IRISH COLCANNON (CREAMY POTATOES AND CABBAGE)
This dish is a favorite to be served on All Saints Day in Ireland. It is also said that it was a favorite of Jonathan Swift.

Steps:
- Strip outer leaves from cabbage.
- Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
- Reduce heat and simmer until crisp-tender, about 5-10 minutes.
- Drain well.
- (opt.) Liquefy in blender.
- Boil potatoes in a separate kettle, covered with water, until tender.
- In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
- Mash potatoes then season with salt, pepper and mace.
- Mix in the onions and milk.
- Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
- Pour into a deep warmed dish.
- Dab with butter or margarine.
- NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
- OPTION: Substitute ground nutmeg for mace.
FABULOUS COLCANNON (MASHED POTATOES AND CABBAGE)
This is not the traditional colcannon, a mashed potato and cabbage dish from Ireland. I have spiced it up and put my own spin on it, but it is WONDERFUL comfort food. Cheap and easy. I top it with cheese and serve as a main dish.

Steps:
- Place potatoes into a large pot and cover with salted water. Bring to a boil, set heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and transfer to a large mixing bowl.
- Stir milk, mayonnaise, and butter into potatoes. Mash with a potato masher until smooth.
- Cook and stir bacon in a large skillet over medium heat until fat is rendered, 3 to 5 minutes.
- Stir onion, garlic, and cayenne pepper into bacon and drippings and cook, stirring often, until onions are translucent, about 5 minutes.
- Stir cabbage and water into onion mixture until cabbage is wilted, about 5 more minutes. Season with salt and black pepper.
- Fold cabbage mixture into mashed potatoes.
- Cook and stir ham pieces in the same skillet used for cabbage mixture until lightly browned, 3 to 5 minutes.
- Stir cooked ham into mashed potato and cabbage mixture until combined.

CREAMY COLCANNON
A traditional Scottish dish made with mashed potatoes and cabbage. I've seen other recipes for this which call for parsnips and carrots. This particular one does not. Great comfort food.

Steps:
- Boil the potatoes in their skins until tender. Drain and leave until cool enough to handle.
- Put the cabbage in a large pot and pour about 4 cups of boiling water over it. Cover and bring back to a boil and let steam about 10 minutes. Using tongs, pull the cabbage from the bottom to the top every few minutes for even cooking. Remove from heat and leave to sit.
- Peel the potatoes and finely mash.
- *NOTE: Spring onions are also known as scallions. You may also use one or two small onions, minced if you prefer.
- Melt butter and add onion and cook until just tender. Add milk and heat through. Beat into potatoes. Season with salt and pepper.
- Drain the cabbage thoroughly. Add potatoes and mix together.
- Tip the mixture into a serving dish and sprinkle with a bit of nutmeg.
- Enjoy!
" ME OWN " COLCANNON WITH HAM
**Creamy potato dish with cabbage and ham that's low fat and low calories too!** I love Colcannon....well anything potato actually.... but am watching the weight so I put this together along with some left-over pre cooked old fashioned smoked ham. We love it! Hope you do too. :)

- Boil potatoes . Partially boil cabbage at the same time as potatoes, in separate pot.
- Mash potatoes adding milk, cheese, onion, salt and pepper. Mix in a large bowl with ham and half cooked chopped cabbage.
- If you prefer it not quite so creamy just use 1/4 cup of skim milk.
- Spray a casserole dish with cooking spray and lightly line with a few cooked cabbage leaves. Plop in mixture, sprinkle with paprika or cayenne and cover.
- Warm in 200-250 degree oven for approximately 1 hour or more. If you keep it in longer, keep your eye out that it doesn`t burn or get dry.I`ve had mine in for two hours and it was fine.
- Just before you`re ready to pop it out of the oven, turn on the broiler, take off the lid and give it a wee bit of browning on top.
- This can also be done on the stove top fried in some butter or this way with the left-overs -- yumm -- but beware of the added fat and calories!
- 1 cup = 129 calories and 1.6 grams of fat.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
- In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
- In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.
- Bake approximately 30 minutes, until sauce and cheese are bubbly.

- Boil potatoes in a large pot of water with a pinch of salt until tender, about 15 minutes. When cooked, a paring knife can be inserted into the centers and removed without resistance. Drain potatoes well and return to the hot pot. Let stand a few minutes to allow any remaining moisture to evaporate.
- While potatoes are boiling, melt 4 tablespoons butter in a large skillet until foaming subsides. Add cabbage and 1 teaspoon each kosher salt and black pepper. Cook over medium-high heat, stirring frequently, until cabbage is just starting to brown, 5-8 minutes.
- Add leeks and an additional 1/2 teaspoon of salt. Continue cooking, stirring often, until vegetables are tender, 5-8 minutes more. Add garlic, and cook for an additional minute. Stir in half and half, bring to a simmer, and remove from heat.
- Stir vegetables and half and half into the cooked potatoes. Use a potato masher to fully combine and mash to desired consistency. Potatoes will thicken a bit as they stand. Season to taste with salt and pepper.
