These enchiladas are full of fresh vegetables and my ace in the hole - cotija cheese. Sour cream makes a nice saucy filling. My vegetarian husband gives these 5 stars; I hope you like them, too! These go great with a side of black or pinto beans and a salad with chopped tomato and avocado. Enjoy!

2 tablespoons olive oil
1 onion, cut into 1/2-inch dice
1 green bell pepper, cut into 1/2-inch dice
2 medium zucchini, halved lengthwise and sliced into 1/2-inch slices
1 serrano chile, minced
1 ear fresh corn kernels
½ pound fresh spinach, chopped
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
½ teaspoon ground cumin
1 cup sour cream
¾ cup diced cotija cheese, divided
¼ cup chopped cilantro
15 corn tortillas
1 (10 ounce) can enchilada sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat oil in a skillet over medium heat. Add onion and bell pepper; cook until edges are golden, 5 to 7 minutes. Add zucchini, serrano chile, and corn kernels. Cook until slightly browned, about 5 minutes more.
  • Add spinach, garlic, paprika, salt, and cumin. Cook for 1 minute stirring constantly. Add sour cream, 1/2 cup cotija, and sour cream. Stir to combine. Remove vegetable mixture from heat and set aside.
  • Pour a thin layer of enchilada sauce into a 9x13-inch baking dish.
  • Heat a small skillet over medium heat and warm tortillas 1 at a time until softened, about 10 seconds each. Transfer warm tortillas to a plate and keep warm under a towel.
  • Spoon 1/3 cup vegetable mixture into 1 tortilla. Fold sides in like a taco and place, seam-side down, into the enchilada sauce in the baking dish. Repeat with remaining tortillas and vegetable mixture.
  • Pour remaining enchilada sauce over the enchiladas in the baking dish. Sprinkle remaining cotija cheese on top.
  • Bake in the preheated oven until slightly bubbly and golden at the edges, about 20 minutes. Remove from oven and cool at least 10 minutes before serving.

1 large poblano, ribs and seeds removed, thinly sliced (1 1/2 cups)
1 small red onion, halved and thinly sliced (1 1/4 cups)
Kosher salt and freshly ground pepper
1 medium zucchini, cut into a 1/2-inch dice (1 1/2 cups)
1 1/2 cups green salsa (from a 16.7-ounce jar), such as La Costeña
6 corn tortillas (each 6 inches)
5 ounces low-moisture mozzarella, cut into a 1/2-inch dice
1/3 cup Mexican crema or sour cream
Shredded iceberg lettuce, sliced radishes, and halved cherry tomatoes, for serving

Steps:

  • Preheat oven to 375°F. Heat a medium (10-inch) ovenproof skillet (preferably cast iron) over medium. Add oil, poblano, and 1 cup onion; season with salt and pepper. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Add zucchini; continue cooking until vegetables are tender and golden in places, 10 to 12 minutes more.
  • Remove from heat; transfer mixture to a large plate. Pour 1 cup salsa into skillet. Working one at a time, dip tortillas in salsa, turning to evenly coat both sides; transfer to plate with vegetables.
  • Layer tortillas and vegetables evenly in skillet. Top evenly with mozzarella, crema, and remaining 1/2 cup salsa. Bake until bubbly and browning in places, 20 to 22 minutes. Serve with lettuce, radishes, tomatoes, and remaining 1/4 cup onion.

Take advantage of summer's squash bounty by rolling up sliced zucchini with shredded chicken, garlic and scallions. Salsa makes a quick sauce topper. Sour cream and hot sauce are the finishing touch.

2 tablespoons vegetable oil
4 scallions, sliced (white and green parts separated)
2 cloves garlic, thinly sliced
1 tablespoon chili powder
3 cups shredded rotisserie chicken (skin discarded)
1 1/2 cups salsa (not chunky)
1 cup shredded Mexican blend cheese
3 to 4 medium zucchini
Several dashes chipotle hot sauce, plus more for serving, optional
2 tablespoons sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the oil in a large skillet over medium heat. Add the scallion whites and garlic and cook, stirring frequently, until soft, about 5 minutes. Sprinkle in the chili powder and cook, stirring, until the scallions are coated and the oil is brick red, about 1 minute. Remove from the heat and stir in the chicken, 1/2 cup of the salsa and 1/2 cup of the cheese. Set aside.
  • Halve the zucchini lengthwise and arrange cut-side down on a work surface. Use a Y-shaped vegetable peeler to shave off ribbons the entire length of each zucchini and as wide as possible (the first few may be too skinny). Make 36 zucchini ribbons total.
  • Lay out 3 ribbons, slightly overlapping to make a rectangle (think of this as your "tortilla"). Pile about 1/4 cup of the chicken mixture down along one of the short ends of the zucchini tortilla and then roll up to enclose the filling. Put in a 2- to 3-quart baking dish. Roll up the remaining zucchini ribbons and filling and arrange in the dish. Top the rolls with the remaining 1 cup salsa. Add several dashes of the hot sauce and sprinkle with the remaining 1/2 cup cheese.
  • Bake until the cheese is melted and the filling is hot, about 25 minutes. Let cool for a few minutes. Thin the sour cream out with a little water and drizzle over the enchiladas. Sprinkle with the reserved scallion greens and serve with more hot sauce if you'd like.

2 tablespoons olive oil
½ yellow onion, diced
2 cloves garlic, minced
1 can black beans, drained and rinsed
1 can corn, drained and rinsed
1 ½ cups enchilada sauce, divided
½ lime, juiced
1 teaspoon salt
1 teaspoon cumin
½ teaspoon chili powder
4 zucchinis
½ cup shredded cheddar cheese
sour cream, for serving
fresh cilantro, for serving

Steps:

  • Preheat oven to 375°F (190°C).
  • In a pan over medium heat, add the oil and the onions and cook until the onions are translucent.
  • Add the garlic and stir to combine.
  • Add the black beans, corn, 1 cup (290 g) of enchilada sauce, lime juice, salt, cumin, and chili powder, and stir until combined. Cook until just simmering. Set aside.
  • Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  • Place 4-5 zucchini strips on a plate and spoon a large spoonful of filling at the bottom of the strips.
  • Fold the ends of the zucchini over the filling and continue to roll, tightly.
  • Transfer the zucchini rolls to a baking dish.
  • Spoon over the remaining enchilada sauce and top with cheese.
  • Bake for 15-20 minutes or until cheese is melted.
  • Serve with sour cream and cilantro.
  • Enjoy!

Quick and easy enchiladas made with corn tortillas, your choice of cheeses, and convenient canned tomato sauce jazzed up with spices. This is a huge hit with my family and a nice break from meat or seafood. Feel free to make it your own by adding other proteins, or veggies such as spinach, mushrooms, etc. You can increase the amount of cayenne pepper if you like more heat - the minimum amount listed is perfect for my young kids. Hot sauce or canned diced chili peppers can also be added to the sauce if you so desire. Not 100% sure, but I believe this is gluten free as well as vegetarian, as the corn tortillas I use are labeled as such and as far as I'm aware, none of the other ingredients contain gluten.

8 -10 small corn tortillas (5-6 inches)
1 cup cheddar cheese, shredded (or other cheese of your choice)
1 cup monterey jack cheese, shredded (or other cheese of your choice)
1 cup sour cream
1 teaspoon onion powder
1 garlic clove, crushed
1 (8 ounce) can tomato sauce
1/2 small green bell pepper, diced very fine (can even use food processor to grate)
1/4 teaspoon ground cumin (or more if you really like cumin!)
1/4-1 teaspoon cayenne pepper, to taste
1/2 cup additional cheddar cheese (or cheese of your choice) or 1/2 cup monterey jack cheese, shredded (or cheese of your choice)

Steps:

  • Preheat oven to 350 degrees.
  • Mix the first 2 cups of cheese with the sour cream, onion powder, and garlic.
  • Moisten tortillas and warm slightly in the microwave or oven. Spoon some of the cheese mixture down center of each tortilla. Roll up; place seam sides down in lightly greased or parchment lined oblong baking dish.
  • Mix tomato sauce, bell pepper, cayenne pepper and cumin. Spoon tomato mixture lengthwise down center of each enchilada.
  • Sprinkle remaining 1/2 cup cheese over tomato mixture. You can freeze them at this point or bake immediately. If frozen, thaw before baking.
  • Bake uncovered at 350 degrees until cheese is melted and filling is bubbly, about 25 minutes. Let cool 10 minutes and serve immediately, or cover and keep warm in oven with temperature lowered to 200 degrees to serve later.

1/4 cup butter
1 cup milk
1/2 teaspoon salt
1 1/2 cups chicken broth
1/2 cup all-purpose flour
1/2 cup diced green chilis
6 (8 inch) flour tortillas
2 1/2 cups shredded zucchini
2 cups monterey jack cheese, shredded (divided)
1/4 cup chopped onion (optional)
1/2 cup Mexican crema (optional) or 1/2 cup sour cream (optional)
3 sprigs fresh cilantro, chopped (optional)

Steps:

  • CHILE CREAM SAUCE:.
  • Melt butter in a medium saucepan over low heat. Still cooking, add milk, salt and chicken broth. Gradually add flour, stirring until blended. Increase heat to medium. Add chiles. Cook, stirring, until sauce has a creamy texture (about 10 minutes). Makes 3 cups. Set aside to use for topping enchiladas.
  • ZUCCHINI ENCHILADAS:.
  • Preheat oven to 350ºF.
  • Spread 1/2 cup of warm chile cream sauce in the bottom of a 2-quart baking dish and set aside rest of sauce, keeping it warm.
  • In a bowl, mix shredded zucchini and 1 1/2 cups of the cheese. Set aside.
  • Warm tortillas so they are pliable (do this according to package directions, or use whatever method you prefer). One by one, dip warmed tortillas in the pan of remaining sauce and remove immediately (if allowed to sit in the sauce, the tortilla will start to dissolve). Move each dipped tortilla to the baking dish and put 1/6 of the reserved filling mixture in the center of the tortilla. Roll each tortilla and arrange in the baking dish, seam side down. Repeat until all the tortillas and filling are used up. Cover enchiladas with remaining sauce and 1/2 cup cheese. Bake for approximately 20 minutes at 350ºF, or until cheese is melted and sauce is bubbly. Remove from oven and top with chopped onion, crema/sour cream and cilantro, if using.

1 tablespoon extra-virgin olive oil
1 medium onion, diced
1 green bell pepper, diced
4 cups cubed cooked chicken
1 (4 ounce) package cream cheese
1 (1.25 ounce) package taco seasoning mix
1 (10 ounce) can enchilada sauce
1 (8 ounce) package shredded extra-sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Slice ends off zucchini and cut them lengthwise. Scoop out centers, leaving a 1/4-inch wall around each. Line up zucchini "boats" on a rimmed baking sheet.
  • Heat olive oil over medium-low heat in a large saucepan. Add onion and bell pepper; cook and stir until onion is softened and translucent, about 5 minutes. Remove from heat; stir in cooked chicken, cream cheese, and taco seasoning until well combined and creamy.
