Herb Cream Cheese
2 Tbsp grated Kraft Parmesan Cheese
1 Tbsp chopped fresh thyme
1/4 tsp pepper
1 cup canned French-fried onions (or more to your liking)

Steps:

  • In large pot of boiling, salted water over medium-high heat, cook green beans just until tender, 5 minutes. Drain.
  • In large skillet, melt butter over med-high heat. Add mushrooms and shallots, cook, stirring occasionally, until soft and golden. Stir in beans, remove from heat.
  • In microwave-safe bowl, microwave light cream and Philly Garlic and Herb Cream Cheese on high in 30-second intervals, stirring until smooth. Stir in parmesan cheese, thyme and pepper. Transfer bean mix to serving bowl, Top with cheese mix, Sprinkle with onions.
