EASY CREAMY CHICKEN CASSEROLE
This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
- Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
- Bake in the preheated oven until bubbly, 25 to 30 minutes.

CREAMY CHICKEN VOL-AU-VENT

- Preheat oven to 400°. On a lightly floured surface, unfold 1 puff pastry sheet. Using a 3-1/4-in. round cutter, cut out six circles. Place on a parchment-lined baking sheet., Unfold the remaining pastry sheet. Cut 6 more circles out with the 3-1/4-in. round cutter; with a 2-1/2-in. cutter, cut centers out of the circles. Place the rings on top of the circles that are on the baking sheet. Place the center circles also on the baking sheet. In a small bowl, whisk egg and water; brush over pastries. Chill 15 minutes. Bake until dark golden brown, 20-25 minutes. Cool on a wire rack., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Discard all but 1 tablespoon drippings. Add leeks and pepper to drippings; cook and stir over medium-high heat until tender, 5-7 minutes. Reduce heat to low; stir in bacon, chicken, cream cheese, salt and pepper. Cook and stir until blended; remove from heat., When cool enough to handle, hollow out pastries with a small knife. Fill with chicken mixture. Sprinkle with parsley and pepper. Serve with small center pastries on the side.

CREAMY CHICKEN ON LINGUINE
Sliced chicken with a creamy onion sauce layered on linguine. Good reheated the next day, too! Serve with garlic toast or bruschetta!

Steps:
- In a large saute pan, heat oil, butter and garlic over medium heat. Add chicken and cook until juices run clear. Remove chicken from pan let cool and slice diagonally into long strips. Reserve oil in pan.
- Meanwhile, cook pasta according to directions on package. Drain.
- Reheat oil in pan, add onion and saute, stirring often, until onion is soft but still white. Add bullion cube and water; bring to a boil and simmer uncovered for approximately 10 minutes. Stir in cream, milk, green onions and Parmesan cheese.
- Place pasta in a bowl, layer chicken slices in a decorative pattern over pasta, pour sauce over top of chicken and around pasta. Garnish with parsley or any herbs you desire. Serve immediately.

- Clean chicken breasts and season with salt, pepper and garlic powder (or whichever seasonings you prefer) on both sides of chicken pieces.

- Bring strong brewed coffee, milk, and 2 Tbs sugar just to a simmer in a 3 quart saucepan, then stir in Kahlua to taste.
- While coffee is heating, beat chilled cream with cocoa and remaining 2 Tbs. of sugar in a bowl with an electric mixer until it just holds soft peaks.
- Divide coffee among 4 mugs and top with chocolate whipped cream and chocolate shavings! Yum!
- Make sure your cream is chilled for proper whipping! Also, fresh brewed coffee is recommended!

- Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. CAFE AU LAIT COFFEE CAKE
A moist, delicious coffee time treat from the 1998 Milk Calendar. I have increased the baking time from the original recipe as I find the centre is still very doughy after only one hour in the oven.

Steps:
- Preheat the oven to 350 degrees F.
- Butter a 9" springform pan.
- To make the crumb topping, stir together the instant coffee, brown sugar, flour and cinnamon in a medium bowl.
- Cut in the butter until crumbly and stir in the chocolate chips and pecans.
- Set aside.
- To make the cake, beat together the butter and sugar in a large bowl until light.
- Add the eggs, one at a time, beating well until smooth.
- Beat in the sour cream.
- Dissolve the instant coffee in the warm water and beat into the egg mixture.
- In a small bowl, stir together the remaining dry ingredients.
- On low speed, gradually add the dry ingredients, alternating with milk. There should be three additions of dry and two of wet ingredients.
- Beat well after each addition.
- Spread 1/2 of the batter into the prepared pan and sprinkle with 1-1/2 cups of the crumb topping.
- Cover with the remaining batter and sprinkle with the remaining crumb topping.
- Bake for 65 to 80 minutes or until a toothpick inserted into the centre comes out clean.
- If the top begins to brown too quickly, loosely cover with foil.
