Easy Chicken Noodle Casserole image

This easy Chicken Noodle Casserole is topped with a delicious breadcrumb mixture and baked until bubbly!

2 cups dry egg noodles
2 cups cooked chicken (diced)
10.5 ounces cream of chicken soup (or cream of mushroom soup)
1/2 cup milk
1 cup frozen peas (or frozen vegetables)
1 tablespoon butter (melted)
2 tablespoons breadcrumbs
1/2 cup cheddar cheese (optional)

Steps:

  • Preheat oven to 425°F.
  • Cook egg noodles al dente (firm) according to package directions. Drain well.
  • Combine egg noodles, chicken, soup, milk, and vegetables in 2qt casserole dish. Top with cheese if using.
  • Combine topping ingredients in a small bowl and sprinkle over the casserole.
  • Bake 20 minutes or until bubbly. Broil 1 minute to brown topping if needed.

Number Of Ingredients 10

4 cups uncooked egg noodles
4 cups cubed cooked chicken
1 package (16 ounces) frozen peas and carrots
2 cups whole milk
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup chopped onion
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Cover and microwave on high for 10-12 minutes or until heated through and a thermometer inserted in center reads 165°, stirring twice.

1 (16 ounce) package egg noodles
¼ cup butter
¼ cup chopped onion
1 tablespoon minced garlic
6 tablespoons all-purpose flour
1 cup milk
1 cup half-and-half
30 ounces chicken broth
1 (3 pound) rotisserie chicken, bones removed and meat cut into bite-size pieces
1 cup sour cream
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and transfer to a large serving bowl.
  • Melt butter in a large pot over medium heat; cook and stir onion and garlic in the hot butter until onion is translucent, about 5 minutes. Place flour, milk, and half-and-half in a jar with a lid and shake until flour has smoothly mixed with milk and half-and-half. Pour mixture into skillet and whisk until smooth and thick, about 5 minutes.
  • Gradually whisk chicken broth into sauce and bring to a simmer, whisking constantly. Stir cooked chicken and sour cream into sauce, season with salt and black pepper, and mix with cooked noodles to serve.

10 ounces egg noodles
1 tablespoon olive oil
1 small yellow onion (peeled and diced)
2 cloves garlic (minced)
12 ounces frozen mixed vegetables (thawed (1 bag))
10 ounces cream of chicken soup
10 ounces cream of mushroom soup
1 cup milk
1/2 cup low-sodium chicken broth
2 cups cooked chicken (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh parsley (chopped, for garnish)

Steps:

  • Preheat oven to 350 degrees F. Coat the inside of a 9-inch x 13-inch baking dish with non-stick cooking spray. Set aside.
  • Bring a large pot of water to a boil. Cook the egg noodles for 8 minutes. Drain and set aside. (The egg noodles will be slightly undercooked. They will finish cooking in the oven.)
  • While the noodles cook, place a skillet over medium heat. Add olive oil. Once the oil is hot, add onions and cook until soft and translucent. Add garlic and cook for 30 seconds until fragrant.
  • Add both cans of soup, the milk, and chicken broth to a large mixing bowl. Whisk until combined and smooth.

12 ounces egg noodles, dumpling or ribbon-style
1/4 cup onion, chopped
2 tablespoons butter (or margarine)
8 ounces chicken breasts, cooked and cut into 1 inch cubes
1 cup frozen broccoli
1 cup frozen mixed vegetables
1 (10 1/2 ounce) can condensed cream of broccoli soup
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 cup milk
1/4 teaspoon dried thyme
1/2 teaspoon salt
1 teaspoon ground black pepper
2 cups cheddar cheese, shredded

Steps:

  • Cook egg noodles according to package directions. Drain and set aside.
  • Heat butter in medium saucepan. Saute onions until transparent, approximately 4-5 minutes.
  • Add chicken, vegetables, soups, milk, and seasonings. Cook over medium heat until broccoli is tender.
  • Add cooked egg noodles and mix until thoroughly blended.
  • Spread into a greased 9 x 12 baking dish. Cover.
  • Bake at 350 degrees F for 20 minutes.
  • Top with cheese and bake an additional 10 minutes.

Bring a large pot of water to a boil and add the frozen noodles; boil until tender, this should only take 5-7 minutes (always taste a noodle before you drain them to make sure they are the texture you prefer). Right before you drain the noodles, add the package of frozen peas and corn, this will thaw them quickly. Drain the noodles and vegetables.
  • Pour back into the empty pot (or into a large bowl) and add the cooked chicken, canned corn, cream of chicken soup, milk, sour cream, dried onion flakes, Italian seasoning, garlic powder, salt, pepper and grated Cheddar cheese. Stir together until well combined. Pour into a greased 9x13-inch baking dish and spread out evenly. Cover tightly with foil and bake for 20 minutes.
  • Meanwhile, add the Ritz crackers to a zip-top bag and crush until small crumbs. Add the melted butter and grated Parmesan cheese to the zip-top bag and toss together until everything is coated in butter. Remove casserole from oven and remove foil. Sprinkle cracker mixture over casserole, return to oven and bake for 10 more minutes. Serves 8.
