1 can (10 ¾ oz.) condensed cream of mushroom soup;
1 can (10 ¾ oz.) condensed cream of chicken soup;
1 cup sour cream;
1 can (8 oz.) mushrooms (stems and pieces), drained;
½ cup water;
½ tsp onion powder;
1 tsp chives, chopped;
½ tsp paprika;
½ tsp salt;
½ tsp pepper.

Steps:

  • Preheat oven to 350°F.
  • Place the chicken breasts on a lightly greased with non-stick cooking spray 9x13 inches baking pan, sprinkle with salt and pepper.
  • In a bowl, mix together the cream of mushroom soup, cream of chicken soup, sour cream, mushrooms, water, onion powder, and chives. Then, spoon this mixture over chicken breasts in baking pan and sprinkle with paprika.
  • Bake in the preheated oven for one hour or until chicken breasts are ready and cream mixture is lightly browned. Check the readiness of chicken breasts with a cooking thermometer (the safe internal temperature for cooked chicken is 165°F). Enjoy with your favorite side dish.

I ususally double the complete sauce recipe and make 9-10 breasts, I bake it in a large shallow roasting pan. You can make this using skin-on chicken pieces in place of the chicken breasts.

5 -6 boneless skinless chicken breasts
seasoning salt (or use white salt)
1 tablespoon butter
2 tablespoons oil
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 cup sour cream
4 ounces cream cheese (very soft)
1 -2 tablespoon fresh minced garlic (or to taste)
1 small onion, finely chopped
2 large green onions, chopped
1/4 cup parmesan cheese
1 cup grated cheddar cheese
1/2 teaspoon black pepper (or to taste)
parmesan cheese, for top (optional)
cooked rice

Steps:

  • Set oven to 350 degrees.
  • Lightly grease a 13 x 9-inch baking dish.
  • Heat oil in a skillet and brown the chicken on both sides (seasoning with season salt and pepper while browning) place the chicken into the baking dish.
  • In a large bowl mix together cream of chicken soup, sour cream, soft cream cheese, garlic, onion, green onions, Parmesan cheese, cheddar cheese and black pepper until well combined.
  • Season with salt if desired.
  • Pour over the chicken in the baking dish and turn the chicken to coat with the sauce.
  • Sprinkle with more grated Parmesan cheese if desired.
  • Bake for about 40-45 minutes, or until the chicken is cooked.
  • Serve over cooked rice.

It's a great base for the chicken and creamy sauce.

3 skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper, or more to taste
2 tablespoons olive oil
1 medium white onion, chopped
2 tablespoons chopped fresh parsley
1 teaspoon poultry seasoning
¼ teaspoon cayenne pepper
1 (7 ounce) can whole mushrooms, drained
1 (10.5 ounce) can condensed cream of chicken soup
1 cup heavy cream
¼ cup buttermilk
4 slices Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add onion and cook until it is semi-transparent, about 5 minutes. Add parsley and stir until coated. Place chicken in the skillet and brown, about 5 minutes per side. Add poultry seasoning and cayenne, making sure chicken is coated. Transfer chicken to a 9x13-inch dish. This is really easy to make and with cream cheese and butter it's really rich. I have served after a funeral with tons of requests for the recipe. Because of the richness I have never made this for a dinner but always at a gathering. You could reduce the butter to 1 1/2 sticks with success, but why do it? It's really good this way. I have seen a couple other chicken casseroles using crackers, but none with all of these ingredients which really make this special. It looks really creamy, but it turns out great.

1 ½ pounds skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken and mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
2 (8 ounce) packages cream cheese, softened
1 (8 ounce) container sour cream
½ cup mayonnaise
4 tablespoons all-purpose flour
2 (16 ounce) packages buttery round crackers (such as Ritz®), crushed
1 cup butter
1 tablespoon poppy seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish lightly with cooking spray.
  • Bring a large pot of salted water to a boil. Add chicken breasts and boil until no longer pink in the centers, about 20 minutes. Let cool enough to handle; shred with 2 forks.
  • Mix condensed soups, cream cheese, and sour cream together in a large bowl.
  • Mix mayonnaise and flour together in a separate bowl; add to cream of chicken mixture. Mix in shredded chicken thoroughly. Spread into the prepared baking dish.
