2 ounces fine-quality bittersweet chocolate (not unsweetened or extra-bitter), chopped
1 1/2 teaspoons sugar
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon cayenne
1 large egg, lightly beaten
3/4 cup cubes (1/2 inch) firm white sandwich bread (from about 2 slices)
Accompaniment: vanilla ice cream (optional)

an 8-ounce ramekin or a muffin tin with 1-cup muffin cups

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Generously butter ramekin or 1 muffin cup.
  • Cook butter (1 tablespoon), cream, chocolate, sugar, vanilla, cinnamon, cayenne, and a pinch of salt in a 1- to 1 1/2-quart heavy saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth, 1 to 2 minutes. Remove from heat and whisk in egg until combined. Fold in bread cubes and let stand 5 minutes.
  • Fill ramekin with bread mixture and bake until puffed and set around edge but still moist in center, 15 to 20 minutes. Cool 5 minutes before serving.

1 cup white sugar
1 teaspoon vanilla extract

4 slices bread
¼ cup raisins, or to taste
1 pinch ground cinnamon, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Blend half-and-half, eggs, sugar, vanilla extract, and salt in a blender until smooth. Arrange bread in a 9x13-inch baking dish; sprinkle with raisins and cinnamon. Pour egg mixture over bread.
  • Place baking dish in a large roasting pan; fill roasting pan with boiling water halfway up the sides of the baking dish.

1 cup boiling water
1 cup ice cold water
1 (3.5-ounce) package instant vanilla pudding mix, reserve 1 tablespoon
3 cups heavy cream
3/4 cup confectioners' sugar
1 1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, combine gelatin and boiling water; stir until gelatin is dissolved. Stir in cold water and let sit 5 minutes. Beat in dry pudding mix until thoroughly combined. Refrigerate 10 minutes.
  • Meanwhile, in a large bowl, beat heavy cream, reserved 1 tablespoon pudding mix, the confectioners' sugar, and vanilla extract until stiff peaks form. Fold 1/2 of whipped cream into gelatin mixture until thoroughly combined.

1 cup whipping cream
1 cup whole milk
1 (15 ounce) can pumpkin puree
1 cup brown sugar
3 eggs
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
½ cup raisins
2 cups whipping cream, chilled
2 tablespoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Toss bread cubes with 1 cup whipping cream and milk in a large bowl until all bread is moistened.

10 ounces pretzel rolls
⅓ cup sweetened flaked coconut
2 cups milk
½ cup white sugar
½ cup raisins
¼ cup unsalted butter, at room temperature
¼ teaspoon salt
½ teaspoon almond extract
½ teaspoon vanilla extract
¼ cup chopped toasted pecans
3 large eggs

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F (175 degrees C). Spray a medium baking dish with cooking spray. Cut pretzel rolls into cubes; set aside.
  • Pulse coconut in a food processor for 30 seconds. Transfer to a saucepan with milk, sugar, raisins, butter, salt, almond extract, and vanilla. Cook over medium-low heat, stirring gently, until mixture is warm and sugar has dissolved, 3 to 5 minutes. Remove from the heat.
