I grew up with these buttery popovers served with homemade turkey noodle soup. Very easy to make and tasty. DO NOT open the oven until done!

4 eggs
1 cup milk
1 cup all-purpose flour
1 teaspoon salt
3 tablespoons butter, melted - divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Put 12-cup muffin tin in oven to preheat as well.
  • Beat eggs and milk together in a bowl with an electric hand mixer. Add flour and salt; continue beating into smooth batter.
  • Put about 3/4 teaspoon butter into each muffin tin and carefully spread butter up sides of each cup. Quickly divide batter among prepared cups.
  • Bake until popovers are risen well and browned, 30 to 35 minutes. Do not open the oven during baking.

My girls love all things related to a cinnamon roll, from the swirling and soft cinnamon-speckled dough to the sticky-sweet icing that slicks the top. One morning, Charlotte was begging me for cinnamon rolls but I didn't have time to make them, so I decided to put the flavors of a cinnamon roll into my trusty quick popover recipe. It couldn't have been easier. There is just enough cinnamon sweetness to scratch that cinnamon bun itch for both kids and adults.

Number Of Ingredients 9

2 large eggs
2 tablespoons granulated sugar
1 cup 2% milk, warmed, plus 2 tablespoons
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 tablespoons unsalted butter, melted
1/4 cup reduced-fat cream cheese (Neufchatel), at room temperature
1/4 cup confectioners' sugar

Steps:

  • Place a 12-cup muffin tin on the middle rack in the oven and preheat the oven to 400 degrees F.
  • Add the eggs and granulated sugar to a blender jar and mix on medium speed until light yellow. Add the 1 cup warmed milk and blend. Add the flour, cinnamon, and salt and blend until smooth.
  • Use a pastry brush to grease the hot muffin tin generously with the melted butter. Add any remaining butter to the batter and pulse to blend. Pour the batter into the warmed muffin tin, filling the muffin cups about three-quarters full. Bake until the popovers are golden, about 20 minutes. (Do NOT open the oven door!) Turn off the oven, keep the oven door closed, and continue to bake the popovers until golden brown, 10 to 15 minutes.
  • Meanwhile, in a small bowl, whisk the cream cheese with the confectioners' sugar and the remaining 2 tablespoons milk until smooth. Remove the popovers from the oven. Use the tip of a paring knife to poke a tiny slit at the top of each popover (this will allow steam to escape, and will keep your popovers from getting soggy). Brush the popovers with the glaze and serve warm.

1 1/2 cups whole milk
1 1/2 scant cups unbleached flour
1/2 scant teaspoon salt
4 tablespoons butter (melted)

1/2 cup white cheddar cheese (finely shredded)

Steps:

  • Prehet the oven to 450°. Spray a popover pan liberally with vegetable spray -- cover the interior and around the top. (Can also use muffin tins).
  • To a blender add the eggs, milk flour, salt and butter IN THAT ORDER. Blend for 15 seconds. Scrape down the sides of the blender with a spatula and blend for an additional 15 seconds until combined.
  • Add the cheddar cheese and chives and blend until just mixed.
  • Fill the popover tins 2/3 full with batter and put into the hot oven. Bake for 20 minutes.
  • Reduce the heat to 350° and cook for an additional 10 minutes.
  • Remove the popovers from the oven and use a sharp knife to prick the dome of each muffin to allow steam to escape. Let the muffins rest in the popover tin for 5 minutes before turning them out onto a wire rack.
  • Serve warm with butter.

1 cup whole milk
3/4 cup all-purpose flour
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
Kosher salt
3 tablespoons unsalted butter, melted
1/4 teaspoon baking powder
3 cups low-sodium chicken broth
1/3 cup all-purpose flour
4 tablespoons grated Parmesan cheese
Kosher salt and freshly ground black pepper
1 cup frozen peas and carrots
1/2 rotisserie chicken, skin discarded and white and dark meat shredded (about 3 cups)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 12-cup muffin pan generously with the baking spray.
  • For the popovers: Whisk the milk, flour, eggs, vanilla and 1/2 teaspoon salt in a medium bowl until combined. Drizzle in the melted butter while whisking until combined; let the batter stand for 5 minutes. Add the baking powder; whisk the batter to combine and divide it evenly among the muffin cups (a scant 1/4 cup batter per muffin cup). Bake the popovers until puffed and browned around the edges, 20 to 25 minutes, rotating the pan about halfway through.
  • For the filling: While the popovers are baking, combine the broth and flour in a medium saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 4 to 5 minutes. Reduce the heat to low and whisk in 2 tablespoons of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Stir in the peas and carrots, then the chicken; cover to keep warm.
  • To assemble: When the popovers are done, turn them out of the pan, using a small spatula if necessary. Arrange 2 popovers on each of six plates or bowls and top with the chicken filling, dividing evenly among the popovers. Garnish with chopped parsley and sprinkle on the remaining 2 tablespoons of grated Parmesan.

Popovers begin with essentially the same batter as Yorkshire pudding. Purists will tell you that what makes Yorkshire pudding so great is that it's cooked in beef drippings. But butter isn't a bad stand-in, and popovers are pretty easy. You can buy special popover pans, with deeper, narrower cups which force the tops up in a more pronounced fashion, but I wouldn't bother. Any muffin pan will produce a perfect popover if the butter is hot, the batter is rich and smooth and the baker is patient. But the patience ends when the popovers are done: they must be eaten right away.

  • Crack twelve eggs, and separate the yolks and egg whites into separate bowls.
  • Preheat oven to 300°F (150°C).
  • Spray a mini muffin tin with nonstick spray. Pour each yolk and egg white into its own mini muffin tin hole.
  • Place the tin into a baking dish with a tinfoil ring, wire wrack, or a towel to keep the muffin tin from touching the bottom of the baking dish directly (so the eggs steam gently in the oven and don't turn brown).

  • Lift one edge of the foil and pour in boiling water ⅓ way up the muffin tin and re-cover with foil.

  • Remove foil and muffin tin from baking dish and let cool.
  • With a thin knife, remove the egg yolks and egg whites from the tin. Set the egg whites aside.
  • In a bowl, combine the cooked egg yolks, Greek yogurt, relish, mustard, hot sauce, salt, and pepper. Mix with a fork until well combined.
  • Place the mixture in a piping bag with a desirable tip and pipe the yolk mixture onto the cooked egg whites. Sprinkle with paprika and chopped parsley.
