1/2 cup plain Greek yogurt
2 tablespoons fresh lime juice (about 1/2 lime)
1 -2 garlic clove
1/4 cup olive oil
1 1/2 teaspoons white vinegar
1/8 teaspoon salt

Steps:

  • Puree all ingredients in a blender or food processor until smooth.
  • Taste and adjust seasonings if necessary.

Cilantro Lime Dressing takes just 5 minutes in our blender and is about to become your go-to intoxicating dressing! This dressing makes everything better from salads to tacos, to burritos to bowls to grilled chicken or fish. It also makes a fabulous dip for veggies, quesadillas, empanadas, etc. It's spiked with tomatillos, jalapeno, garlic, cilantro, lime and smoked paprika to create a luscious dressing packed with irresistible tangy, punchy flavor.

Number Of Ingredients 10

1/3 cup packed cilantro
2 tomatillos (husks removed and roughly chopped)
1 jalapeno (deveined, seeded, roughly chopped)
2 garlic cloves (peeled)
1 cup real mayonnaise
1 cup sour cream (may sub Greek yogurt)
1 1/2 teaspoons lime juice (use less if using Greek yogurt)
2 tablespoons ranch seasoning mix ((1 oz. packet) - see DIY NOTES)
1/4 teaspoon smoked paprika (optional)
Milk as needed

Steps:

  • Add all of the ingredients to a blender puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time to reach desired consistency.
  • Chill before serving (a must!). Dressing will thicken in the refrigerator so you may need to whisk in some milk before serving. This Cilantro Lime Dressing stores fabulously well for about 5-7 days, but honestly, it never lasts that long at our house!

Steps:

  • Add cilantro, salt, pepper, coconut milk, lime juice and avocado oil into a mason jar and secure lid tightly.
  • Shake vigorously until ingredients are mixed thoroughly.
  • Store dressing in the fridge and use within 1-2 weeks. You may need to shake up the ingredients again before each use.

2 Anaheim chile peppers, halved and seeded
1 ½ cups canola oil
⅓ cup roasted pepitas
⅓ cup red wine vinegar
⅓ cup lime juice
5 tablespoons crumbled cotija cheese
2 cloves garlic, peeled
1 teaspoon salt
¼ teaspoon ground black pepper
2 small bunches fresh cilantro, stems removed
1 ½ cups mayonnaise
¼ cup water

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
  • Combine roasted peppers, canola oil, pepitas, red wine vinegar, lime juice, cotija cheese, garlic, salt, and pepper in a blender or food processor. Blend to combine, about 10 seconds. Add cilantro a little at a time and blend until smooth.
  • Combine mayonnaise and water in a large bowl and whisk until smooth. Add the blended pepper mixture to the mayonnaise mixture and mix thoroughly.
