BAKED MAC AND CHEESE WITH VELVEETA
Baked mac and cheese with Velveeta comes out so creamy and cheesy. Our signature recipe is made with macaroni noodles, peas, cherry tomatoes and a whole block of Velveeta cheese!

Steps:
- Preheat the oven to 400ºF.
- Add the cherry tomatoes, green onions, and hot dogs into a 9×13-inch casserole dish.
- Drizzle olive oil over all the ingredients and then sprinkle with garlic powder, salt, and pepper. Toss everything together until all the ingredients are coated in oil.
- Next, create a well in the center of the casserole dish and add the block of Velveeta. Bake the casserole dish at 400ºF for 40 minutes.
- Meanwhile, bring a large pot of salted water to a boil and add pasta.
- Cook the pasta until it is cooked to al dente.
- Before pouring the pasta into a strainer remove 1 cup of pasta water from the pot and set it aside. Strain pasta and set aside.
- Remove the casserole dish from the oven and mash the tomatoes and Velveeta with a fork. Stir everything together to create a creamy cheesy pasta sauce.
- Add 1/4 cup pasta water, peas, Monterey jack cheese, and heavy cream to the casserole dish and mix everything together until the Monterey jack cheese melts. Add the cooked macaroni noodles to the casserole dish and mix.*
- Serve with fresh cracked black pepper and enjoy.

VELVEETA BAKED MACARONI & CHEESE
Mac and cheese is one of the all-time comfort foods. When my kids' taste finally outgrew the boxed stuff, I came up with this recipe to satisfy their need for cheese (my daughter, in particular, is a cheese junkie). I'm sure this recipe contains influences from my Mother and Grandmother. It goes great with other comfort food staples like meatloaf, roast, pork roast, etc.

- Preheat oven to 350°F.
- Prepare macaroni according to package directions.
- Melt butter in a large pan.
- Whisk flour into melted butter to create a light roux (paste).
- Slowly whisk milk into the roux, whisking constantly to avoid lumps.
- Allow milk and roux to heat for about one minute, then begin adding the Velveeta.
- Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper.
- After macaroni has cooked, drain the water from the pot and mix in the cheese sauce.
- Once the macaroni and sauce are mixed together, transfer to a 9 x 13 baking dish.
- Cook uncovered for 25-30 minutes or until bubbly.
- Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is thoroughly melted.
- Remove from oven and allow to cool for 5 to 10 minutes before serving.

- Boil the pasta as directed on the package.
- Drain the water but keep ¼ cup or so in the bottom of the pot. Add 1 stick of butter, the can of evaporated milk and the Velveeta cheese.
- Sprinkle some salt and pepper in there. (if you're like us, you'll sprinkle loads of pepper and barely any salt, because for some reason it just tastes better that way).
- Heat the pot on medium until the cheese is completely melted and blended in.
- Remove from heat and allow to sit for about 5 minutes. Stir and serve.
- It will get thicker the longer it sits, enjoy!!
CREAMY BAKED MACARONI AND CHEESE
This recipe, inspired by Stouffer's macaroni and cheese, delivers the best of all worlds: creamy, saucy comfort, with a consistency that's slightly more set than a stovetop version, thanks to a final bake in the oven. It stays voluptuous and molten as a result of a higher ratio of sauce to noodles, which are cooked completely so they don't soak up as much liquid. The Velveeta is necessary here, as it has sodium citrate, which prevents the sauce from separating in the oven. Elbow macaroni works fine, but cavatappi is an especially fun shape to eat with its telephone-cord bounciness.

- Heat oven to 350 degrees.
- Bring a large pot of water to a boil and season generously with salt. Add the pasta and cook according to package instructions, stirring occasionally with a wooden spoon, until just past al dente. Drain and set aside.
- Return the empty pot to the stove (no need to clean it) and set over medium heat. Melt the butter and simmer, whisking occasionally, until the butter stops spurting and quiets down, 2 to 3 minutes. Add the flour and cook, whisking, until smooth like gravy, about 1 minute.
- Whisk in the milk. Raise the heat to high and bring to a simmer, whisking constantly, then immediately reduce the heat to low and continue simmering until the sauce lightly coats the back of a spoon, 2 to 5 minutes. At this stage, the sauce should be smooth but relatively loose. Take the pot off the heat.
- To the pot, add the Cheddar, Velveeta, Pecorino Romano, mustard powder, onion powder and cayenne, and season generously with salt and black pepper. Whisk until the cheese is melted and smooth like nacho cheese. Add the drained pasta, breaking up any clumps, and stir until evenly coated in the cheese sauce. Taste and adjust seasoning with salt and pepper.
- Transfer to a 9-by-13-inch baking pan or dish and bake until bubbling at the edges, 15 to 20 minutes. Serve immediately.

- Boil noodles until done.
- While noodles are cooking, grease a rectangular glass casserole dish.
- After noodles are drained and have cooled for a few minutes, put them in casserole dish and mix with beaten egg.
- Set aside.
- In a medium saucepan, melt butter on medium-low heat and add flour to make a paste.
- Add half and half and bring to a boil on medium-high heat.
- Reduce heat and add velveeta and cream cheese in small chunks.
- Stir and add seasonings (last four ingredients).
- After all the cheese is melted and the sauce has a medium thick consistency (you may need to play around with the half and half or milk to get the consistency you prefer), pour it over the noodles.
- Stir noodles with sauce until they are combined.
- Sprinkle parmesan over the top.
- Bake in a preheated oven at 375 degrees for 30-45 minutes (I wait until it's a little browned).

- Preheat oven to 350 degrees.
- Cook macaroni according to directions and drain.
- Melt margarine in a large saucepan.
- Add flour and whisk together.
- Whisk in milk and cook over medium heat until mixture starts to bubble and thickens.

- Add macaroni and cook until tender but firm.
- Drain.
- Grease 2-qt baking dish and preheat oven to 350°F.
